4 (6 ounce) swordfish fillets
Olive oil
Salt and pepper, to taste
Pineapple Mustard Glaze, recipe follows
Cilantro Chimichurri, recipe follows
Grilled Pineapple Salsa, recipe follows
Pickled Green Chiles, recipe follows
3 cups pineapple juice
1 cup white wine vinegar
2 tablespoons soy sauce
1 tablespoons peeled and finely chopped ginger root
1/2 cup light brown sugar, firmly packed
3 tablespoons Dijon mustard
3 tablespoons fresh lime juice
Salt and freshly ground white pepper
3/4 cup finely chopped cilantro
3 cloves garlic, finely chopped
1/4 cup olive oil
Salt and freshly ground pepper
1 small pineapple, peeled, cored and sliced into 1/2-inch thick slices
4 scallions, white and pale green part, thinly sliced
2 pickled serranos, thinly sliced
2 pickled jalapenos, thinly sliced
3 tablespoons fresh lime juice
3 tablespoons rice wine vinegar
3 tablespoons olive oil Salt and freshly ground pepper
2 cups red wine vinegar
2 tablespoons kosher
2 tablespoons sugar
6 whole serrano chiles, washed well and dried
6 jalapeno chiles, washed well and dried

Steps:

  • Heat the grill to medium-high. Brush fish with olive oil and season with salt and pepper on both sides. Grill on one side until lightly golden brown, about 2 minutes, brush with some of the Pineapple Mustard Glaze. Flip over, brush with more of the Pineapple Mustard Glaze and continue grilling for 4 to 5 minutes, for medium doneness. Remove from the grill, brush with more of the Pineapple Mustard Glaze, place a tablespoon of the Cilantro Chimichurri on top of the fish, and serve Grilled Pineapple Salsa and Pickled Green Chiles alongside or on top.
  • Combine the pineapple juice, vinegar, soy sauce, ginger, and brown sugar in a medium saucepan and bring to a boil. Reduce the heat to low and simmer until the volume is reduced by half, about 30 minutes. Add the mustard and cook an additional 2 minutes. Remove from the heat and add the lime juice, and white pepper. Let cool.
  • Combine all ingredients in a small bowl and season with salt and pepper.
  • Grill the pineapple on both sides until lightly golden brown. Remove from the grill and cut into 1/4-inch dice. Combine in a bowl with the remaining ingredients and season with salt and pepper, to taste.
  • Place vinegar, salt and sugar in a small saucepan and bring to a boil. Continue boiling until the sugar and salt are completely dissolved. Place the chiles in a glass jar or nonreactive bowl and pour the hot vinegar mixture over.

Corn Fritters with Herb Salsa and Fresh Cheese: Arepitas with Chimichurri and Queso Fresco image

1 Spanish onion
1/3 cup olive oil
1/3 cup freshly squeezed lime juice
1 bunch fresh flat-leaf parsley
1 bunch fresh cilantro leaves
3 sprigs fresh oregano, leaves picked
2 large cloves garlic
1 jalapeno, stemmed and chopped
Kosher salt and freshly ground black pepper
2 cups harina pan (precooked white corn flour), or cornmeal
1/2 cup grated Parmesan
1 teaspoon fine salt
2 cups lukewarm water
1/2 cup milk
3 tablespoons vegetable oil, plus more for frying
1/2 pound queso fresco, crumbled

Steps:

  • Make the chimichurri: In a food processor, pulse the onion until finely chopped but not pureed. Transfer the onion to a bowl. Add the olive oil, lime juice, parsley, cilantro, oregano leaves, garlic, and jalapeno and pulse until finely chopped. Transfer the herb mixture to the bowl with the onion and stir to combine. Season the chimichurri with salt and pepper.
  • Make the arepitas: In a large bowl, whisk together the harina pan, Parmesan, and salt. In another large bowl, whisk together the water, milk, and 3 tablespoons oil. Stir the milk mixture into the flour mixture. Using your hand, knead the mixture until a firm but malleable dough is formed. Cover the bowl with a kitchen towel and let the dough rest for 10 minutes.
  • Meanwhile, pour the oil for frying into a large pot to a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer inserted in the oil registers 365 degrees F.
  • Form the dough into 1 to 1 1/2-inch round balls. Using the palms of your hands, form the dough balls into rounded "UFO" shapes.
  • Working in batches, add the dough balls to the oil and fry, turning occasionally, until puffed and golden brown. Using a slotted spoon, transfer the arepitas to paper towel-lined plate and season with salt.
  • Serve the arepas in a bowl with the chimichurri and queso fresco in separate bowls on the side.

