CHINESE EGGPLANT IN GARLIC SAUCE

Eggplant is the star of vegetarian entrée. The aromatic sauce is flavored heavily with garlic and has just the right amount of Chinese five spice and chili oil.

water
2 teaspoons cornstarch
2 tablespoons low sodium soy sauce
2 tablespoons light brown sugar
1 tablespoon hoisin sauce
1 teaspoon rice vinegar
1/2 teaspoon Chinese five spice powder
1/2 teaspoon garlic powder
1/2 teaspoon red pepper flakes
2 lbs Chinese eggplants, about 5
vegetable oil
salt
pepper
6 garlic cloves, chopped
3 scallions, thinly sliced, plus more for garnish
1 1/2 tablespoons chili oil

Steps:

  • Add 3/4 cup of water and the cornstarch to a medium bowl. Whisk to combine. Add the soy sauce, brown sugar, hoisin, vinegar, Chinese five spice, garlic powder and red pepper flakes. Whisk to combine and set aside.
  • To prepare the eggplant, slice the ends off of an eggplant. Slice into thirds horizontally, so you have 3 cylinders. Slice each cylinder lengthwise into quarters, so you have sticks. Repeat with remaining eggplants.
  • Heat about 2 tablespoons of oil in a large nonstick skillet over medium high heat. Add half of the eggplant, season with salt and pepper, and cook until charred and softened, about 7 - 10 minutes. Transfer to a bowl and repeat with remaining half.
  • Deglaze the pan with 2 tablespoons of water, scraping up the brown bits on the bottom of the skillet. Pour into the bowl with the eggplant.
  • Lower the heat to medium and add about a teaspoon of oil to the skillet. Add the garlic and scallions and sauté for 30 - 60 seconds.
  • Give the sauce mixture a good whisk and pour into the skillet. Let simmer until thickened, about 1 - 2 minutes.
  • Add the eggplant and chili oil to the skillet. Season with salt. Stir to combine and let cook for 5 - 7 minutes so the eggplant can absorb all the flavors.
  • Garnish with sliced scallions.

The oil is used mainly for carrying the chili and garlic flavors, and you can easily reduce it if you're counting calories.

3 garlic cloves, chopped
1/2-1 teaspoon red pepper flakes
1/3 cup honey
2 teaspoons soy sauce
2 teaspoons rice vinegar
1/4-1/2 cup water
2 teaspoons cornstarch

Steps:

  • In a small bowl, stir together the honey, soy sauce, rice vinegar, 1/4 cup water, and cornstarch.
  • Put the oil in a medium saucepan over medium heat. Let it warm up for about 30 seconds, then add the garlic and cook until fragrant and just starting to color, 15-30 seconds.
  • Add the red pepper flakes and cook until fragrant and the garlic is lightly browned, 15-30 seconds more.
  • Quickly re-stir the honey mixture and pour it into the saucepan. Bring to a simmer, stirring frequently, reduce the heat to low, and simmer for about 5 minutes. Add more water if needed to achieve desired consistency.

2 tablespoons peanut oil
3/4 cup (4 ounces) sliced Double-Blanched Garlic, recipe follows
2 tablespoons sugar
1 cup rice wine
1/4 cup rice wine vinegar
2 tablespoons plus 1 teaspoon dark soy sauce
4 ounces carrots, peeled, trimmed, and cut into julienne (about 1 cup)
4 ounces haricots verts, trimmed, blanched, and refreshed (about 1 cup)
4 ounces green onions, trimmed and cut into strips (about 1 cup)
2 teaspoons Vietnamese chile sauce
12 ounces fresh Chinese egg noodles or thin spaghetti
1 pound large shrimp, cleaned and tails removed, or, 1 pound calamari, cleaned and cut into 1/4-inch rings
Kosher salt and freshly ground black pepper
About 1/2 cup flour
1/4 teaspoon sesame oil
3 heads garlic
Kosher salt

Steps:

