Not too hot, but with a bit of a kick, this salsa is a perfect topping for grilled fish or chicken. It's also a delectable chip dip-just double the recipe and watch it disappear. 2 cups chopped fresh strawberries
2 cups fresh blackberries, halved
2 medium kiwifruit, peeled and chopped
2 tablespoons orange marmalade spreadable fruit
2 tablespoons lime juice
1 tablespoon minced chipotle pepper in adobo sauce
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
Cinnamon sugar pita chips

Steps:

  • In a large bowl, combine the first 8 ingredients. Cover and refrigerate until serving. Serve with pita chips.

Number Of Ingredients 10

Two 15-ounce cans diced tomatoes
One 10- or 15-ounce can diced tomatoes with green chiles
1/4 cup fresh lime juice
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper
1 to 3 (depending on your heat tolerance) chipotle peppers in adobo (see Cook's Note)
1 bunch fresh cilantro, stems roughly removed
1 medium onion, diced

Steps:

  • Add the diced tomatoes, diced tomatoes with green chiles, lime juice, cumin, salt, sugar, black pepper, chipotle peppers, cilantro and onions to a food processor and blend until totally combined. Give it a taste to check for seasoning.
  • Make the salsa several hours before serving, as it will give the flavors a chance to dance! Keeps in the fridge, covered, for about a week.

1 package (16 ounces) mixed frozen berries, thawed and chopped
2 medium peaches, diced
2 medium kiwifruit, peeled and diced
3 tablespoons sugar
2 tablespoons lemon juice
1-1/2 teaspoons grated lime zest
CINNAMON TORTILLA CHIPS:
8 flour tortillas (7 inches)
3 tablespoons butter, melted
3 tablespoons sugar
1-1/2 teaspoons ground cinnamon

Steps:

  • In a large bowl, combine the first six ingredients; set aside. Brush both sides of tortillas with butter. Combine the sugar and cinnamon; sprinkle over both sides of tortilla. Cut each into six wedges., Place on ungreased baking sheets. Bake at 400° for 6-8 minutes on each side or until crisp. Drain salsa; serve with tortilla chips.
