GLUTEN-FREE CHOC CHIP OATMEAL MUFFINS
I took the original recipe found on this site and changed it up to be gluten-free and lower in sugar/fats. These muffins were highly praised, thinking these were too good to be gluten-free! I prefer to cut the fats and sugars in half by using applesauce and agave nectar.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Beat brown sugar and butter together in a bowl; add egg and beat until creamy.
- Whisk flour, cinnamon, baking powder, baking soda, salt, and allspice together in another bowl. Stir 1/2 the flour mixture into the butter mixture. Stir applesauce into butter mixture; mix well. Stir remaining 1/2 the flour mixture into butter mixture until just combined; add oats and chocolate chips. Pour muffin batter into prepared muffin cups.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

Steps:
- Preheat oven to Gas 4/180C350°F.
- Prepare muffin tin with paper liners/spray with Pam.
- Sift dry ingredients into a large bowl, whisk and set aside.
- Melt butter in microwave.
- Peel, chop and mash banana.
- Lightly beat egg and add to banana, followed by sour cream, vanilla extract and finally melted butter. Whisk until smooth.
- Add wet to dry mixture and gently combine ensuring not to overwork batter. Add chocolate chips.
- Evenly distribute batter between six muffin cups, sprinkle with sugar.
- Bake at Gas 4/350F/180C for 30 minutes until golden.

This is my favourite muffin recipe of all! I eat these muffins all the time and they are quick and easy to make.

Steps:
- Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners.
- In large bowl mix the eggs, oil, milk and vanilla.
- In smaller bowl mix the flour, sugar, cocoa, baking powder, salt and chocolate chips.
- Combine wet and dry mixtures and fold together gently until just mixed.
- Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes.
- Remove from pan and cool on rack. These are nice sprinkled with extra chocolate chips on top of each muffin before baking.

- Sift brown rice flour, potato flour, baking powder, bi-carb, xanthan gum, egg replacer powder and cinnamon into a bowl. Add brown sugar. Using a whisk, mix well.
- In a separate bowl beat together bananas, vegetable oil, soy milk, silken tofu and vanilla until smooth.
- Add to dry ingredients. Mix until combined.
- Stir in choc chips.
- Spoon into greased muffin pans.
- Bake for 30-35 minutes at 180ºC (350ºF).

- Preheat oven to 180°C.
- Grease a 12-hole muffin pan. Mash bananas in a bowl, then crumble in Weet-Bix and stir in the milk.
- Set aside for 10 minutes. Meanwhile, beat together the eggs and margarine, then add to the banana mixture. Combine flour and sugar in a large bowl and add wet ingredients and choc chips.
- Stir until just combined, then spoon into muffin pan and bake for 25 minutes until a skewer inserted into the centre comes out clean.

- Preheat oven to 200°C Line a medium muffin tray (12 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
- Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
- Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
- Spoon the mixture evenly into the muffin cases. Bake for 15-20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.
