CHINESE PORK MARINADE

Another from my son's kung fu instructor and my friend from from Hong Kong. He loves grilled pork and lamb.

Number Of Ingredients 8

5 lbs pork steaks (I use 3/4-inch thick sliced loin) or 5 lbs pork loin (I use 3/4-inch thick sliced loin)
1/3 cup hoisin sauce
3 tablespoons minced garlic
3 tablespoons oyster sauce
1/2 teaspoon white pepper
1 tablespoon salt
1 tablespoon rice wine
1 1/2 teaspoons five-spice powder

Steps:

  • Combine all ingredients, except pork, in a bowl and mix well.
  • Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
  • Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
  • Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
  • They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
  • Pork filled bags may be frozen with marinade and thawed to cook later.
  • **Note - Marinating time is not included in my "time to Make".

If you like Asian flavors, this is a great marinade for chicken or pork. This marinade recipe makes enough for 2lb of meat. Marinate red meat or poultry for 2 hours at room temp or 24-48 hours in the fridge.

1 in piece fresh ginger, peeled
4 tablespoons dark soy sauce
2 tablespoons white wine vinegar
1 tablespoon dry sherry or 1 tablespoon rice wine
1 pinch superfine sugar
4 garlic cloves, very finely chopped
2 tablespoons clear honey
1 teaspoon five-spice powder

Steps:

  • Finely grate the ginger, collect it up into a ball and squeeze out the juice into a bowl.
  • Stir in the other ingredients and use as required.

My mom is Chinese, and often catered for special events. Everyone always asked for the recipe for the sauce that she marinated her meats in. It is savory and delicious, and I've never tasted anything like it anywhere else! Whether you're baking, grilling, or pan-frying your meats, this can't be beat! I make several jars of this stuff at Christmas to give away as gifts. Everyone loves it! You can use this sauce either as a marinade or in stir-fry.

1 cup oyster sauce (I prefer the Lee Kum Chee brand. You can buy it at oriental markets in bulk)
1 cup dark soy sauce
1/4 cup sesame oil
1/4 cup cooking sherry
1/4 cup teriyaki sauce
1/4 cup pancake syrup (though this might seem bizarre, it's the most important ingredient. It caramelizes as it cooks, seal)
3 tablespoons of minced garlic (less if you're not a huge garlic fan)

Steps:

  • Mix all ingredients and store in a large jar or Tupperware container. Store in refrigerator for up to three months. Mix well before using. Use on pork, chicken, beef, or as a stir-fry sauce.
  • When I use it on chicken, I add a little orange juice. For beef, I add a little Worcestershire sauce. For pork, I add a little brown sugar.
  • For best results, marinate your meats in the sauce overnight in a large zip-lock bag.

CHINESE FIVE SPICE MARINADE FOR CHICKEN OR PORK

A tasty Asian marinade. Enough for 6 bone-in chicken thighs or pork chops.

1/4 c dry sherry
1/4 c dried onion flakes
1/2 tsp powdered ginger
2 tsp chinese five spice powder
2 Tbsp sriracha sauce
1 tsp sesame oil
1 Tbsp vegetable oil

Steps:

  • 1. Combine all ingredients in a bowl with a whisk.
  • 2. Place chicken pieces or pork in a ziper-type plastic bag and pour marinade over. Seal bag and refrigerate 2-8 hours.
  • 3. Remove meat and cook by your favorite method. Marinade can be reserved for basting, if desired.

1 tablespoon dry sherry
1 tablespoon dark brown sugar
1 whole star anise
1 cinnamon stick
1 large beef steak, thinly sliced
1 tablespoon oil

Steps:

  • Place all of the marinade ingredients in a bowl and mix well. Add the steak and mix to cover with the marinade. Leave to marinade for an hour.
  • Heat the oil in a hot wok. Add the beef and the marinade and fry for 3-4 minutes until the meat is browned. Drain off any excess liquid from the beef that may arise from the cooking process.
  • Add any vegetables you might wish to create a stir fry.

1 (10 ounce) package silken tofu, chilled
2 1/2 tablespoons light soy sauce
2 tablespoons cilantro roots, and stems finely sliced
2 tablespoons fresh ginger, finely diced
2 tablespoons scallions, finely sliced
2 tablespoons ketjap manis
2 tablespoons malt vinegar
1/4 teaspoon chili oil
1 dash sesame oil
sichuan salt & pepper

Steps:

  • Invert tofu into a shallow bowl. Slice widthways into 8 slices.
  • Mix all other ingredients well and pour over tofu.
  • Sprinkle with sichuan pepper and salt and serve immediately.

SPICY CHINESE MARINADE

This marinade works great with most meats, especially pork tenderloin, see recipe 90325. It goes well with beef short ribs, pork, or even chicken. Red pepper flakes control how spicy you would like it to be. Cook the meat on your outdoor grill, or regular oven to recommended temperatures. Cooking time depends, on the meat you choose.

1/3 cup soy sauce
1/3 cup hoisin sauce
2 tablespoons vegetable oil
3 tablespoons sugar
3 cloves crushed garlic
1 dash red pepper flakes, to taste
2 -3 lbs meat, of your choice
1/2 cup water
1/4 cup butter
6 chopped green onions (optional)

Steps:

  • In heavy duty freezer bag, mix soy sauce, hoisin sauce, oil, garlic, sugar and red pepper flakes.
  • Add meat and stir stir to coat all over.
  • Seal and refrigerate for at least 1 to 3 hours, turning bag over occasionally.
  • Remove meat, reserving marinade, and cook meat until desired doneness.
  • Meanwhile pour marinade from bag into saucepan.
  • Rinse bag with the 1/2 cup of water.
  • Add water to saucepan.
  • Bring to a low boil.
  • Boil slowly for 5 to 6 minutes.
  • Right before meat is ready to serve, add butter to saucepan.
  • Heat through.
  • Slice meat thinly, and pour sauce over meat.
  • Top with green onions.
  • Serve over rice or noodles.

SAVOURY CHINESE TURKEY MEAT MARINADE

1/2 cup soy sauce
1/4 cup water
3 tablespoons oil
3 cloves garlic, crushed (powder works too)
1/2 teaspoon black pepper
1 teaspoon salt
2 teaspoons sugar
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1 teaspoon ground ginger or 1 teaspoon anise

Steps:

  • Mix everything together.
  • Makes 1 cup; should have 1 cup for each 2-3 lbs of turkey.
  • Marinade between 4 and 24 hours depending on thickness of turkey.
  • For a turkey I do overnight and at least 24 hours.
  • I baste often and will inject marinade under the skin and into the meat with my baster.
  • This is a BBQ recipe using either a BBQ rotisserie or just treating the BBQ like an oven.
  • I always baste during the grilling process.
  • Just cook till the turkey registers done with a thermometer.
  • Cook at least 20 minutes per lb.