1 bistec/pieza de falda de res (flank steak) (2 libras)
2 tazas de ramitas de perejil fresco, bien picadas
1/2 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing
1 diente de ajo, bien picado
1 cucharadita de hojas secas de orégano
1 hoja de laurel

Steps:

  • Vierte la salsa para bistec en una bolsa de plástico resellable. Agrega la carne; sella la bolsa. Dale vuelta a la bolsa varias veces hasta cubrir el bistec de forma pareja con la salsa. Ponla a marinar en la nevera durante 30 minutos, o más si lo deseas. Mezcla el perejil, el aderezo, el ajo, el orégano y la hoja de laurel en un recipiente pequeño. Tapado, enfría el bistec en la nevera hasta el momento de servir.
  • Precalienta la parrilla engrasada a fuego medio-alto. Retira el bistec de la marinada y descártala. Haz cortes poco profundos en los bordes del bistec cada 2 pulgadas. Coloca el bistec en la parrilla.
  • Asa el bistec durante 15 minutos; dale la vuelta. Continúa asándolo de 10 a 15 minutos o hasta que la carne esté cocida. Corta la carne a través de la fibra en tajadas diagonales. Sírvela con la salsa de chimichurri.

1 taza de marinada de ajo y finas hierbas A.1. Garlic & Herb Marinade
1 bistec (2 lb) de falda de res (flank steak)
2 tazas de ramitas de perejil fresco
1/3 taza de aceite de oliva
2 cucharadas de vinagre de vino tinto HEINZ Red Wine Vinegar
1 hoja de laurel
1 cucharadita de hojas secas de orégano

Steps:

  • Vierte la marinada sobre la carne en un plato llano; voltéala para cubrirla con marinada por ambos lados. Refrigérala 30 min. para marinarla. Entretanto, licúa los ingredientes restantes hasta que quede una mezcla homogénea. Viértela en un tazón y refrigérala hasta el momento de servir.
  • Calienta el asador del horno (broiler). Saca la carne de la marinada; desecha esta última. Pon la carne en una asadera sobre su rejilla, rociada con aceite en aerosol.
  • Asa la carne a 4 pulgs. del fuego durante 10 min. o hasta que esté cocida a punto medio, volteándola después de 5 min. Corta el bistec en rebanadas diagonales finas, en sentido contrario a su fibra. Sírvelo con la mezcla de perejil.

Beef and Sausage Kebabs With Salsa and Chimichurri image

1 tablespoon extra-virgin olive oil, plus more for brushing
1 teaspoon red wine vinegar
1 tablespoon hot paprika
1/4 teaspoon ground cumin
1/4 teaspoon packed brown sugar
2 cloves garlic, minced

1 1/2 pounds beef tri-tip
1 pound fresh sausage links
1 large tomato, finely chopped
1 green bell pepper, finely chopped
1/4 cup finely chopped onion
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh cilantro
1 tablespoon red wine vinegar
Kosher salt and freshly ground pepper
1 cup fresh parsley
1 cup fresh cilantro
3/4 cup extra-virgin olive oil
2 cloves garlic
2 to 3 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper

Steps:

  • Prepare the kebabs: Whisk the olive oil, vinegar, paprika, cumin, brown sugar, garlic and 1 teaspoon salt in a large bowl. Cut the beef into 1 1/2-inch pieces, add to the bowl and toss with the marinade. Cover and refrigerate at least 2 hours.
  • Meanwhile, make the salsa: Mix the tomato, bell pepper, onion, olive oil, cilantro, vinegar, 3/4 teaspoon salt, and pepper to taste in a bowl. Make the chimichurri: Puree the parsley, cilantro, olive oil, garlic, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a blender. Transfer to a bowl. Cover and refrigerate the salsa and chimichurri until serving.
  • Preheat a grill to high. Thread the beef and sausage onto skewers (keep the meats separate), leaving a bit of space between each piece. Brush the kebabs with olive oil.
  • Brush the grill with olive oil. Grill the kebabs, turning, until charred and cooked through, 6 to 10 minutes for the beef and 10 to 12 minutes for the sausage. Transfer to a platter and let rest 5 minutes. Season with salt and serve with the salsa and chimichurri.

Steps:

  • In a small bowl, stir together all ingredients. May be refrigerated several days, but tastes best freshly made.
