Chipotles are jalapeno chiles that have been slowly dried over smoke. This puree gives an authentic mexican flavour to many dishes. Use the substitute if you can as it's just as good. From the Fresh Mex cookbook.

Number Of Ingredients 8

6 cups water
4 ounces dried chipotle chiles, stems removed
2 tablespoons achiote paste
1 cup tomato paste
1 cup firmly packed brown sugar
1/4 cup red wine vinegar
2 teaspoons salt
1/4 cup olive oil

Steps:

  • Combine all the ingredients in a saucepan over high heat.
  • Bring to the boil, decrease heat to medium low and simmer for 30-45 minutes.
  • Remove from the heat and cool completely.
  • Puree the mixture in a blender until smooh.
  • Store in an airtight container for up to 3 days.
  • If you can buy cans of chipotles en adobo (chiles marinated in a saucy paste of vinegar and spices) you can just puree that as a substitute.

Chipotle peppers are jalapeno chilies that have been smoked and dried. Their smoky heat is delicious brushed over tortillas and pizzas, and carefully added to soup and stews. A little will go a long way. The puree will keep almost indefinately; if you know you'll be storing it a long time, cover the puree with a thin layer of oil. Enjoy! 1 (7 ounce) can chipotle peppers, in adobe sauce
olive oil (or other oil of choice)

Steps:

  • Take the contents of the can and puree in a blender or food procesor. Be careful handling chipotles and remember that a little of this smoky chili puree will go a long way.
  • Store in the refrigerator until needed in a jar with tight lid.
  • The puree will keep almost indefinately when covered with a thin layer of oil(I prefer olive oil).

3 chipotle chiles (about) from canned chipotle chiles in adobo
2 tablespoons apricot jam or preserves
1 1/4 teaspoons red wine vinegar
1/2 teaspoon ground cumin
Nonstick vegetable oil spray
2 6-to 7-ounce salmon fillets with skin (scant 1 inch thick)
1 15-ounce can hominy, drained, juice reserved
1 tablespoon butter
1 tablespoon chopped fresh cilantro
Ingredient info: Chipotle chiles are dried, smoked jalapeños in a spicy tomato sauce called adobo; they're available at some supermarkets and at specialty foods stores and Latin markets.

Steps:

  • Preheat oven to 450°F. Using back of spoon, press enough chipotles through fine sieve into small bowl to measure 2 teaspoons puree. Mix puree, jam, vinegar, and cumin in bowl; season glaze to taste with salt.
  • Coat small rimmed baking sheet with nonstick spray. Arrange salmon on sheet; sprinkle with salt and black pepper. Spread half of glaze over each fillet. Roast until just opaque in center, about 10 minutes.
  • Meanwhile, puree hominy and 3 tablespoons reserved juice in mini processor until almost smooth. Transfer to small skillet. Add butter and cilantro. Stir over medium heat until warmed through, mixing in more reserved juice by teaspoonfuls if too thick. Season to taste with salt and pepper.
  • Divide hominy between 2 plates, top with salmon, and serve.

CHIPOTLE, CORN & PRAWN FRITTERS WITH AVOCADO PURéE



Chipotle, corn & prawn fritters with avocado purée image

Make these moreish fritters as a starter or light main course, with a delicious avocado purée - you can also serve them with guacamole or chipotle aioli

Yield Makes 12 fritters (serves 4 as a light main, 6 as a starter)

Number Of Ingredients 19

50g fine cornmeal or polenta
50g plain flour
225g sweetcorn , from a can or frozen (drained if from a can)
3 large eggs
75ml milk
40g butter , melted and cooled
1 tsp baking powder
3 tsp chipotle paste or chipotle powder
1 red chilli , halved, deseeded and chopped
2 spring onions , finely chopped
300g raw shelled king prawns , roughly chopped
sunflower oil , for frying
soured cream and lime wedges, to serve
2 ripe avocados
2 limes , juiced
1 garlic clove , grated to a purée
1 tbsp extra virgin olive oil
¼ tbsp sherry vinegar
2 tbsp finely chopped coriander

Steps:

  • Prepare the avocado just before you want to cook the cakes, as it discolours if it sits too long. Halve and stone the avocados and scoop out the flesh. Mash with all the other ingredients until smooth. Taste for seasoning (you may want to add a little more vinegar). Cover and set aside.
  • For the fritters, put the cornmeal, flour, half the sweetcorn, the eggs, milk, butter and baking powder in a food processor and, using the pulse button, blitz together. Season and stir in the rest of the corn, the chipotle paste, chilli, spring onions and the prawns by hand.
  • Heat some oil in a large frying pan and, once it is hot but not smoking, spoon dollops of the corn-cake batter into the pan. You are aiming to make cakes about 10cm in diameter. If you use a large pan, you should be able to cook four fritters at the same time. When each cake has set underneath and you can see bubbles on the surface, flip it over and cook until golden. Lift each cake out onto a double layer of kitchen paper. You can keep the cakes warm on a baking sheet (in a single layer) in a low oven while you cook the rest. Add more oil as you need it. Serve the cakes with the avocado purée, some soured cream and wedges of lime.

1/2 cup canola oil plus additional for cooking
1 red onion, roughly chopped
2 tablespoons chipotle in adobo
2 limes, juiced
1 teaspoon sugar
1 teaspoon minced sage
Salt and black pepper to taste
1 lemon, juiced
2 limes, juiced
1 tablespoon Dijon mustard
1/4 cup grapeseed oil (or sunflower)
3 peeled chayote, julienned
1 tablespoon chopped chives
Salt and black pepper to taste

Steps:

  • CHIPOTLE PUREE: In a skillet coated lightly with oil, brown the onions and season. Add the juice, chipotles, sugar and sage. Cook for 3 to 4 minutes then transfer to a blender. Blend on high speed and drizzle in the oil. Check for seasoning.
  • CHAYOTE SLAW: In a mixing bowl, whisk together the juices and mustard. Whisk in oil and season. Toss with chayote and chives. Season with salt and pepper.. This should be done 10 minutes prior to serving.
  • PLATING On a plate, slice open tamale, and push open. Ladle on some short ribs and top with slaw. Drizzle sauce around.

Steps:

  • Char red bell peppers over gas flame or in broiler until blackened on all sides. Enclose peppers in paper bag. Let stand 10 minutes. Peel and seed peppers; chop coarsely. Combine peppers and next 6 ingredients in blender and puree.
  • Preheat oven to 450°F. Sprinkle lamb with salt and pepper. Place in roasting pan. Roast to desired doneness, about 25 minutes for medium-rare. Cook orange-chipotle puree in medium saucepan over medium heat until heated through, stirring occasionally. Cut lamb into double chops. Serve with sauce.
  • *Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.

Steps:

  • To make chipotle purée... Add a whole can of chipotle in adobo sauce in the jar of a blender and process until smooth. The next step is to measure 1 tablespoons and place it on a baking sheet. Transfer to the freezer until hard then put the frozen tablespoons in a re-sealable plastic bag and keep in the freezer. When needed, take a frozen tablespoon of chipotle in adobo sauce (or more as needed), place in a bowl and let sit until it becomes soft enough to mix. Proceed with your recipe.
  • To make chipotle mayo... Add a tablespoon at a time of mayo (not Miracle Whip) to the puréed chipotle in adobo sauce until it suits your taste. Voilà! You've got yourself chipotle mayo anytime you want -- Enjoy!
