2 cans (4 ounces each) chopped green chilies
1/2 teaspoon salt
3/4 pound Monterey Jack cheese, cut into 1/2-inch cubes
2 cups sour cream

Steps:

  • In a large bowl, combine all ingredients. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes or until heated through.

3 cups white rice, cooked
1 cup cheddar cheese, shredded
1/2 cup onion, chopped
1 (19 ounce) can chili
3/4 cup Fritos corn chips, crushed

Steps:

  • Preheat oven to 375 degrees.
  • In a saucepan, heat chili until warm.
  • Spray a 9x13 casserole dish with non-stick spray and spread rice in even layer on the bottom of the dish.
  • Top rice with 1/2 cup cheese, 1/4 cup onion and then chili.
  • Top that with remaining 1/2 cup cheese, 1/4 cup onion, and crushed fritos.
  • Bake 25-30 minutes, or until cheese is melted.

1 cup uncooked rice (to be cooked first, separately)
1/4 cup melted butter
1 pint sour cream
1/8 cup milk
1 lb grated monterey jack cheese
1 (8 ounce) can diced green chilies
salt
1/2 cup grated cheddar cheese

Steps:

  • Cook rice first, as per directions on the package, usually two parts water, one part rice bring to a boil, reduce heat until water is gone.
  • Preheat oven to 350°F.
  • Add Butter, Sour Cream, Milk, Jack Cheese, Chilies, and Salt to cooked rice.
  • Mix well.
  • Put in a casserole dish, sprinkle top with Cheddar cheese, and cook until center is hot.

1 medium onion, chopped
1 cup shredded rotisserie chicken
1 (15.25 ounce) can Mexican-style corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can chili-seasoned diced tomatoes
1 cup instant brown rice, uncooked
1 (4 ounce) can diced green chiles
1 tablespoon ground cumin
1 teaspoon garlic powder
salt and ground black pepper to taste
1 cup salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a large skillet over medium heat. Add onion and cook and stir until tender, 5 to 7 minutes. Add shredded chicken and cook until heated through, 3 to 5 minutes.
  • Pour chicken mixture into a casserole dish. Add corn, beans, tomatoes, rice, chiles, cumin, garlic powder, salt and pepper. Mix all ingredients together in the pan and spread to cover the dish. Spread salsa evenly over the top.
  • Bake in the preheated oven until bubbly, about 45 minutes. Serve in bowls.

1 cup chopped celery
1/2 cup chopped onion
1 small green pepper, chopped
1 garlic clove, minced
2 cups cooked rice
1 can (15-ounce) chili con carne with beans
2/3 cup mayonnaise
Few drops hot pepper sauce
1/2 teaspoon salt
1 can (14-1/2-ounce) Mexican-style stewed tomatoes
1 to 2 cups shredded cheddar cheese
4 cups corn chips

Steps:

  • In a skillet, cook ground beef, celery, onion, green pepper and garlic until meat is browned and vegetables are tender; drain. Stir in rice, chili, mayonnaise, hot pepper sauce, salt and tomatoes. Pour mixture into a 2-1/2-qt. casserole. Bake at 350° for 35-45 minutes or until heated through. Top with cheese and corn chips. 2 (15 ounce) cans tomato sauce (such as Hunt's®)
2 (10 ounce) boxes frozen whole-kernel corn
1 cup water
½ cup chopped onion
2 tablespoons chili powder
1 teaspoon dry mustard
2 cups instant white rice (such as Minute®)
¼ cup shredded extra-sharp Cheddar cheese

Steps:

  • Cook and stir ground beef in a nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Combine cooked beef, tomato sauce, corn, water, onion, chili powder, and dry mustard in a large saucepan over medium-high heat. Cover and bring to a boil.

1 (6-ounce) box instant long grain and wild rice mix
1 cup sour cream
1 (4-ounce) can chopped mild green chili drained
1 cup grated Cheddar cheese
1 cup grated Monterey Jack cheese

Steps:

  • Prepare rice according to package directions. Preheat oven to 350 degrees. In a bowl, mix together sour cream and green chiles. Spread half the cooked rice over bottom of a greased 8 x 8-inch pan. Spoon half the sour cream mixture over rice. Sprinkle half of each cheese over top. Spoon remaining rice over cheese. Spread remaining sour cream mixture over rice, then sprinkle remaining cheese over top. Bake, uncovered, 15-20 minutes, or until bubbly.Makes 4-6 servings.

This recipe has been in my box for years. I don't remember where it came from but I make it often.

2 c cooked rice
2 c sour cream
1/2 lb shredded jack cheese
7 oz diced green chilies
3 Tbsp butter
1/4 c grated parmesan cheese
salt to taste
cooked chicken (optional)

Steps:

  • 1. Mix cooked rice with sour cream and salt. Spread 1/2 of the mixture in a 1.5 qt casserole dish.
  • 2. Sprinkle with jack cheese and chilies. Top with remaining rice mixture. Dot with butter and sprinkle with parmesean cheese. Bake at 350 for 30 minutes.
  • 3. Optional: You can add cooked chicken in the middle layer if you are making a main course.
