1 package (8 ounces) cream cheese, softened
2 cups cold 2% milk, divided
1 package (3.9 ounces) instant chocolate pudding mix
1-1/2 cups miniature marshmallows
1 graham cracker crust (9 inches)

Steps:

  • In a large bowl, beat cream cheese and 1/2 cup milk until smooth. Beat in dry pudding mix and remaining milk. Fold in the marshmallows. Pour into the crust. Refrigerate until serving.

A perfectly designed chocolate chip cookie to me means a gooey center and lightly crisp edges. This cookie takes the "gooey center" part literally by having a vegan marshmallow tucked inside the center of each one. Since vegan marshmallows aren't made with gelatin, they stay fluffy throughout baking.

1/2 cup (1 stick) unsalted butter
3/4 cup packed dark brown sugar
3/4 cup granulated sugar
2 large eggs
1 1/4 teaspoons pure vanilla extract
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups semi-sweet chocolate chips (about 12 ounces)
18 vegan marshmallows

Steps:

  • Position the racks in the upper and lower third of the oven and preheat to 375 degrees F. Line two rimmed baking sheets with parchment. (If you only have one baking sheet, let it cool completely between batches.)
  • Place the butter in a small microwave-safe bowl, cover and microwave on medium power until melted, 1 to 2 minutes. (Alternatively melt in a small saucepan.) Cool slightly.
  • Whisk the dark brown sugar, granulated sugar, eggs, melted butter and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in a medium bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon, taking care not to overmix. Stir in the chocolate chips.
  • Use an ice cream scoop or measuring spoon to scoop out portions of dough (each about 3 tablespoons or 2.2 ounces). Flatten each portion in the palm of your hand until it's about 1/4-inch thick. Place 1 marshmallow in the center of the flattened dough and form the dough around the marshmallow until it is completely covered. Roll into a uniform ball and place about 2 inches apart on the prepared baking sheets. Bake until the edges and top are just turning golden, but the center is still soft, 17 to 18 minutes.
  • Let the cookies cool slightly on the baking sheets, about 5 minutes. Serve warm.

2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups miniature marshmallows
1-1/2 cups semisweet chocolate chips
3/4 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the marshmallows, chips and walnuts. , Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

1-1/4 cups Oreo cookie crumbs
1/4 cup butter, melted
2 tablespoons sugar
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
1/2 cup chocolate syrup
1-1/3 cups semisweet chocolate chips, melted
1 carton (8 ounces) frozen whipped topping, thawed
2 cups miniature marshmallows
Chocolate curls, optional

Steps:

  • In a large bowl, combine the cookie crumbs, butter and sugar. Press into a 9-in. pie plate. Bake at 375° for 8-10 minutes or until set; cool completely on a wire rack., In a large bowl, beat cream cheese and chocolate syrup until blended. Beat in melted chips. Set aside 1/4 cup of whipped topping. Fold marshmallows and remaining whipped topping into chocolate mixture., Spoon filling into crust. Refrigerate for at least 8 hours or overnight. Top with reserved whipped topping. Garnish with chocolate curls if desired.

23 large marshmallows
1/2 cup milk
1/2 pint whipping cream (or 8 oz. Cool Whip)
1/2 teaspoon vanilla
1 dash salt
3 chocolate candy bars, shaved and divided
1 graham cracker crust (store bought works well)

Steps:

  • Melt marshmallows in milk in double boiler.
  • When it is smooth, remove and cool.
  • Whip cream until very stiff (or start with Cool Whip).
  • Add salt and vanilla.
  • Fold the whipped cream/Cool Whip into marshmallow mixture.
  • Add shaved chocolate, reserving 2 tablespoons of chocolate for top of pie.
  • Place mixture in pie crust and refrigerate for at least an hour.
  • This pie is very good for several days in the refrigerator if kept covered.

1/3 cup baking cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
3 egg yolks
2 cups milk
1 teaspoon vanilla extract
1 cup marshmallow creme
1 pie crust (9 inches), baked
Whipped cream

Steps:

  • Combine the first five ingredients in a heavy saucepan. Gradually add milk. Cook over medium heat, stirring constantly, until thickened. Remove from the heat. Add vanilla and marshmallow creme; stir just enough to distribute creme. Pour into pie crust; cool. Garnish with whipped cream.
