12 tablespoons unsalted butter (softened)
1 cup packed brown sugar
1/2 cup granulated sugar (white sugar)
1 large egg
1 egg yolk
2 teaspoons pure vanilla extract
2 1/8 cup all purpose flour (unbleached is best)
1/2 teaspoon salt
1/2 teaspoon baking soda
12 ounces semi-sweet or bittersweet chocolate chips
36 Jumbo Candy Eyes
4 ounces dark confectionery coating (melted)

Steps:

  • Cream butter, brown sugar and granulated sugar and beat on medium speed for about a minute until well blended. Add egg, egg yolk, and vanilla and beat until fully incorporated.
  • Mix flour, salt, and baking soda together then incorporate it into the wet ingredients.
  • Fold chocolate chips into the batter.
  • Scoop out 16-18 cookies, about 1/4 cup of dough for each. Place cookies on parchment paper lined baking sheets. Refrigerate for 30-60 minutes.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Bake cookies one tray at a time, for 12-16 minutes. The cookies should begin to set around the edges, be light golden brown, yet still be soft in the center.
  • Allow cookies to cool completely.
  • Attach two candy eyes to each cookie using melted confectionery coating. Pour remaining coating into a squeeze bottle or small zip top bag. Pipe smiles onto cookies. Let candy coating harden.

1 small egg white
1 1/3 cups confectioners sugar (sifted)
chocolate chips or candy coated sunflower seeds

Steps:

  • Combine the egg white and sugar in the bowl of your mixer. Use the whisk attachment to beat on medium speed for 4-5 minutes, occasionally stopping to scrape down the sides as needed.
  • The final consistency must be such that you can scoop some up and it will stick to the spoon, but if you tilt the spoon, the thick icing will eventually fall off.
  • If its too thick, add water in one teaspoon increments until you've reached the proper thickness.
  • If its too thin, add additional sifted powdered sugar.
  • Add the frosting to a piping bag with a small round tip, or you can just snip the corner of the bag off.
  • Lay out a large piece of wax paper and squeeze straight down to make a mound the desired size to make an eye. Don't make more than 10 or so before putting the candy piece on top because the eyes will begin to dry right away.
  • Allow to sit at room temperature for at least 24 hours before removing.

This is a Tanzania specialty: chips are placed at the bottom of a skillet, then whisked eggs are poured over it and the whole thing is cooked together until it's a solid omelet. My husband taught in Tanzania for a short while, and raved about this dish. I didn't realize how tasty it was until he asked me to make up a large batch of these for his students as part of celebrating International Day at their school. This is a variation that allowed me to make a large amount of omelets in a short period of time. It's not exactly the same, but my husband assured me the taste was very similar and the kids loved it. I garnished the plates with fresh sugar cane and each kid got a cup of mango juice.

Steps:

  • Bake the french fries and then turn off the oven. Keep them inside the oven so they stay warm. You could also heat them up in the microwave or even use a deep fryer, if you'd prefer.
  • Whisk the eggs.
  • Preheat a skillet on medium heat.
  • Pour the whisked eggs in the skillet and swish them around to coat the bottom, just like you're making a regular omelet.
  • When the omelet is nearly completely cooked, put the fries on one side, and fold the omelet over it.
  • Cook for about 10-20 second more, then remove from the skillet onto a plate.
  • Serve with salt, pepper, and ketchup.

750g Desirée potato (about 3 medium large), peeled
groundnut oil, for drizzling
sea salt and freshly ground black pepper

Steps:

  • Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
  • Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.
