2 large cucumbers, peeled and thinly sliced
1/2 cup sour cream
3 tablespoons minced chives
2 tablespoons white vinegar
1 tablespoon water
1 tablespoon chopped green onion
1/4 teaspoon garlic powder
1/4 teaspoon salt, optional
1/8 teaspoon pepper

Steps:

  • In a bowl, combine cucumbers and sour cream. Cover and refrigerate for at least 1 hour. Stir in remaining ingredients just before serving.

Potato, Cucumber, and Red Bell Pepper Salad With Chive image

from The Complete Vegan Cookbook- my friend made this for me and i absolutely loved it (and I usually don't care for potato salad). Can be made with 'non-vegan' sustitutes where desired. Cooking time is an estimate since I have never made it yet and does not include chill time.

3 lbs red potatoes, scrubbed and diced
1 large cucumber
3/4 cup soy mayonnaise or 3/4 cup safflower mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup minced chives, can also use (about 1 bunch)
dried chives
4 green onions, minced
1 large red bell pepper, diced
2 -3 hard-boiled eggs, diced (optional)

Steps:

  • Place the diced potatoes in a large pot and cover them with plenty of water. Cover the pot and bring to a boil over high heat. Remove the lid, stir gently, then continue to cook over medium-high heat for about 8 to 10 minutes, until the potatoes are fork-tender, but not falling apart. Transfer them to a colander and rinse with cold water to stop the cooking. Set aside to drain.
  • If the cucumber is waxed or if the skin tastes bitter, peel it. Dice the cucumber and set aside in a large bowl. In a small bowl, whisk together the mayonnaise, mustard, salt, pepper, and chives.
  • Add the potatoes, onion, and bellpepper to the cucumber in the bowl. Pour the dressing over the mixture and toss gently until well combined. Chill before serving.

2 ounces goat cheese, crumbled
1 tablespoon chopped chives
1 tablespoon olive oil
1 tablespoon fresh lemon juice
sea salt and pepper, freshly ground

  • In a small bowl, whisk together oil and juice. Season to taste with salt and pepper. Pour over cucumber slices and serve.

This recipe has been in my husbands family since he was a kid. It is a Family Favorite. In trying to eat healthier, I added Chia seeds to this recipe to increase the fiber content & lower the net carbs per serving. By doing that this recipe now has 3 net carbs per serving instead of the original 7. Using a Zero calorie sweetener keeps the sugar down to only 2 per serving, & there are 130 calories per serving. We loved this new version, I was skeptical because of the chia seeds, but my husband said it tasted the same. The chia seeds absorbs some of the liquid in the cukes as the salad sits.

Number Of Ingredients 8

2 large english cucumbers, each about 8 inches long
2 bunch(es) green onions, chopped
2 cup(s) sour cream heaping full, i used daisy
3/4 cup(s) splenda zero calorie sweetener
1/2 cup(s) chia seeds, (optional) adds fiber
1/4 cup(s) dried chopped chive
1 teaspoon(s) granulated garlic
1/2 teaspoon(s) white pepper, or less as desired

Steps:

  • Wash Cucumbers and slice thinly as desired. Add to a large bowl.
  • Using a food processor or by hand wash trim & chop the green onions. Add to a medium size bowl.
  • Then add in the sour cream, splenda and spices. Stir to mix together completely.
  • Add in about half of the sliced cucumbers and stir to blend into the sour cream mixture.
  • Then add in the remaining sliced cucumber, & the chia seeds and stir to mix together completely.
  • MY FITNESS PAL.Pour mixture into a medium size container. Garnish with sliced cucumbers and a few chopped green onions. Cover and refrigerate for at least 2 hours or so before serving to allow the flavors to blend together.
