CHICKEN GREEN CHILI STEW

2 tablespoons olive oil
1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch chunks
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 poblano peppers, seeded and diced
1 large onion, diced
1 tablespoon ancho chile powder
1 teaspoon ground cumin
4 cups chicken stock
One 7-ounce can fire-roasted green chiles, drained and rinsed
1 large russet potato, peeled and cubed small
Chopped cilantro, for serving, optional
Grated pepper jack cheese, for serving, optional

Steps:

  • Heat the oil over medium-high heat in a large heavy-bottomed pot. Sprinkle the chicken with salt and pepper. Brown the chicken on both sides, for a total of 6 minutes. Transfer to a plate.
  • Saute the garlic, poblano peppers and onions. Add the ancho chile powder, cumin and some salt and pepper to the pot, and saute until tender, about 4 minutes. Return the chicken to the pot and stir in the chicken stock, green chiles and potatoes. Bring to a boil, then reduce to a simmer, and cook over medium heat, stirring occasionally, until the potatoes are tender and the chicken is cooked through, 25 minutes.
  • Serve in bowls topped with cilantro and cheese if using.

2 1/4 cups fat free chicken broth
4 garlic cloves, finely chopped
1 (4 ounce) can chopped green chilies
2 teaspoons all-purpose flour
1 medium red bell pepper, diced
1 medium carrot, sliced
1 cup whole kernel corn
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
2 tablespoons cilantro, finely chopped
1 teaspoon cornstarch
1/4 cup cold water
12 tortilla chips, coarsely crushed

Steps:

  • Trim fat from chicken. Cut chicken into cubes. Heat 1/2 of the broth to boiling in Dutch oven. Cook chicken in broth about 5 minutes, stirring occasionally, until white. Remove chicken from broth with slotted spoon.
  • Cook garlic and chilies in broth in Dutch oven over medium-high heat 2 minutes, stirring frequently. Stir in flour. Cook over low heat 2 minutes, stirring constantly. Gradually stir in remaining broth.
  • Stir in chicken and remaining ingredients except cornstarch, water and tortilla chips. Heat to boiling then reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until chicken is no longer pink in center.

1 bunch scallions, white and green parts, sliced (about 3/4 cup)
3 cloves garlic, chopped
1/2 to 1 jalapeno, stemmed, seeded and chopped
1 tablespoon chili powder
Kosher salt
6 cups low-sodium chicken broth
1 18 -ounce bag frozen yucca, thawed, or 2 medium baking
potatoes, peeled and cut into medium chunks
1 cup corn kernels, fresh or frozen and thawed
2 carrots, cut on bias into 1-inch pieces (about 1 cup)
1 to 2 chipotles in adobo sauce, sliced
1/2 rotisserie chicken, skinned and shredded into large pieces
1 19 -ounce can white beans, drained and rinsed
1/2 cup packed fresh cilantro, chopped

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the scallions, garlic, jalapeno, chili powder and 2 teaspoons salt and cook until soft, about 2 minutes. Add the chicken broth, yucca, corn, carrots and chipotles and bring to a boil. Cover, reduce to a simmer and cook until the yucca is tender, about 15 minutes. Stir to break up the yucca and thicken the broth slightly.
  • Add the chicken and beans and cook, stirring occasionally, to heat and thicken, about 10 minutes. Stir in the cilantro before serving.

1 green bell pepper, chopped
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
2 (14.5 ounce) cans chicken broth
1 teaspoon chili powder
2 cups cubed, cooked chicken meat
1 (14.5 ounce) can diced tomatoes
1 (16 ounce) package frozen mixed vegetables

Steps:

  • In a saucepan over medium heat, heat oil. Cook green bell pepper and onion until tender, stirring often.
  • Add cream of chicken soup, broth, chili powder and cooked chicken. Bring to a boil and then simmer for 10 minutes.
  • Add tomatoes and mixed vegetables. Cook for 30 minutes and then serve.

I got this recipe from my friend Shelly. I made a few modifications for my family and now it's one of our favorite dinners. It is very low point friendly (if you're on Weight Watchers) and high in taste. We have enjoyed it year round.

