FOR STREUSEL TOPPING:
1 STICK UNSALTED BUTTER-ROOM TEMPERATURE
3/4 SUGAR
1 EGG-ROOM TEMPERATURE
1 TEASPOON VANILLA
1-1/2 CUPS MASHED BANANAS 4-5 BANANAS
1/4 CUP SOUR CREAM
1-1/2 CUPS FLOUR
1 TEASPOON BAKING POWDER
3/4 TEASPOON BAKING SODA
1/2 TEASPOON KOSHER SALT
3/4 CUP LIGHT BROWN SUGAR
1/2 CUP FLOUR
1-1/2 TEASPOONS CINNAMON
1/4 KOSHER SALT
4 tablespoons (1/2 stick) unsalted butter,at room temperature
6 ounces bittersweet chocolate,chopped
3 tablespoons slice blanched almonds

Steps:

  • preheat oven 350 grease and flour 8x8x2 square pan in bowl with electric mixer,cream butter and the sugar together on high speed for 3 minutes until light and fluffy. scrape down the bowl with a rubber spatula. With mixer on low, beat in the egg,vanilla,banana and sour cream and mix until combined. Don't worry it may look curdled. In another bowl,sift together the flour,baking powder,baking soda and salt. With the mixer on low,slowly add the dry ingredients to the wet ones. Scrape into prepared pan and smooth the top. For the streusel,combine the brown sugar,flour,cinnamon,salt and butter in medium bowl and pinch the ingredients together with fingers until the mixture makes crumbles. Add the chocolate and combine. Distribute the streusel evenly over the batter,sprinkle with almonds on top. bake for 40 to 45 minutes,until a cake tester inserted in the center comes out clean. cool in pan.

1/2 c unsalted butter, (1 stick)
3/4 c granulated sugar
1 egg
1 tsp vanilla extract
1/4 c sour cream
1 1/2 c mashed bananas *see note, about 4 to 5 ripe bananas
1 1/2 c all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp kosher salt
3/4 c brown sugar
1/2 c all-purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp kosher salt
1/4 c unsalted butter, softened and cubed
6 oz of chocolate chips **see note
2 tbsp to 3 shaved almonds

Steps:

  • Preheat the oven to 350°F. Grease a 9-inch pie pan or 8-inch baking pan with baking spray. If you're going to be removing the cake from the pan, fit a long piece of parchment paper in the pan, with some of the parchment paper hanging off of the edges of the pan.
  • Create the cake by creaming the butter and sugar together until light and fluffy; about 2 minutes. Add in the egg, vanilla, and sour cream on low speed. Add the mashed bananas and mix just until combined; cake may look lumpy and curdled - thats perfectly fine.
  • Sift the all-purpose flour, baking powder, baking soda, and salt together before adding to the wet ingredients. Mix until everything has been incorporated. Pour the batter into your prepared pan and use a spatula to even the batter out in the pan.
  • To create the streusel topping, whisk the sugar, flour, cinnamon and salt together to combine. Drop in the butter and use your fingers to rub the butter into the dry ingredients and create a crumble. Stir in the chocolate chips before evenly distributing this mixture all over the top of the cake. Garnish with some shaved almonds all over the top.
  • Bake the cake for 45 to 50 minutes on a center rack in your oven, or until a toothpick inserted in the center comes out with little to no crumbs. Let the cake rest in the pan until it's just warm. Store in an airtight container at room temperature for up to 3 days.

3/4 cup margarine
1 3/4 cups white sugar
2 eggs
1 1/4 cups mashed bananas
1 teaspoon vanilla
2 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup sour milk (put 1 tbsp. of vinegar in 3/4 measuring cup, fill with skim milk)

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine with sugar and eggs.
  • Mix in banana and vanilla.
  • Mix flour with remaining dry ingredients.
  • Add flour mixture to margarine mixture in 3 parts, alternately with sour milk.
  • Begin and end with flour.
  • Spread in 2 greased 8" cake pans.
  • Bake in oven about 40 minutes.
  • When cool, frost generously with chocolate butter frosting.
