1 pound dark chocolate chips
½ cup butter
4 eggs
1 dash vanilla extract
3 ripe bananas, or more to taste
1 cup all purpose flour
1 cup white sugar
1 tablespoon unsweetened cocoa powder
1 tablespoon baking powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a deep baking pan.
  • Melt chocolate and butter in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Mix eggs and vanilla extract together in a large bowl; mash bananas into egg mixture until well mixed.
  • Combine flour, sugar, cocoa powder, and baking powder in a separate bowl.
  • Mix chocolate mixture into the banana mixture; add flour mixture and stir until smooth. Pour mixture into the greased baking pan.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 60 minutes.

1 cup natural-style peanut butter (chunky or creamy)
1 1/2 bananas (or 3 eggs)
3/4 cup brown sugar
1/4 cup soymilk (or regular low-fat milk)
2 teaspoons vanilla extract
1 teaspoon baking powder
1 1/2 cups flour (white or whole wheat pastry)
3/4 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Coat an 8X8 inch square glass baking dish with oil.
  • Combine peanut butter, bananas (or eggs) brown sugar, soy milk (or regular milk) and vanilla until smooth.
  • Add baking powder and blend.
  • Mix in flours until blended and last add the chocolate chips.
  • Place into prepared baking dish and bake for 25-30 minutes.
  • Let cool on a rack and then serve.

3/4 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter
3/4 cup brown sugar, lightly packed
1 1/2 cups chocolate chips (divided)
1 teaspoon vanilla
2 eggs
1 small very ripe banana, mashed
1/2 cup chopped walnuts
powdered sugar

Steps:

  • Preheat oven to 325°F Butter a 9 inch square pan.
  • In a small bowl, stir together flour, baking soda and salt; set aide.
  • In a small saucepan, combine butter and brown sugar. Bring to a boil over low heat, stirring constantly. Immediately remove from heat and stir in 1 cup of the chocolate chips until melted and smooth. Blend in vanilla. Transfer mixture to a large mixing bowl and cool slightly. With wire whisk, beat in eggs one at a time. Blend in mashed banana, then flour mixture. Fold in remaining 1/2 cup chocolate chips and walnuts. Spread in pan.
  • Bake about 45 minutes.
  • Cool completely in pan.
  • Lightly sift powdered sugar over top before cutting into bars.

This recipe makes a dense but still cake like brownie with a strong banana flavor. I am not sure where I got this recipe but I have been making these for a long time. And yes, it really does take only 1/2 cup of flour. Be sure to test before removing from oven. Depending on your oven it may need to bake longer than 40 minutes.

1/2 c butter, melted and cooled
1 c sugar
1/4 c cocoa
2 large eggs, lightly beaten
1 Tbsp milk
1 1/2 tsp vanilla extract
1/2 c all purpose flour
1 tsp baking powder
1/4 tsp salt
1 c mashed ripe banana
1 c chopped walnuts
OPTIONAL:
a little powdered sugar

Steps:

  • 1. In a bowl, combine butter, sugar and cocoa. Stir in eggs, milk and vanilla. Blend in flour, baking powder and salt. Stir in bananas and nuts.
  • 2. Pour into a greased 9 inch square baking pan. Bake at 350 degrees for 40-45 minutes or until brownies test done. Cool on a wire rack. Just before serving, dust with confectioners' sugar if desired.

180 g brown sugar
200 g dark chocolate
1 teaspoon vanilla
2 eggs, lightly beaten
2 bananas, ripe (large ones, or increase no. of bananas to 3)
100 g self-raising flour, sifted
