I started with a copycat recipe, added more of my favorite (garlic salt) ingredient, and then made this for my son, as well as for my co-worker, who had just had a baby. Everyone's comment: "Wow! That was really tender, tasty chicken!" (I didn't tell them how incredibly easy it was!) I served it with my Mexican rice (another favorite)and black beans.

4 boneless skinless chicken breasts
1 cup margarita mix
1/4 cup tequila
1 tablespoon minced garlic
garlic salt, to taste
pepper, to taste
1 cup white rice
2 cups chicken broth
1/4 cup salsa
cumin, to taste
garlic salt, to taste
1 tablespoon vegetable oil

Steps:

  • Marinate chicken in margarita mix, tequila, and garlic in refrigerator for several hours, or overnight. (I soaked it overnight, and it was really flavorful.).
  • Remove chicken from marinade, and sprinkle with garlic salt and pepper.
  • Preheat George Foreman or gas grill. Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Serve with Mexican rice and black beans.
  • Mexican Rice:.
  • Cook rice in 1 tablespoon oil, until lightly browned.
  • Add chicken broth, salsa, cumin, and garlic salt; cover pan and simmer for about 25 minutes, or until rice is tender.

This is delicious and easy! I like to make this on the weekends beause I can marinate the Chicken while I am busy doing other things. Serve with rice and black beans for a quick weekend meal, much cheaper than going out to eat too!

4 boneless skinless chicken breasts
1 cup liquid margarita mix
1 teaspoon garlic powder
fresh ground black pepper, to taste

Steps:

  • Pour margarita mix over chicken breasts, and marinate for 2 hours in refrigerator.
  • When ready to prepare, drain and dust chicken breasts with black pepper.
  • Grill on an outside grill (or George Foreman works) 3-4 minutes on each side.
  • If you do not have a grill use an iron skillet. Bring to medium high temperature and spray skillet with an oil coating. Braise the chicken breasts until done on each side. Place chicken breasts atop Black Beans.
  • Serve with a serving of your favorite Mexican rice and Pico de Gallo.

1 1/4 cups reposada tequila
1 cup lime juice
1/2 cup Grand Marnier
1/4 cup superfine sugar
lime wedge

Steps:

  • In a small bowl combine the salt and 1 teaspoon chili powder.
  • Rub the rim of a glass with a lime wedge and dredge in the chili salt.
  • Fill a blender with the ice, tequila, lime juice, Grand Marnier, and superfine sugar.
  • Blenduntil smooth. Pour into the glasses. Garnish with lime wedge, if desired.

I haven't tried this yet, but it appears to be accurate. This recipe was on www.drinksmixer.com but it doesn't say who posted it. The recipe on the website says to use Jose Cuervo 1800 tequila, but the drink description on the Chili's drink menu says they use 1800 Reposado Tequila, so I'm going with what the menu says. The recipe just says 'reposado tequila' due to a recipezaar formatting error, but it is 1800 Reposado.

1 1/2 lb ground chuck
1 1/2 lb beef stew meat cut into small cubes
2 tsp meat tenderizer plain
4 Tbsp jamican jerk spices
4 small chipotle peppers diced
2 Tbsp adobo sauce from chipolte peppers
4 Tbsp dark brown sugar
1/2 tsp chili powder
1 large vidalia onion finely chopped
1 clove elephant garlic grated
6 Tbsp tomato paste, no salt added
2 tsp cinnamon blend (i use pamper chef)
1 c water, hot
1 can(s) rotel tomatoes and peppere
1 c tequlia
GARNISH
1/4 c fresh cliantro
2 c shredded jack cheese
2 c tortilla strips ( i use multi color strips)
2 medium fresh limes
1 c rimming salt
6 shot glasses for tequila
1 bottle good tequlia

Steps:

  • 1. Cut up stew meat and add ground chuck in large bowl sprinkle with mest tenderizer then add next 5 ingredents and mix well cover set aside for 10 minutes.
  • 2. Start crock pot on high add 1/2 cup tequila, chopped onion, garlic, tomato paste , cinnimon blend mix and rotel tomatoes and pepperscover and cook for 10 minutes then add meat stir to incorporate meat and cover cook on medium for 2 hours
  • 3. When ready to serve take one lime wedge and rim bowl dip in rimming salt. Add 1 1/2 ladles of chili top with several tortilla strips and sprinkle of fresh cliantro. Place salt dipped lime wedge on side and serve with 1 shot glass of tequila.
  • 4. Take a bite of lime a shot of tequila and the enjoy your chili!