1 (10 ounce) can canned chicken (white meat)
1 green pepper, chopped
1 onion, chopped
2 garlic cloves, minced
1 (10 ounce) can rotel (or 1 can of tomatoes)
1 (15 ounce) can chili beans
1 (16 ounce) can corn (or use frozen corn)
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 1/2 cups Pace Picante Sauce
1 (14 ounce) can chicken broth (2 cups)

Steps:

  • Saute chicken, onion, garlic, and green pepper in cooking spray.
  • Add remaining ingredients. Heat on stove until warm throughout.
  • (You can also cook this in the crockpot on low all day or high for a few hours--no need to saute veggies for the crockpot version.)
  • If desired, top stew with shredded cheese, sour cream, avocados, and crushed up tortilla chips. My kids love to eat this as a dip for their chips. I serve it with the baked version of tortilla chips.

2 to 3 lbs. skinless,boneless chicken breast
3 t cumin
3 t dried mexican oregano
1 t salt
1 t freshly ground pepper
1 lb. chili peppers, preferably Pablano: anaheim will do
3/4 lb. fresh husked tomatillos
1/2 cup pumpkin seeds
2 cups chicken stock
2 1/2 T oil
1 medium onion, chopped
5 garlic cloves, chopped
3 ears fresh corn
1/3 cup heavy cream or half and half
2/3 cup chopped cilantro

Steps:

  • 1. Rub chicken with a mixture of cumin,oregano, salt and pepper. 2. Roast peppers and then tomatillos separately under a broiler at top oven shelf setting, turning occasionally until charred all over. 7 to 10 minutes for peppers, 3 to 5 minutes for tomatillos. Place peppers in a plastic storge bag to steam for at least 15 minutes. In the meantime, roast, peel and chop the tomatillos. Rub the skins off the peppers under cold running water. Remove stems and seeds. Chop roasted peppers and set vegetables aside. 3. In a dry skillet over medium heat, toast the pumkin seeds while occasionally shaking the pan until they pop, about 4 to 5 minutes. In a blender of processor, puree the seeds with one cup of the chicken stock. 4. In a large pot, heat the oil over moderate heat. Add onions and garlic and cook for about 5 minutes stirring occasionally until onions are softened. Add the chicken and braise turning occasionally until the pink disappers, about 5 minutes. Add remaining chicken stock, pumpkin seed puree and roasted chopped vegetables. Stir and simmer covered over low heat for 45 minutes. 5. Meanwhile, cut the kernals off the corn cobs, and "milk" cob by rubbing bare cob with back of knife. Or use frozen corn. After the chicken has simmered for 40 minutes, add corn to pot. Add the cream and 1/3 cup of celantro and simmer 10 minutes longer. Salt and pepper to taste. 5. Garnish with additional cilantro on top and serve..

1 whole chicken, boiled and deboned, broth reserved
salt and pepper
4 stalks celery
2 onions quartered and separated
3 tablespoons olive oil
1# of tomatillos, husked and quartered
2 jalapenos
3 cloves of garlic
1/2 bunch of cilantro, few sprigs reserved
5 cups of reserved chicken broth
2 tablespoons chili powder
2 tablespoon cumin
2 tablespoons Mexican oregano
1 -2 4oz. can of HATCH diced green chilies
1 cinnamon stick
6 medium potatoes, peeled and cut into chunks
1/2 bag of baby carrots
12 oz bag frozen corn
Lime and few sprigs cilantro for garnish
Tortillas for serving

Steps:

  • Boil chicken with celery, 1 of the quartered onions and salt and pepper until done. Debone and set aside along with broth. While chicken is cooking, place quartered tomatillos, jalapeños, garlic and cilantro in food processor and process until coarse. Meanwhile, heat olive oil in a large pot. Add deboned chicken and heat through. Add the tomatillo mixture and saute 2-3 minutes. Add chicken broth, chili powder, cumin, oregano, can of green chilies (use 2 cans if you are not afraid of heat) and cinnamon stick. Simmer for 30 minutes. Remove the cinnamon stick, add the potatoes and carrots and cook until tender, about 20 minutes. Add the corn and heat through. Garnish with a squeeze of lime and cilantro and serve with tortillas.

