1/2 pound unsalted butter at ROOM TEMPERATURE
2 cups sugar
4 extra-large eggs at ROOM TEMPERATURE
1/4 cup grated orange zest (4 large oranges. I use 5 oranges)
3 cups all-purpose flour plus 2 tablespoons
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup freshly squeezed orange juice
3/4 cup buttermilk at ROOM TEMPERATURE
1 teaspoon pure vanilla extract
2 cups good semisweet chocolate chunks
For the syrup
1/4 cup sugar
1/4 cup freshly squeezed orange juice
For the ganache
8 ounces good semisweet chocolate chips
1/2 cup heavy cream
1 teaspoon instant coffee granules

Steps:

  • 1. Preheat the oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan. 2. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. Add the eggs, one at a time, then the orange zest. 3. Sift together 3 cups flour, the baking powder, baking soda, and salt in a large bowl. In another bowl, combine the orange juice, buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour. Toss the chocolate chunks with 2 tablespoons flour and add to the batter. Pour into the pan, smooth the top, and bake for 45 minutes to 1 hour, until a cake tester comes out clean. DO NOT OVERBAKE. DO NOT GO PAST ONE HOUR. Let the cake cool in the pan on a wire rack for 10 minutes. 4. Meanwhile, make the syrup. In a small saucepan over medium-low heat, cook the sugar with the orange juice until the sugar dissolves. Remove the cake from the pan, set it on a rack over a tray, and spoon the orange syrup over the cake. Allow the cake to cool completely. 5. For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the top of the cake.

I added chopped bittersweet chocolate (I prefer a cocoa percentage around 65 percent or 70 percent) and iced the cake with frosting that features cocoa powder, melted chocolate and malted milk powder for loads of luscious flavor.

2 cups plain flour
1 teaspoon cinnamon
1/2 teaspoon grated fresh nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt

1 1/4 cups sunflower oil
1 3/4 cups caster sugar
1 tablespoon pure vanilla essence
3/4 cup coarsely chopped toasted pecan nuts
3 ounces good chocolate, broken into chip size pieces (I favour Green and Blacks)
3 ripe bananas, peeled and diced
1 1/4 cups of firmly packed soft light brown sugar
1 tablespoon milk
1 tablespoon double cream
4 tablespoons unsalted butter, cut into pieces

Steps:

  • Pre-heat the oven to 180*C/350*F. Grease and flour a 12 cup tube or bundt pan, shaking out all the excess flour.
  • Sift together the flour, cinnamon, nutmeg, cloves, salt and baking soda. Set aside. Beat together the eggs, caster sugar and oil with your electric beaters on medium speed until the sugar is totally emulsified, about 2 to 3 minutes. Beat in the vanilla essence. Slowly beat in the dry ingredients, scraping down the bowl to make sure it all gets mixed in well. Fold in the pecan nuts, chocolate and banana chunks very carefully with a rubber spatula taking care not to mush the bananas up. Scrape into the prepared pan.
  • Bake for 50 minutes. Test with a wooden skewer to see if it is done. It should come out clean if it is. If not, bake for an additional 5 to 10 minutes.
  • In the meantime combine all the topping ingredients in a small saucepan over low heat and cook until the butter and sugar are melted and it begins to boil. Simmer for about 10 minutes while you are waiting for the cake to finish.
  • Remove the cake from the oven and poke holes all over the hot cake (without removing from pan) and spoon the caramel glaze over the top, stopping every now and then to let the cake absorb it. If it starts to pool, poke some more holes in the cake. Let cook completely in the pan on a wire rack before removing and unfolding it onto a plate. I then put another plate on top and flip it over until the flat side is on the top again. Delicious!

1 1/4 cups - Domino® Granulated Sugar
3 - eggs
1 1/2 cups - sour cream
2 teaspoons - vanilla
2 1/2 cups - all-purpose flour
2 1/2 teaspoons - baking powder
1 teaspoon - baking soda
1/2 teaspoon - salt
For better mixing results, have all your ingredients at room temperature.

Steps:

  • Preheat oven to 350°F. Grease 10-inch tube pan. In small bowl, combine topping ingredients; set aside. Beat butter and sugar in large bowl until light and fluffy. Beat in eggs, sour cream and vanilla until well mixed. Combine flour, baking powder, baking soda and salt in bowl. On low speed, add flour mixture to batter, beating until smooth. Spoon 1/3 (about 2 cups) of the batter into prepared pan, spreading evenly. Sprinkle with 1/3 of the topping (scant 1 cup). Repeat layering 2 more times. Bake 55 to 65 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack for 20 minutes. Remove from pan.

