Nonstick cooking spray, for spraying the baking sheet
1 cup pecans, roughly chopped
1/2 cup popcorn kernels, freshly popped
1 cup packed dark brown sugar
4 tablespoons (1/2 stick) unsalted butter
1/4 cup honey
1 teaspoon salt
1 teaspoon chipotle powder
1/4 teaspoon baking soda

Steps:

  • Preheat the oven to 250 degrees F. Generously spray a baking sheet with cooking spray.
  • Mix the chopped pecans and warm popcorn on the prepared baking sheet. Place in the oven while preparing the syrup.
  • Combine the brown sugar, butter and honey in a heavy medium saucepan. Whisk over medium-low heat until the sugar dissolves and the butter is completely melted. Increase the heat to high and boil for 4 minutes, stirring constantly. Remove from the heat, add the salt, chipotle powder and baking soda and mix to evenly incorporate. Slowly pour the syrup over the popcorn-pecan mixture. Stir gently to make sure the popcorn and nuts are completely coated.
  • Bake until the caramel is dry and has hardened, about 1 hour. Let cool before serving.

2 lb boneless, skinless chicken breast
2 cups buttermilk
7 oz chiles in adobo sauce, 1 can
2 cups panko breadcrumbs
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon pepper
1 teaspoon smoked paprika
oil, for frying
smoked paprika, to taste

Steps:

  • Cut chicken breast into bite-sized pieces and place them in a medium-sized bowl.
  • Pour buttermilk and can of chiles over the chicken, making sure to get all of the adobo sauce out of the can. Mix well to incorporate.
  • Cover and let marinate in the refrigerator for 2-4 hours.
  • In a separate bowl, mix together panko bread crumbs, chili powder, salt, pepper, and paprika.
  • Remove chicken from the refrigerator and dredge the pieces in the bread crumb mixture for an even coat.
  • Fry them in 350˚F (180˚C) oil until they are crispy and golden brown (about 2 minutes).
  • Drain on paper towels.
  • Garnish with an additional sprinkle of smoked paprika and serve.

3 1/2 quarts popcorn
1 cup (5 1/2 ounces) salted peanuts
Basic Caramel
6 tablespoons unsalted butter, cut into small pieces
3/4 tablespoon salt

Steps:

  • Put popcorn (popped from 1/2 cup kernels) and peanuts in a large buttered bowl; set aside. Follow recipe for basic caramel, reducing sugar to 1 1/4 cups (do not reduce water). Remove caramel from heat, and use a clean wooden spoon to gently stir in butter and salt (caramel will bubble); stir until smooth. Pour caramel over popcorn, stirring to coat. Stir mixture every few minutes until cool. Store in an airtight container up to 1 week.

1/4-1/2 teaspoon ground chipotle chili pepper, to taste (or chili powder)
1/4 teaspoon garlic salt
4 quarts popped popcorn
cooking spray (or butter or margarine)

Steps:

  • Stir together ranch salad dressing mix, chipotle pepper and garlic salt in a small bowl.
  • Lightly spray popcorn with cooking spray. If you wish you could drizzle the popcorn with melted butter or margarine.
  • Sprinkle 1 tablespoon of the seasoning mix over popcorn; toss and serve.
  • Store remaining seasoning mix in an airtight container for future use.
