Found in the winter 2007 issue of Raley's Something Extra magazine. I used canned mandarin oranges since that's all I had on hand and added a few tablespoons of low fat feta cheese for extra zing.

2 ripe but firm avocados, pitted and coarsely mashed
1/2 cup fresh orange, finely chopped including juice
1/4 cup red onion, minced
2 tablespoons fresh cilantro, chopped
1 tablespoon squeezed fresh lime juice
1 -2 teaspoon chipotle chile, in adobe minced
1/4 teaspoon seasoning salt

Steps:

  • In a medium bowl, stir together all ingredients until well blended.

4 avocados, peeled
1/4 cup chopped red onion
1/4 cup chopped jalapeno
1/4 cup chopped cilantro
1 tablespoon salt
1/4 teaspoon ground cumin
1/2 lime, juice of

Steps:

  • After peeling avocados take core out and set aside.
  • Place the insides of the avocado in a bowl.
  • Take a potato masher and mash the avocados until it is a creamy consistency.
  • Add, onion, cilantro, jalapeño, and spices over the avocado mixture.
  • Stir the ingredients and then add juice from half of a lime.
  • Stir and refrigerate until ready to serve.
  • Note- to keep guacamole from turning brown add the cores that you set aside back in the bowl and place on top of the guacamole.
  • For some reason this will keep it fresh for a longer period of time.

I'm told this is the guacamole from Chipotle's. I'm also told that Haas avocados are the key, but I really have no idea if that's a set in stone fact. I've never had Chipotle's guacamole, as there are none near me, but I have had this, and I sure do like it, no matter who came up with it.

1 large ripe Hass avocado, pitted and peeled
2 teaspoons fresh lime juice
2 tablespoons chopped fresh cilantro
1/4 cup finely chopped red onion
2 garlic cloves, finely minced
1 serrano chili, seeded and chopped
1/4 teaspoon salt

Steps:

  • Mash up avocado with a fork.
  • Add lime juice.
  • Add all other ingredients and blend well.
  • Serve with tortilla chips.

2 boneless skinless chicken breast halves (6 ounces each)
1/8 teaspoon salt
Dash pepper
1/4 cup chicken broth
3 tablespoons orange marmalade
1-1/2 teaspoons canola oil
1-1/2 teaspoons balsamic vinegar
1-1/2 teaspoons minced chipotle pepper in adobo sauce
1-1/2 teaspoons honey
1/2 teaspoon chili powder
1/8 teaspoon garlic powder
2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Sprinkle chicken with salt and pepper. Transfer to a 1-1/2-qt. slow cooker. In a small bowl, combine the broth, marmalade, oil, vinegar, chipotle pepper, honey, chili powder and garlic powder; pour over chicken. Cover and cook on low for 3-4 hours or until a thermometer reads 165°., Remove chicken to a serving platter and keep warm. Place cooking juices in a small saucepan; bring to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally; add broth or water if necessary.
