HOLIDAY HAYSTACKS

1 cup semisweet chocolate chips
1 cup milk chocolate chips
3 cups chow mein noodles
1/2 cup roughly chopped almonds
1/2 cup shelled pistachios
2 tablespoons assorted holiday sprinkles

Steps:

  • Heat 2 inches of water in a pot to a simmer. Add the semisweet and milk chocolate to a bowl and place over the pot of simmering water. Allow to melt, stirring occasionally, 4 to 5 minutes.
  • Meanwhile, add the noodles, almonds and pistachios to a large bowl and set aside.
  • When the chocolate has melted completely, pour over the noodle and nut mixture. Mix until everything is well coated in the melted chocolate.
  • Using 2 spoons, drop tablespoon mounds onto 2 parchment-lined baking sheets. Sprinkle the holiday sprinkles over the top. Allow to dry completely before storing, about 1 hour.

3/4 cup butter, softened
1-2/3 cups sugar
2 large eggs
3/4 cup sour cream
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
2/3 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt
1 cup buttermilk
FROSTING:
5 tablespoons butter, softened
2-1/2 cups confectioners' sugar
1 teaspoon vanilla extract

3 to 4 tablespoons whole milk

  • In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add sour cream and extracts; mix well. Steps:

  • Spread almonds in a large skillet; toast over medium heat until starting to brown, 3 to 5 minutes. Pour almonds into a bowl.

I have been making these for many years. They are so easy yet are some of the most requested treats during the holidays. I make these chocolate haystacks with chocolate chips and peanuts and I make vanilla haystacks with vanilla almond bark and cashews. I usually combine some of each in a nice gift box for special occasions.

12 oz chocolate chips
1/2 bag chow mein noodles
1 c party peanuts

Steps:

  • 1. Melt the chocolate chips in a microwavable bowl. Heat at 30 second intervals until melted and smooth.
  • 2. Add the chow mien noodles stirring gently to keep from breaking the noodles.
  • 3. Add the peanuts and stir gently to combine.
  • 4. Drop a tablespoon of the mixture onto a cookie sheet lined with wax paper or parchment paper.
  • 5. Refrigerate for at least 30 minutes to set.
  • 6. OPTION: To make Vanilla Haystacks, replace the milk chocolate with vanilla chips or almond bark and replace the peanuts with cashews or your favorite nut.
