CHIPOTLE LIME CHICKEN DRUMETTES W/ AVACADO SAUCE



Chipotle Lime Chicken Drumettes w/ Avacado Sauce image

Number Of Ingredients 23

20 fresh chicken drumettes or wings
1/4 cup mayonnaise
CHIPOTLE SEASONING RUB
1 tablespoon brown sugar
2 teaspoons salt
1 1/2 teaspoons chili powder (can more if desired)
1/2 teaspoon black pepper
1/2 teaspoon Old Bay w/ Blackening seasoning (optional, but yum!)
2 teaspoons chipotle powder (add more if you like heat)
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
3/4 teaspoon paprika
1/2 teaspoon cumin
can also add a bit of dried cilantro if desired
Juice of 1 lime
Fresh cilantro (garnish)
AVOCADO SAUCE
1 avocado
5 Tablespoons sour cream
2 Tablespoons fresh cilantro (chopped)
3 cloves of garlic (minced)
Juice of 1 lime
salt and pepper (to taste)

Steps:

  • Brush wings with mayonnaise.
  • Mix together chipotle seasoning spices.
  • Sprinkle spice mixture generously over chicken. Use your hands to really work the spices into the chicken.
  • Cover and refrigerate for an hour.
  • Preheat oven to 450.
  • Arrange chicken on a foil-lined baking sheet brushed lightly with oil.
  • Bake for 20 minutes.
  • Drain off the juice.
  • Return chicken to oven and broil to crisp up the skin. Watch carefully, this only takes a few minutes.
  • Arrange chicken on a platter and garnish with fresh cut cilantro and the juice of 1 fresh lime.
  • Make the avocado sauce by pureeing avocado and sour cream. Add in cilantro, garlic and enough water to thin it out (if desire) Puree until smooth. Stir in lime juice. Add salt and pepper to taste.

1 ounce dried chipotle chile pepper
1 ounce dried ancho chile pepper
½ cup water
½ red onion, cut into small chunks
4 cloves garlic
2 teaspoons sea salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 ½ pounds skinless, boneless chicken thighs

Steps:

  • Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
  • Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
  • Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.
  • Preheat an outdoor grill with top and bottom plates for medium-high heat. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips.

6 tablespoons unsalted butter
1 cup honey
2 tablespoons distilled white vinegar
2 tablespoons Worcestershire sauce
1/2 cup chopped pecans
2 tablespoons ground ancho chile* (or chipotle powder)
2 teaspoons garlic powder
Salt and freshly ground black pepper
2 pounds chicken drumettes

Steps:

  • Preheat oven to 350 degrees F.
  • In a small saucepan, add the butter and melt over medium-low heat. Stir in the honey, and cook until the mixture bubbles, about 3 minutes. Remove from the heat, and stir in the vinegar, Worcestershire sauce, pecans, ground ancho and garlic powder. Season the marinade, to taste, with salt and pepper.
  • ** Arrange the drumettes on a baking sheet, and brush each with the marinade. Bake until the chicken is cooked through, about 25 minutes. Baste once, halfway through baking time. Transfer to a serving platter and serve hot.
  • *Cook's Note: The ancho chile is a dried poblano chile. It is also sold as "pasilla" in the US. It is a deep red color, and the flavor ranges from mild to pungent. The rich, slightly fruit flavored ancho is the sweetest of the dried chiles. Anchos are often sold whole and can be stemmed, seeded then ground at home in a coffee or spice grinder. They can also be found at most supermarkets, Latin specialty markets or online.
  • **Cook's Note: Cover your baking sheet with tin foil for easy clean up and to prevent marinade from burning in the oven.

2 (16 ounce) packages chicken wings or 2 (16 ounce) packages chicken drummettes
3/4 cup chili sauce
3 tablespoons brown sugar
2 tablespoons chopped chipotle chiles in adobo
1 teaspoon lime zest
2 garlic cloves, minced

Steps:

  • Heat of to 375°F Line 13x9 inch pan with fil. Arrange drummettes in a single layer on foil lined pan.
  • In small bowl, combine all remaining ingredients; mix well. Microwave on high for one minute or until sugar is dissolved, stirring once halfway through cooking. Pour sauce over drummettes to cover.
  • Bake at 375F for 30 minutes. Turn drummettes over, bake an additional 20 to 30 minues or until drummettes are glazed, fork tender and no longer pink next to the bone.
