1-3/4 cups sugar
1/2 cup canola oil
1/4 cup butter, softened
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 cups finely shredded zucchini
1/2 cup semisweet chocolate chips
1/2 cup sliced almonds
CUSTARD SAUCE:
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons cornstarch
3 cups whole milk
3 egg yolks
3 tablespoons butter
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 325°. Grease and flour a 10-in. plain or fluted tube pan. In another bowl, beat sugar, oil and butter until well blended. Gradually beat in buttermilk, eggs and vanilla., In another bowl, whisk flour, cocoa, baking soda, cinnamon and cloves; gradually beat into sugar mixture. Stir in zucchini, chocolate chips and almonds., Transfer to prepared pan. Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool., For sauce, in a large saucepan, mix sugar, flour and cornstarch. Whisk in milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Gently stir in butter and extract. Serve warm with cake. Cover and refrigerate leftover sauce.

1 cup Gold Medal™ all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon espresso powder
1/4 teaspoon ground cinnamon
4 eggs, separated and at room temperature
1 3/4 cups powdered sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon vanilla
2 1/2 cups whole milk, at room temperature
Additional powdered sugar, if desired
Whipped cream and berries, if desired

Steps:

  • Heat oven to 325°F. Line 8-inch square pan with cooking parchment paper, and grease with butter or cooking spray.
  • In medium bowl, mix flour, cocoa powder, espresso powder and ground cinnamon with whisk. Set aside.
  • In large bowl, beat egg whites to stiff peaks. Set aside.
  • In another bowl, beat egg yolks and powdered sugar until pale and smooth. Add butter and vanilla; beat until combined. Add dry ingredients; beat until just combined. Mixture will be very thick.
  • With mixer on low speed, slowly add milk. Mix until smooth. With whisk, add egg whites in 3 additions, beating with whisk just until no large lumps remain. Mixture may appear slightly curdled. Pour into pan.
  • Bake 50 to 60 minutes or until cake appears dry on top and slightly jiggles when shaken. Cool completely, 2 to 3 hours; refrigerate until ready to serve. To serve, sprinkle with powdered sugar, and top with whipped cream and berries.

Chocolate-Pecan Cake With Tropical-Fruit Custard Sauce image

4 tablespoons butter plus butter for greasing a cake pan
Flour for dusting a cake pan
1 cup heavy cream
2 ounces (squares) unsweetened chocolate, chopped
10 1/2 ounces (squares) semisweet chocolate, chopped
5 large eggs
1/3 cup sugar
1 teaspoon pure vanilla extract
3/4 cup toasted or roasted pecans, chopped
Tropical-fruit custard sauce (see recipe)

Steps:

  • Preheat the oven to 350 degrees.
  • Butter the inside of a nine-inch cake pan. Place a round of parchment or waxed paper, cut to fit, in the bottom of the pan. Butter the round of paper. Add about one tablespoon of flour to the buttered pan and shake it around to coat the bottom and sides of the pan. Shake out excess.
  • Combine the cream and four tablespoons of butter in a saucepan. When the mixture simmers, add all the chocolate and stir around the bottom and sides until melted. Remove from the heat and let stand.
  • Break the eggs into a heat-proof earthenware or metal mixing bowl. Stir in the sugar and vanilla. Place the bowl over - not in - a basin of simmering water, beating the mixture vigorously with a wire whisk.
  • After about one minute, when the eggs are warm and not overly heated, remove the bowl from the basin and beat with an electric mixer.
  • Continue beating until the mixture is tripled in volume and reaches room temperature, about 7 to 10 minutes.
  • Scrape about one-third of the chocolate mixture into a large mixing bowl. Add about one-third of the egg mixture and blend well with a spatula. Add the remaining egg mixture and fold it in. Fold in the remaining chocolate mixture and stir in the pecans.
  • Pour the batter into the prepared pan. Smooth over the top.
  • Place the cake pan in a larger pan and pour boiling water around the cake pan. Place in the oven and bake 45 to 50 minutes or until a cake tester inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it sit in the water bath about 30 minutes. Remove the cake from the water bath and wipe off the bottom of the pan. Invert the cake onto a platter, remove the round of paper and let stand to room temperature. Serve with tropical-fruit custard sauce.

1 teaspoon salt
1/2 cup cocoa powder
1 cup sugar
1 teaspoon cinnamon
2 teaspoons baking soda
1 1/2 cups applesauce
2 eggs (or 1/2 cup egg beaters)
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup skim milk
3/4 cup granulated sugar
5 tablespoons flour or 2 1/2 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk, scalding hot
2 eggs or 4 egg yolks, well beaten
1 teaspoon vanilla
1/4 cup low-fat butter
1 1/3 cups powdered sugar
3 tablespoons spn butter schnapps
1 teaspoon vanilla
1 tablespoon spn orange zest
2 tablespoons spn orange juice
1 tablespoon spn skim milk

Steps:

  • Preheat the oven to 350°F Line 2 nine-inch round cake pans and grease the sides of the pans. ( or use one designer pan and cut cake in half at the end).
  • Sift together flour, cocoa, baking soda, cinnamon and salt; set aside.
  • Beat together the oil and sugar in a mixing bowl.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the vanilla and the applesauce.
  • Add the dry ingredients alternately with the buttermilk to creamed mixture, beating well after each addition.
  • Divide the batter evenly between the two pans.
  • Bake for about 45 minutes or until cake is fully cooked.
  • Custard filling:.
  • Mix the sugar, flour and salt, and vanilla together in a double boiler and add the hot milk gradually, stirring constantly.
  • Cook until the mixture thickens.
  • Pour a 1/4 cup over the eggs and mix thoroughly; pour back into the first mixture and cook for at least 5 more minutes while stirring constantly.
  • (I flash freez my custard filling to chill faster while stirring every two minutes).
  • Orange Butterscotch frosting: In a medium bowl mix softened butter, and milk.
  • Add 1/2 cup of sugar and mix thouroughly. Keep adding sugar, butter schnapps, orange juice, and rest of ingredients until it is the consistancy desired.
  • Cut cake in half and fill with custard. Drizzle with frosting.