  • Bring a large stockpot of water to a boil. In a wok or deep, heavy saucepan, heat about 3 inches of peanut oil. (The oil must be very hot, about 375 degrees F.)
  • Make the sauce: In a large skillet or saute pan, heat the 2 tablespoons of peanut oil. Over medium-high heat, saute the garlic just until golden, 2 to 3 minutes. Stir in the sugar and continue to saute until the garlic begins to caramelize, 1 or 2 minutes longer. Deglaze the pan with the rice wine, rice wine vinegar, and soy sauce. Add the carrots, haricots verts, and 2 ounces of the green onion, reserving 1 ounce as garnish. Stir in the chili sauce and continue to cook until the sauce is reduced by half.
  • Meanwhile, add salt to the boiling water and cook the noodles until they are al dente. Drain the noodles well and stir them into the sauce until they are well coated.
  • Season the shrimp or calamari with salt and pepper and toss with the flour to coat lightly. Deep-fry the shrimp or calamari in small batches until golden, 1 or 2 minutes. (The easiest way to do this is to use a fine-mesh basket or strainer. Place the shrimp or calamari in the basket and gently ease the basket into the oil.) Drain on clean paper towels.
  • To serve, divide the noodles and vegetables among 4 large warm plates. Arrange the shrimp or calamari over and around each portion and garnish with the remaining green onions. Drizzle a little sesame oil over the noodles and serve immediately.
  • Prepare an ice bath. Separate the garlic into cloves and remove the ends of each clove. Fill a small saucepan with water. Salt lightly and bring to a boil. Carefully drop the whole cloves into the water and blanch for 30 seconds. Remove with a slotted spoon and immediately plunge into the ice water to stop the cooking process. Repeat the process. Drain the garlic and dry it well. The peels should slip off easily. Cut the garlic into slices and use as needed.

1 1/2 teaspoons rice vinegar (not seasoned)
1 1/4 teaspoons sugar
1 teaspoon Asian chili oil, or
1 teaspoon Asian sesame oil
plus Tabasco to taste
Garnish: 3 tablespoons chopped coriander sprigs
Accompaniment if desired:sesame orzo with charred scallions

Steps:

  • Poach chicken: In a 1 1/2-quart saucepan bring water to a boil with gingerroot, Scotch, and salt to taste. Add chicken and simmer, covered, 12 minutes, or until just cooked through. Transfer chicken with tongs to a bowl and chill, covered, 20 minutes.
  • Make sauce while chicken is cooling: In a bowl stir together sauce ingredients until sugar is dissolved.
  • Halve chicken and cut across grain into thin slices. Spoon sauce over chicken and sprinkle with coriander.

1 1/2 pounds Chinese or Japanese eggplant, cut diagonally in 1/2-inch slices
1 teaspoon sesame oil
1 tablespoon canola or peanut oil
3 cloves garlic, minced
2 teaspoons minced fresh ginger
3 scallions, thinly sliced
1 to 3 jalapeno or serrano chilies, minced
For the sauce:
3 tablespoons soy sauce
2 tablespoons rice wine
2 tablespoons rice vinegar
1 tablespoon honey or sugar
1 tablespoon cornstarch

Steps:

  • Procedure 1. In a small bowl, stir together the soy sauce, rice wine, rice vinegar, honey, and cornstarch. Set aside. 2. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals out evenly. Bush the eggplant slices with the sesame oil and grill over medium heat until they have softened and the purple color is gone, turning half-way through. Remove to a plate. 3. Remove the cooking grate and place your wok directly on top of the coals. Swirl in the canola or peanut oil. If the wok is hot enough, the oil should move quickly around the wok. 1 egg white
1/4 c. cornstarch

2 c. oil
Garlic Sauce:
1/4 c. chicken broth
1/8 c. apple cider vinegar
1/8 c. ketchup
3 Tbs. soy sauce
2 Tbs. dry sherry
4 garlic cloves, crushed & minced
2 Tbs. ginger, minced
3 Tbs. sugar
1 tsp. chili paste
Stir Fry:
1 Tbs. oil
1 Tbs. cornstarch
3 Tbs. water
1/2 c. scallions, sliced

Steps:

  • 1. Slice shrimp from back leaving small donut-like hole in center. Rinse away veins, drain 2. Place shrimp in a bowl; add egg white, cornstarch and water. Mix well; consistency should be silky and milky 3. In large wok, heat 2 cups of oil. Place shrimp in oil, bubbles should rise from shrimp like champagne bubbles. Turn shrimp gently. When white and fluffy, remove from oil and drain 4. In a clean wok, heat 1 Tbs. oil. Mix Garlic Sauce ingredients. Stir well, bring to a boil, lower heat and simmer 5. Combine cornstarch and water, add to sauce. Stir until thickened. 6. Add shrimp. Toss and stir. Stir in sliced scallions and serve with rice
