1 lb boneless skinless chicken breast
2 serrano chilies or 2 thai bird chilies
1 teaspoon soy sauce
2 cups fresh basil, loosely packed
1 tablespoon fish sauce
3 garlic cloves
1/2 tablespoon peanut oil or 1/2 tablespoon canola oil
1/2 tablespoon red chili paste
1 teaspoon sugar
1 teaspoon fresh pepper

Steps:

  • If serving with rice, begin to cook rice.
  • finely chop garlic and chilies, then use the side of your knife to press them together into a rough paste. Add a pinch of salt to make this easier.
  • Preheat the wok or a stainless steel saute pan over medium high heat. Add the oil and the paste you just made and cook 2-3 minute.
  • Chop the chicken into small pieces and cook untill lightly browned, about 3-4 min.
  • add the soy sauce fish sauce, chili paste and sugar and continue to cook until the chicken is done all the way through, about 3-4 min.
  • add the pepper and basil, and cook until just wilted, about 2 min.
  • Serve immediately with brown rice.

500 g chicken breast fillets
40 ml vegetable oil
2 green onions, finely sliced
2 birds eye chiles, finely sliced
40 ml soy sauce
40 ml fish sauce
2 tablespoons palm sugar (or substitute brown sugar)
1 cup fresh basil (loosely packed)

Steps:

  • Cut the chicken breasts into small cubes.
  • Heat the oil in a wok and swirl to coat.
  • Add the chicken in batches and stir fry over high heat for 5 minutes each batch, or until the chicken is tender.
  • Add the spring onion and chili and stir fry for 1 minute.
  • Add the soy sauce, fish sauce and sugar and toss briefly.
  • Stir in the basil and serve with jasmine rice.

2 tablespoons fish sauce
2 tablespoons soy sauce
4 teaspoons sugar
2 teaspoons crushed red pepper flakes (use less for a not so hot meal)
1/2 lb thin asian rice noodles or 1/2 lb vermicelli
3 tablespoons vegetable oil
1/2 cup thinly sliced onion, plus
1 cup finely chopped onion
8 garlic cloves, finely chopped
1 1/2 lbs boneless skinless chicken breasts, cut into bite sized pieces
1 cup chopped fresh basil leaf

Steps:

  • In small bowl, combine 1/2 cup water with the fish sauce, soy sauce, sugar and crushed red pepper. Stir to dissolve the sugar, set aside.
  • In a large pot of boiling, salted water, cook the rice noodles al dente. Drain and set aside.
  • While the noodles are cooking, heat a wok or large, deep skillet over medium-high heat until hot, about 1 minute. Add 2 tablespoons oil, then the sliced and chopped onion, and garlic. Stir-fry until fragrant and softened but not browned, about 3 minutes Transfer the mixture to a bowl and set aside.
  • Add the remaining 1 tablespoons oil to the skillet and heat for about 1 minute. Working in 2 batches if necessary, spread the chicken in a single layer in the pan without crowding and cook, undisturbed, until the edges change color, about 1 minute. Turn and continue cooking, tossing now and then, until lightly browned all over, 2 to 3 minutes Add the reserved sauce and onion mixture and cook, tossing occasionally, until the chicken is cooked through and evenly coated, 2 to 3 minutes longer. Remove the pan from the heat and add the basil, tossing until slightly wilted. Serve the chicken over the noodles.
