SLICED CHILI RUBBED FLANK STEAK ON SPICY RICE WITH SHRIMP AND GUACAMOLE STACKS



Sliced Chili Rubbed Flank Steak on Spicy Rice with Shrimp and Guacamole Stacks image

Number Of Ingredients 22

2 to 2 1/4 pounds flank steak
1 1/2 tablespoons grill seasoning, a palm full and a half
1 tablespoons dark Mexican chili powder, a palm full
1 lime, zested
Cooking spray or oil to coat grill or grill pan
2 tablespoons butter
1 cup white rice
1 small onion, chopped
1/2 red bell pepper, chopped
1 jalapeno pepper, seeded and chopped
2 cloves garlic, chopped
2 cups chicken stock
2 tablespoons tomato paste
2 teaspoons hot sauce, eyeball it
1 pound small to medium shrimp, peeled and deveined
2 tablespoons finely chopped cilantro leaves or flat-leaf parsley
Salt
2 ripe beefsteak tomatoes, sliced
2 Hass avocados, halved, scooped from skin and sliced
1/2 lemon
1 small red onion, thinly sliced
1/2 cup crumbled queso Asadero

Steps:

  • Preheat outdoor grill or indoor grill pan to high. Rub the meat with a mixture of grill seasoning, chili powder and the lime zest. Let meat stand 10 minutes. Grease grill surface then add meat and cook 7 to 8 minutes on the first side, 5 to 6 minutes on the flip side for medium doneness.
  • For the rice, heat a medium sauce pot over medium heat. Add butter, and when melted add rice and toast for a couple of minutes. Add the onion, bell pepper, jalapeno and garlic and cook for a few minutes to begin to soften the veggies. Add stock and raise heat to bring up to a bubble. Stir in the tomato paste and hot sauce. Reduce heat to simmer, cover the pot and cook 18 minutes, until rice is tender. Add shrimp to the pot in the last 5 minutes of cooking. The shrimp will steam on top of the rice. Cook the shrimp until pink and firm. Combine the seafood and cilantro into the rice and season with salt, to taste.
  • Season sliced tomatoes with salt and dress the avocado with lemon juice. Make 4 stacks alternating the tomatoes with avocado and onions.
  • Slice the steaks and serve on a bed of shrimp rice, the guacamole stacks alongside. Garnish the guacamole stacks with cheese crumbles.

1 (16 ounce) bag corn chips (Fritos)
1 (32 ounce) jar bush's chili (beans or no beans it's you choice)
8 ounces shredded lettuce
12 ounces shredded cheese (your favorite)
1 chopped tomato
1 chopped onion
1 (8 ounce) container sour cream

Steps:

  • Heat the Chili till hot.
  • place a handful of Frito's in bowl, cover with Chili about two tablespoons, small handful of cheese, lettuce, tomatoe, and onion, add a spoonful of sour cream.
  • serve and enjoy.

The original recipe came to me a couple years ago and we tried it and enjoyed it. But .. as is normal for us .. we had to tweak it a bit and this is what we came up with. It's cheap, easy, convenient, quick and very filling ! We hope you enjoy this pantry recipe :)

1 can(s) 16 oz can chili without beans or 2 cups home made chili
1 can(s) 16 oz can kidney beans - rinsed and drained
1 can(s) 8 oz tomato sauce
1 cup(s) shredded cheddar cheese
1 cup(s) shredded monterey jack cheese
1 cup(s) crumbled nacho cheese tortilla chips
6 flour tortillas - medium or large
sliced black olives for garnish
snipped chives for garnish
sour cream for garnish
*** hot sauce if desired

Steps:

  • In large bowl combine the chili, beans and tomato sauce. *** if you enjoy hot and spicy use that sort of chili or add some hot sauce to ramp it up to your liking. Lightly spray a baking dish. I used a 2 qt round with a lid but you could use and 8x8 square if desired.
  • Spread a small amount of the bean mixture on the bottom of the baking dish. Lay a tortilla over top of the beans smear. I use the medium size tortillas because they fit perfectly in my baking dish. You can use the larger ones if desired and even cut them to fit if you are using a square baking dish. Top that tortilla with a scoop of the beans then a sprinkle of each of the cheeses and a small amount of tortilla chip crumbs. Repeat until all tortillas have been used and end with cheese on top.
  • Place completed casserole in refrigerator for about 4 hours to blend flavors.
  • Remove casserole from refrigerator and allow to sit out for about 25 minutes before baking. Preheat oven to 350. Place covered casserole in preheated oven and bake for 25 minutes Remove lid and bake for another 15 minutes or until casserole is bubbly and cheese is melted. Remove from oven and allow it to set for 5 minutes before cutting.
  • Serve hot garnished with sour cream, snipped chives, sliced black olives and some additional tortilla chip crumbs if desired.
  • On a side note .. we have done this with cut up hot dogs in it .. kind of like a chili dog ! Use your imagination and add whatever fun things appeal to you.

3/4 cup yellow cornmeal
2/3 cup Original Bisquick™ mix
3/4 cup buttermilk
2 tablespoons butter or margarine, melted
1/2 teaspoon chili powder
1 egg
1 can (15 oz) spicy chili
1 can (14.5 oz) diced tomatoes with mild green chilies, undrained
4 slices (3/4 oz each) process American cheese, cut diagonally in half, if desired

Steps:

  • Heat oven to 450°F. Spray 8-inch square pan with with cooking spray. In medium bowl, stir cornmeal, Bisquick mix, buttermilk, butter, chili powder and egg until mixed. Pour into pan.
  • Bake uncovered 18 to 20 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in 2-quart saucepan, heat chili and tomatoes over medium heat, stirring occasionally, until bubbly.
  • Cut corn bread into 4 squares; cut each square diagonally into 2 triangles. Split each corn bread triangle horizontally. Fill triangles with 1/4 cup chili mixture and cheese piece. Spoon about 1/4 cup chili mixture on top.
