Chocolate-Dipped Ice Cream Cones With Peanuts image

Drumroll please! This homemade Drumstick treat is as good from the first bite of creamy chocolate-covered ice cream as it is to the last nibble of decadent chocolate-coated cone.

Yield 6 drumsticks

Number Of Ingredients 5

9 ounces semisweet chocolate, finely chopped (about 1 1/2 cups)
3 tablespoons refined coconut oil
6 sugar cones
1 pint vanilla ice cream
2 tablespoons peanuts, chopped

Steps:

  • Combine chocolate and oil in a small, microwave-safe bowl. Heat in microwave in 30-second intervals until melted and smooth, stirring occasionally.
  • Drizzle 1 Tbsp. chocolate into each cone, tilting and turning cone as you drizzle to evenly coat the inside. Shake cones upside down above bowl to allow excess chocolate to drip back into bowl; set leftover chocolate aside. Stand cones in narrow freezer-safe glasses to hold them upright. Freeze until chocolate is set, about 15 minutes.
  • Working one at a time, remove cone from freezer and fill with ice cream, packing gently. Make a rounded scoop at top of cone, pressing down lightly to make sure it is well attached. Set cone back in glass; repeat with remaining cones. Freeze again until firm, at least 30 minutes.
  • If reserved chocolate has thickened, briefly reheat in microwave to loosen. Working one at a time, quickly dip ice cream end of cone into chocolate, turning to coat and making sure ice cream is fully covered. Carefully rotate cone, allowing excess chocolate to drip back into bowl. Immediately sprinkle with peanuts and freeze again until chocolate is set, about 10 minutes.

To Die For Double Chocolate Peanut Butter Ice Cream image

I couldn't find any recipes for chocolate peanut butter ice cream on this site, so I made one up. This is amazingly delicious--trust me on this. After tasting this, you'll have a difficult time justifying a store bought ice cream purchase. You can leave out the peanut butter and have heavenly double chocolate ice cream, yum! If you like your ice cream on the sweeter side, you can add an additional 1/4 cup to 1/2 cup of sugar. Personally, I think the ice cream is sweet enough with 1/2 cup.

2 cups whole milk
1 cup heavy whipping cream
½ cup white sugar
½ cup unsweetened cocoa powder
4 egg yolks
¾ cup semisweet chocolate chips
½ teaspoon vanilla extract
¾ cup peanut butter, or to taste

Steps:

  • Stir whole milk, heavy cream, sugar, and cocoa powder together in a saucepan over low heat; cook, stirring, until sugar and cocoa powder have dissolved, about 5 minutes.
  • Beat egg yolks in a bowl with an electric mixer until thick and pale yellow, about 4 minutes. Stir about 1/2 cup of cocoa mixture into egg yolks, whisking constantly.
  • Pour egg yolk mixture into cocoa mixture; cook, stirring constantly, until the mixture is thick enough to coat the back of a wooden spoon, about 5 minutes. Pour cocoa mixture into a bowl.
  • Place chocolate chips in a large microwave-safe bowl; heat in microwave in 20 second intervals until warm, stirring until chocolate chips are melted. Stir chocolate chips and vanilla extract into cocoa mixture just until combined; refrigerate until cold, about 2 hours.
  • Freeze chocolate mixture in ice cream maker according to manufacturer's instructions. Drop peanut butter by spoonfuls into ice cream; using a knife, fold peanut butter through ice cream to form ribbons of peanut butter throughout.

24 Oreo cookies
1/3 cup butter, melted
FILLING:
1 quart chocolate ice cream, softened
1-1/2 cups creamy peanut butter
1 quart peanut butter ice cream with peanut butter cup pieces, softened
TOPPING:
2 cups semisweet chocolate chips
1 cup heavy whipping cream
1-1/2 cups coarsely chopped miniature peanut butter cups

Steps:

  • Place cookies in a food processor. Cover and pulse until fine crumbs form. Transfer to a large bowl and stir in butter. Press onto the bottom and 1 in. up the sides of a greased 10-in. springform pan; cover and freeze for at least 15 minutes., Spread chocolate ice cream into crust; cover and freeze until firm. Spread peanut butter over chocolate layer and top with peanut butter ice cream. Cover and freeze until firm., Place chocolate chips in a large bowl. In a small saucepan, bring cream just to a boil. Vegetable oil cooking spray
4 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1 pt superpremium ice cream, slightly softened
1/4 cup chopped cocktail peanuts
Special Equipment
a mini-muffin pan with 12 (1/8-cup) cups; 12 paper-lined foil mini-muffin liners* (1 1/4 inches across bottom and 1 inch high); a small watercolor paintbrush

Steps:

  • Line muffin cups and lightly spray liners with cooking spray.
  • Melt chocolate in a metal bowl set over a saucepan of barely simmering water, stirring occasionally, until smooth. Spoon a scant teaspoon chocolate into each cup and use paintbrush to coat bottoms and sides evenly. Freeze cups until chocolate is firm, about 5 minutes, then repaint any thin spots, especially around top edges, with some of remaining chocolate and refreeze until firm, about 5 minutes.
  • Spoon remaining melted chocolate into a small sealable plastic bag, pressing out excess air. Twist bag firmly just above chocolate and set aside.
  • Working in 3 batches, scoop about 1 1/2 tablespoons ice cream into each cup and gently press into cups with a small offset spatula or back of a spoon to fill cups evenly. (You will have some ice cream left over.) Refreeze cups to firm ice cream, at least 5 minutes. Sprinkle cups with peanuts, then snip off a minuscule portion of 1 bottom corner of plastic bag with scissors to form a very small opening and decoratively pipe remaining chocolate over peanuts. Freeze desserts until chocolate and ice cream harden, at least 30 minutes. Remove petits fours from freezer 1 at a time and carefully peel off liners, then refreeze on a tray until hardened, about 30 minutes more.

2 ounces semisweet chocolate
4 tablespoons cocoa powder
1 1/2 cups milk
2 eggs, lightly beaten
2/3 cup sugar
1 cup whipping cream
1 teaspoon pure vanilla extract
1/2 cup peanut butter

Steps:

  • Melt chocolate over low heat.
  • Gradually stir in cocoa powder and milk while continuing to heat.
  • Beat sugar into eggs in a separate bowl.
  • Stir hot chocolate/milk mixture into eggs.
  • Add cream and vanilla extract.
  • Cool.
  • Just before adding to ice cream maker, stir a cup of ice cream mixture into peanut butter.
  • Once mixed, stir into rest of ice cream mixture.
  • Freeze in ice cream maker according to manufacturer's instructions.
  • I used all-natural peanut butter (100% ground peanuts).