1 cup sugar
1 teaspoon vanilla extract
110 g butter, melted
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
2 cups milk, lukewarm
1 tablespoon powdered sugar, for dusting

Steps:

  • Separate egg whites and yolks. Mix and combine flour and cocoa powder.
  • Whisk egg yolks and sugar for 4 minutes until creamy and pale yellow.
  • Add melted butter and vanilla extract and mix for half a minute.
  • Add the flour and unsweetened cocoa powder. Mix with a spatula until incorporated well.
  • Pour the milk gradually and continue beating.
  • Beat egg whites in a bowl until stiff and add one third at a time to the cake batter, gently stir with a spatula after each addition. Don't overmix, just stir a few times.
  • Pour the liquid batter into the 30x17cm baking pan lined with parchment paper and bake for 40-50 minutes.

3 (1 ounce) squares unsweetened chocolate
½ cup milk
⅔ cup packed brown sugar
2 eggs, separated
1 ¾ cups cake flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup butter
⅔ cup white sugar
¾ cup milk
1 teaspoon vanilla extract

Steps:

  • In a saucepan, combine chocolate, 1/2 cup milk, brown sugar, and egg yolks. Cook over low heat, stirring constantly, until custard is thick and smooth. Cool.
  • Stir together flour, soda, baking powder, and salt.
  • In a large bowl, cream butter or margarine. Blend in white sugar, beating until light and fluffy. Mix together 3/4 cup milk and vanilla. Stir flour mixture into creamed mixture alternately with flavored milk. Make 3 dry and 2 liquid additions, combining lightly after each. Stir in cooled chocolate custard.
  • Beat egg whites to form stiff but moist peaks. Fold into cake batter, and beat by hand for 1 minute. Turn batter into two greased and floured 8 inch round cake pans.

For the cannolis you'll need:
6 mini cannoli shells (mine came in a box of 12, I ate the extras-yum!)
1 1/2 c. whole milk
4 large egg yolks
1/3 c. granulated sugar
3 T. corn starch
1/4 t. salt
1 T. unsalted butter
1 t. vanilla
For the cake you'll need:
2 sticks unsalted butter, room temperature
1 1/2 c. granulated sugar
3 eggs
2 t. baking powder
2 t. vanilla
1/2 t. baking soda
1/4 t. salt
4 oz. unsweetened chocolate, melted and cooled a bit
2 c. flour
1/2 c. cocoa powder
1 1/2 c. milk

Steps:

  • First make custard for the cannolis. Heat milk in medium saucepan over medium heat-don't let it boil, just get very warm. While that heats up, whisk together egg yolks, sugar, corn starch, and salt in another medium bowl. Slowly whisk in a cup of hot milk, stirring constantly so the milk doesn't cook the egg. Pour mixture back into pan of hot milk & continue heating on medium heat, again stirring constantly for 5 minutes. Once mixture starts to thicken (or reaches about 170 degrees), remove from heat and immediately stir in butter and vanilla. Pour into a clean bowl (run it through a fine strainer first to remove any lumps) and let cool in fridge. Place plastic wrap directly on surface of custard to keep a skin from forming. While it cools, prepare the batter. First, pre-heat oven to 350. In medium bowl stir flour and cocoa powder together and set aside. Cream together butter and sugar in a stand mixer. Add eggs one at a time, then add baking powder, vanilla, baking soda, salt. Once combined, stop the mixer and scrape down the sides of the bowl. Mix for another 30 seconds, and slowly drizzle in cooled melted chocolate. Add flour/cocoa mixture and milk, 1/2 c of each at a time, mixing constantly. Fill six of the cannoli shells with cooled custard. A pastry bag makes this really easy, but you could also use a spoon. Just make sure custard gets into center of the cannoli shell Put heaping 1/2 c of batter into bottom of six small loaf pans. Place a filled cannoli in the center of each pan then spoon more batter on top, gently spreading to edges of pans. You want sides and top of cannoli to be completely covered, but pans should only be 3/4 full. Bake for 30 minutes at 350 until cake is set and cracks in top are dry. Allow to cool completely then sprinkle with powdered sugar.

  • Cake: Beat egg whites with flat whip until frothy. Beat in cream of tartar and salt. Continue beating until whites are glossy, fine grained and will stand up in a stiff point as beater is pulled out. A 1 cup of sugar and vanilla gradually. Sift remainder of sugar with flour and cocoa; cut and fold in. Pour into a dry, ungreased deep tube center pan. Cut through batter. Bake 65 minutes at 325 degrees. Custard topping: Mix together in the top of a double boiler egg yolks, sugar, and milk. Cook in double boiler until thick, stirring constantly. Dissolve gelatin in cold water; add to hot custard. Let custard stand until cool. Fold in whipped cream. Spread on cake. Sprinkle chopped walnuts on top.
