2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon ginger

2/3 cup vegetable oil
3/4 cup white sugar
3/4 cup packed brown sugar
3 large eggs (room temperature)
2 teaspoon vanilla extract
1 cup apple sauce
1 1/2 cups grated apple
1/3 cup sour cream
1/3 cup unsalted butter (softened to room temperature)
8 oz cream cheese (brick style, full-fat)
3 cup powdered sugar
1-2 tablespoons heavy cream (as needed)
chopped walnuts (optional)

Steps:

  • Preheat the oven to 350F degrees.
  • Grease and flour a 9x13 inch cake pan.
  • In a large bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger & nutmeg.
  • In a large bowl using an electric mixer beat together the oil, sugars, eggs and vanilla. Then stir in the apple sauce, grated apple and sour cream.
  • Slowly beat in the flour mixture, turning off the mixer and scraping down the sides of the bowl as necessary.
  • Pour into the prepared pan and bake for 40-45 minutes or until an inserted toothpick comes out clean.
  • In a large bowl beat together the butter until soft. Then beat in the cream cheese until no lumps remain.
  • Slowly beat in the powdered sugar about 1 cup at a time. Beat in 1-2 tablespoons cream as needed until the desired sweetness is reached.
  • Frost the cooled cake, then top with chopped walnuts.

Mom always served it without frosting, but my niece, Emilea, who is a pastry chef, recently added a cream cheese frosting. So I'm including a Cream Cheese Topping that can be added, if you wish. =^..^=

Steps:

  • Stir the apple slices and sugar together in a large bowl & let stand for one hour.
  • Add oil, baking soda, baking powder, flour, vanilla, eggs, walnuts, & raisins to the apples & sugar and mix together well. You may need to add a little milk (start with 1 Tablespoon) to make the batter stirrable, depending on the juiciness of the apples.
  • Pour the batter into a cooking-sprayed 13 x 9 pan.
  • Bake at 350 degrees F. for 40-45 minutes, until a toothpick comes out clean from the center.

1-1/2 tsp. ground cinnamon, divided
1-1/4 cups graham cracker crumbs
1/4 cup old-fashioned or quick-cooking oats
2 Tbsp. butter, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

Steps:

  • Cook apples, 1/4 cup sugar and 1/2 tsp. cinnamon in saucepan on medium heat 6 min. or until apples are tender, stirring frequently. Cool.
  • Heat oven to 325°F. Combine graham crumbs, oats, butter, remaining cinnamon and 2 Tbsp. of the remaining sugar; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, vanilla and remaining sugar in medium bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.

1 ¼ sticks butter, melted
2 large apples - peeled, cored, and sliced
1 teaspoon brown sugar

1 (8 ounce) container mascarpone cheese
⅔ cup white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch springform pan with parchment paper or grease with butter.
  • Combine graham cracker crumbs and butter in a large bowl to create a grainy mixture. Reserve 1/4 cup and distribute remaining crust evenly onto the base of the prepared springform pan. Set aside.

I have to confess that I spent the first half of my life not loving cheesecake. I just didn't understand it. Then, lo and behold, at the farmers' market in New Orleans, I was introduced to cheesecake made with Creole Cream Cheese.

Crust:
2 cups graham cracker crumbs (about 16 whole crackers)
3 tablespoons granulated sugar
3 tablespoons firmly packed light brown sugar
1⁄4 teaspoon kosher salt
1⁄2 cup unsalted butter, melted
Filling:
2 pounds cream cheese, at room temperature
1 cup granulated sugar
1⅓ cups Creole Cream Cheese
1 teaspoon vanilla bean paste
2 eggs, at room temperature
Ingredient Info: You can substitute 1 cup sour cream mixed with 1⁄4 cup buttermilk for the 1⅓ cups Creole Cream Cheese.
Topping:
3¾ tablespoons unsalted butter
3⁄4 cup granulated sugar
1⁄4 cup firmly packed light brown sugar
1½ tablespoons honey
4 cups peeled, cored, and evenly chopped Granny Smith apples (about 7)
1½ teaspoons finely grated lemon zest
1 tablespoon fresh lemon juice
3⁄4 teaspoon kosher salt
3⁄4 teaspoon ground cinnamon
1⁄3 teaspoon ground cardamom
1⁄3 teaspoon ground ginger
1 teaspoon vanilla extract

Steps:

  • Make the crust:
  • Make the crust. Preheat the oven to 375°F. In a medium bowl, stir together the graham cracker crumbs, granulated sugar, brown sugar, salt, and butter to combine. Pat the mixture into a 10-inch springform pan, pressing the crumbs firmly in an even layer on the bottom and making sure they come at least halfway up the side of the pan. Bake for 7 to 10 minutes, until the crust is fragrant, dry, and toasty. Let cool, then wrap the entire outside of the pan tightly in two layers of foil, all the way to the top.
  • Make the filling:
  • In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using a handheld mixer, cream the plain cream cheese and sugar on medium-high speed for about 4 minutes, until incredibly smooth and light. Stop the mixer and scrape down the bottom and sides of the bowl with a rubber spatula. Add the Creole Cream Cheese and vanilla paste and beat on medium-high speed for about 2 minutes, scraping down the bowl once more. Decrease the speed to medium and beat in the eggs, one at a time, incorporating each one before adding the next. Mix just until the batter is smooth and uniform. Continuing to mix past that point, even though the batter won't look different, only incorporates extra air, which will cause the cheesecake to bubble excessively and the surface to crack as that air tries to escape during the baking process.
  • Decrease the oven temperature to 350°F. Pour the batter into the prepared crust and tap the pan gently on the counter a few times to remove any large air bubbles. Place the springform pan in a large baking or roasting pan (just big enough for the springform pan to fit in) and set the pan on the middle rack in the oven. Fill the pan with enough hot water to reach the rim of the springform pan. Bake for about 1 hour, or until the sides of the custard are set and the middle is still just slightly wobbly. Generally, if the entirety of the custard is fully set, your cheesecake is overbaked. Don't panic-it'll still be delicious, and you'll do better next time!
  • Let the cheesecake cool in the water until it is about room temperature. (You don't want to have to try to grab the pan out of hot water if you can help it.) However, if you're worried that your cheesecake might be slightly overbaked, you'll want to pull it out rather quickly, and let it cool at room temperature. Refrigerate for at least 3 hours before slicing. The cake can be refrigerated, covered, for up to 4 days.
  • Make the topping:
  • In a large heavy-bottomed sauté pan, heat the butter until melted. Stir in the granulated sugar, brown sugar, and honey and let cook until bubbling. Add the apples and toss to coat. Stir in the lemon zest, lemon juice, salt, cinnamon, cardamom, and ginger; stir to combine. Cook for about 4 minutes, or until the apples just start to soften. Remove from the heat, stir in the vanilla, and transfer to a bowl to cool completely before use. The filling can be made up to 3 days ahead of time and stored in an airtight container in the refrigerator.

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.

  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.
