1 1/4 cup unsalted butter
1/4 cup espresso grounds
3 1/3 cups all-purpose flour
1 tablespoon espresso grounds
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt
1 1/2 cups firmly packed brown sugar
1/2 cup granulated sugar
2 large eggs (at room temperature)
2 teaspoons vanilla extract
12 ounces dark chocolate chunks or semi-sweet chocolate chips
Large flakes of salt (such as Maldon or Jacobson)

Steps:

  • To a medium saucepan, set over medium heat, add the butter. When the butter has melted, turn off the heat. Stir in the espresso and mix until it's covered in the butter. Cover the saucepan and allow to steep for 20 minutes. When it's done, pour it through a fine mesh strainer, into a large bowl OR the bowl of a stand-up mixer.
  • Discard the used up espresso grounds. Set aside.
  • To a medium bowl, whisk the flour, espresso grounds, baking powder, baking soda and salt together. Set aside.
  • Grab the large bowl OR the bowl of a stand-up mixer (using the paddle attachment) with the melted/espresso butter in it. To that bowl, add the brown sugar and white sugar. Beat together until nice and fluffy, about 3 minutes. Add the eggs, one at a time, until combined. Pour in the vanilla extract and beat once more.
  • In one batch, add the flour. You will probably have to lift up the head part of your mixer to be able to add it all at once. Cover the mixer with a clean kitchen towel and turn it on low speed. Mix until the flour is mostly combined and then increase speed until you no longer see any flecks of flour. Pour in the chocolate chunks and mix one last time. Transfer the dough to the fridge to chill for an hour or up to 2 days.
  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Using a medium cookie scoop, scoop out balls of dough. If it's super chilled, you may need to push some dough into the scoop so it's nice and compact and then release the lever. I like to add all the balls of cookie dough to a sheet of parchment versus scooping dough, as I bake.
  • Transfer 6 to 7 balls of dough onto the prepared baking sheet, spacing them a part because these do spread. Place in the oven and bake for about 7 to 8 minutes. If the dough is super cold, it may need up to 10 minutes to bake. They should be light to medium golden brown. Sprinkle with a few pinches of salt upon exiting the oven. Repeat until you've baked all the cookies.
  • To freeze, add the cookie dough balls to a baking sheet and stick in the freezer until very cold, about 20 minutes and then transfer to a freezer-safe plastic bag.

1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons instant espresso coffee powder
1 1/2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F.
  • Cream the butter with the sugars using an electric mixer on medium speed until fluffy, approximately 30 seconds. Beat in the egg and the vanilla extract for another 30 seconds.
  • In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.
  • Using a 1-ounce scoop or a 2-tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.
  • Serve warm with a glass of milk.

1/2 cup pecans (chopped)
1 cup blanched almond flour
4 tablespoons raw cacao powder
1 tablespoon raw honey (or maple syrup)
6 tablespoons coconut oil (melted)
1 can full fat coconut milk
2 tablespoons raw honey
1/4 cup semisweet mini chocolate chips (plus more for topping)
1/2 teaspoon ground coffee
pinch fine himalayan salt

Steps:

  • Preheat oven to 350°F and line an 8x8-inch pan with parchment paper covering all four sides.
  • Mix all ingredients for the crust and evenly distribute across the bottom of the pan.
  • Bake for 10 minutes.
  • In a medium saucepan, bring the coconut milk and honey to a light boil, then simmer on low for two hours, stirring occasionally. Do not cover the pan. You will know you cooked it long enough when the coconut milk is reduced to half and has a thicker consistency and darker color, similar to sweetened condensed milk.
  • Melt the chocolate chips in a double boiler.
  • Add 3/4 cup of the cooked coconut milk to the melted chocolate along with the ground coffee and salt, then stir to combine.
  • Pour mixture over the crust and bake for 20 minutes at 350°F.
  • Remove from oven and immediately sprinkle top with chocolate chips, then set over a wire rack to cool.
  • Once cooled cut into squares and serve.

12 whole (6 ounces) cinnamon graham crackers, crumbled, or 2 cups cinnamon graham cracker crumbs
1/4 cup sugar
1 1/2 sticks (6 ounces) unsalted butter, melted
1/2 cup heavy cream
1 stick (4 ounces) unsalted butter, at room temperature
1 1/2 cups light brown sugar
1 tablespoon water
2 cups (12 ounces) semisweet chocolate chips
1/2 cup heavy cream
1 3/4 teaspoons instant espresso powder
1 teaspoon smoked sea salt, optional

Steps:

  • For the crust:
  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Line the bottom of a 9-inch round springform pan with parchment or waxed paper. Spray the paper and the sides of the pan with cooking spray. In the bowl of a food processor, combine the graham crackers and sugar. Process until the mixture resembles fine bread crumbs. Add the melted butter and blend until the mixture forms into clumps. Spread the mixture into the bottom of the prepared pan, pressing gently to form an even layer. Place the pan on a baking sheet and bake for 10 to 12 minutes until the crust is golden. Cool for 15 minutes.
  • For the caramel:
  • While the crust is cooling, in a medium heavy-bottomed saucepan, combine 1/2 cup of cream, butter, sugar, and water. Stir over medium heat until the mixture is smooth. Bring the mixture to a boil and cook, without stirring, until a candy thermometer registers 240 degrees F, about 5 to 7 minutes. Carefully pour the caramel over the warm crust. Cool for 20 minutes. Freeze until firm, about 10 minutes.
  • For the chocolate layer: Combine the chocolate chips and cream in a small bowl and place over a pan of simmering water. Stir until the chocolate has melted and the mixture is smooth, about 3 minutes. Whisk in the espresso powder. Remove the springform pan from the freezer. Pour the chocolate mixture over the caramel layer and smooth with a spatula. Sprinkle the top with smoked sea salt, if using. Refrigerate for at least 1 hour until firm.
  • Allow the layers to come to room temperature, about 30 minutes. Using a warm, slightly wet knife, carefully cut around the edges of the chocolate layer. Release the side of the pan and remove the paper from the bottom. Cut into 1 1/2-by-1/2-inch bars and store airtight in a covered plastic container.

1 tablespoon espresso powder (I used instant coffee)
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups semisweet chocolate chips
Glaze
2 tablespoons milk
3 tablespoons butter
3/4 cup powdered sugar
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 375°F, with the rack at middle level. Line a 10x15-inch jelly roll pan with parchment paper or grease lightly. In a large bowl, mix the flour, baking powder, salt, and cinnamon. Set aside. In the bowl of an electric mixer, cream together the butter, brown sugar, espresso powder, and vanilla. Slowly add the flour mixture to the butter mixture and mix until just blended. Stir in the chocolate chips. The dough will be very crumbly, with just barely enough dough to hold together the chocolate chips. Press dough evenly into the jelly roll pan with your hands. Bake for 5 minutes, rotate the pan, and bake for 5-10 minutes more or until the edges are just starting to brown (watch carefully... I baked mine for a total of 18 minutes). Cool in the pan 5 minutes before spreading with the glaze. To make the glaze, place milk, butter, sugar, and cinnamon in a small saucepan over medium heat. Whisk until smooth and barely bubbly. Drizzle the glaze evenly over the bars and smooth out to the edges and corners with a rubber spatula. Cool until the pan is just warm to the touch, then cut into bars and serve.