1 large white onion, diced

4 cup(s) chicken broth
1 small can(s) diced green chilies
1/4 cup(s) tamed jalpeno peppers
1 can(s) organic butternut squash (trader joe's)

3 tablespoon(s) arrowroot powder

  • If using fresh chicken-Place a large pot over med.-high heat. Saute' the chicken (pounded flat) in half the olive oil, on both sides for 5 minutes. Add more oil and onions and garlic. 2 (6oz) skinned chicken breast halves
2 bay leaves
4 cups cubed red potato (about 1 1/2 lbs)
1 1/2 cup chopped onion
1/2 cup thinly sliced carrot
2 tsp minced fresh cilantro
2 tsp paprika
1/2 tsp garlic salt
1/4 tsp ground cumin
3 (4.5oz) cans chopped green chile
1 (14.5oz) can no salt added diced tomatoes, undrained
1 (10oz) can diced tomatoes and green chiles, undrained
1/2 cup evaporated fat free milk
6 tbsp (1 1/2oz) shredded reduced fat sharp cheddar cheese

Steps:

  • 1. Combine first 5 ingredients in a dutch oven. Bring to a boil; cook 10 minutes. Remove from heat. Remove chicken from broth; remove chicken from bones, discarding bones. Cut meat into bite size pieces; return to broth. Discard bay leaves. 2. Add potatoes and next 9 ingredients (potatoes through tomato and chiles) to broth. Bring to a boil. Steps:

  • 1. In a large Dutch oven, heat oil over medium-high heat. Add onion, peppers & garlic. Cook 2-3 minutes, until vegetables are tender. 2. Stir in chicken, tomatoes, beans, salsa & spices. 3. Bring to a boil, reduce heat & simmer 30-40 minutes. 4. Cut tortillas into 1/2 inch wide strips. Place in bottoms of 4 bowls & sprinkle with pepper jack cheese. 5. Spoon stew evenly over cheese. Top with cheddar cheese, sour cream, black olives & cilantro.

4 cups chopped yellow onions (3 onions)
1/8 cup good olive oil, plus extra for chicken
1/8 cup minced garlic (2 cloves)
2 red bell peppers, cored, seeded, and large-diced
2 yellow bell peppers, cored, seeded, and large-diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried red pepper flakes, or to taste
1/4 teaspoon cayenne pepper, or to taste
2 teaspoons kosher salt, plus more for chicken
2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
1/4 cup minced fresh basil leaves (or sub. cilantro)
4 split chicken breasts, bone in, skin on
Freshly ground black pepper
For serving:
Chopped onions, corn chips, grated cheddar, sour cream, avacado

Steps:

  • Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Preheat the oven to 350 degrees F. Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

I cannot take credit for this recipe, but I WILL say it was well received. My husband decided to try this so-called Slow Carb Diet. He had me trolling all over the Internet looking for recipes and such. Ironically, he was the one who found this recipe and suggested that I give it a try. I personally think it's odd to have chunk chicken in chili, but that's just me. My husband and oldest son RAVED about it after I finished and said it was better than my usual version. So I thought I'd share!

3 medium cubed, skinless chicken breast halves (i used 4 large cans of chunk chicken i was saving to make chicken salad with)
1 medium diced onion
2 clove(s) minced garlic (i used 2tbs from a jar)
2 tablespoon(s) olive oil (or whatever you have on hand)
2 medium bell peppers (one red, one green)
2 can(s) 15oz canned stewed tomatoes (i used 1 large can and 1 regular can)
1 can(s) 15oz pinto beans (i used 2 cans)
3/4 cup(s) picante sauce (i used a little over 1 cup)
1 1/2 teaspoon(s) ground cumin
1 teaspoon(s) chili powder
**NOTE: THIS RECIPE CALLS FOR 1/2 TEASPOON OF SALT, BUT I OMITTED IT BECAUSE CHILI POWDER ALREADY HAS SALT IN IT. I LIKE TO KEEP OUR SODIUM AS LOW AS POSSIBLE WITHOUT SACRIFICING TASTE. BUT IT'S UP TO YOU...

Steps:

  • Saute chicken, onions, bell peppers and garlic in a large sauce pan until chicken is fully cooked (in my case, this step didn't take so long since the chicken was already cooked). Add everything else to the pot and simmer for 20 minutes. EASIEST DISH EVER!! Add some cornbread and a salad and you've got a good meal! Enjoy!