Like the title suggests, this mud cake has chunks of dark chocolate baked in the middle. It's easy to make, with impressive results. You could ice the cake with rich chocolate icing or spread with ganache if you prefer. It keeps well for up to 1 week stored in an airtight container lined with baking paper. The first time we made this we only had a 250g block of choc (& couldn't help but eat some as it was being chopped!) so we made do, and used less butter, but when it was done, Matt commented that it "wasn't muddy enough". This time we made it as posted (see pics) & Matt couldn't speak, for a mouth-full of sweet muddy goodness! :D

200 g butter, chopped
300 g good-quality dark chocolate, chopped
1/4 cup hot water
1/4 cup cocoa powder
1 teaspoon vanilla extract
1 cup caster sugar
3 eggs, lightly beaten
3/4 cup self-raising flour
icing sugar, to serve

Steps:

  • Preheat oven to 160°C Grease a 6cm deep, 20cm (base) round cake pan. Line with baking paper.
  • Place butter, 200g chopped chocolate and hot water in a heatproof, microwave-safe bowl and microwave, uncovered, on HIGH for 2 to 3 minutes (stirring every minute with a metal spoon) or until smooth.
  • Add cocoa to warm chocolate mixture and stir until smooth.
  • Stir in vanilla, caster sugar and egg.
  • Sift flour over chocolate mixture and stir gently to combine.
  • Pour half the batter into cake pan. Sprinkle half the remaining chocolate over batter.
  • Top with remaining batter and the rest of the chopped chocolate.
  • Bake cake for 55 to 60 minutes or until a skewer inserted into the centre has moist crumbs clinging.
  • Allow cake to cool completely in pan.
  • Remove and dust with icing sugar. Serve.

1/2 pound unsalted butter at room temperature
2 cups sugar
4 extra-large eggs at room temperature
1/4 cup grated orange zest (4 large oranges)
3 cups all-purpose flour plus 2 tablespoons
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup freshly squeezed orange juice
3/4 cup buttermilk at room temperature
1 teaspoon pure vanilla extract
2 cups good semisweet chocolate chunks
For the syrup
1/4 cup sugar
1/4 cup freshly squeezed orange juice
For the ganache
8 ounces good semisweet chocolate chips
1/2 cup heavy cream
1 teaspoon instant coffee granules

Steps:

  • Preheat the oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. Add the eggs, one at a time, then the orange zest.
  • Sift together 3 cups flour, the baking powder, baking soda, and salt in a large bowl. In another bowl, combine the orange juice, buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour. Toss the chocolate chunks with 2 tablespoons flour and add to the batter. Pour into the pan, smooth the top, and bake for 45 minutes to 1 hour, until a cake tester comes out clean. Let the cake cool in the pan on a wire rack for 10 minutes.
  • Meanwhile, make the syrup. In a small saucepan over medium-low heat, cook the sugar with the orange juice until the sugar dissolves. Remove the cake from the pan, set it on a rack over a tray, and spoon the orange syrup over the cake. Allow the cake to cool completely.
  • For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the top of the cake.

1 cup chocolate graham cracker crumbs, usually around 6 to 8 whole crackers
1/8 cup granulated sugar
1/4 cup butter, melted and cooled slightly
small pinch fine sea or kosher salt
24 regular marshmallows
1/2 cup milk, I used 2%, more if needed
8 ounces cream cheese, softened to room temp, you can use reduced fat but not fat free cream cheese
8 ounces Cool Whip or any frozen whipped topping
1/2 tsp vanilla extract
small pinch fine sea or kosher salt
1/2-3/4 cup semisweet chocolate chips or a 3 ounce chocolate bar, chopped

Steps:

  • For crust:1.Mist a square 8 inch pan with cooking spray.2.Mix everything together in a medium bowl and press into the prepared pan. Bake in a preheated 350 degree oven for about 5 to 7 minutes. Take out and let cool on the counter while preparing the filling.For filling:1.In a heavy saucepan, pour in 1/2 cup of milk and add the marshmallows. Cook at low heat until all melted.
