- Grease a 9-inch pie plate.
- Mix both packages cream cheese with jalapeno pepper (if using) then spread on the bottom of the pie plate.

- Bake for about 20 minutes or until hot (if you are baking this cold out of the fridge the baking time will be longer).

MEXICAN CHILI CHEESE DIP (TEX-MEX)
This delicious, yet very easy dip has been a hit at every party I've prepared it for. It's so good, we'll make a batch and have it for dinner every so often. People have told me it's addictive. I rarely have to bring any home after a party. I've been making this dip for many years, so I'm not sure where it came from. When making it for my family, I use refried beans with jalapenos, hot McCormick Taco Seasoning mix, and velveta cheese with peppers. This combines for quite a kick. For guests or a party, I use reqular refried beans and velveta, but the hot taco seasoning is a must. For Christmas parties, I use the red and green tortilla chips.

- In a deep pan, brown ground beef, drain and return to the pan. Add Taco seasoning and prepare according to seasoning instructions.

- 1. Preheat oven to 375 degrees. In a 2 qt baking dish place softened cream cheese and spread over bottom of the pan evenly.
- 2. Once cream cheese is spread out, layer green chilies and if using jalapenos spread evenly over cream cheese.

- Cook the beef, stirring, in a dry medium skillet over medium-high heat until golden and starting to caramelize, about 5 minutes. Remove with a slotted spoon and pour off any excess liquid. Add the olive oil to the pan.
- Reduce the heat to medium and cook the onions, stirring occasionally, until browned, 5 to 6 minutes. Add the cumin, chili powder and garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle in the flour and cook, stirring, until the flour smells toasty, 1 minute. Pour in the beer and canned tomatoes and chiles, bring to a boil and cook 2 minutes. Gradually add the milk, whisking, and bring to a gentle boil until thickened, about 2 minutes. Add the cheeses and reduce the heat to low. - Cut Velveeta into 2 inch cubes. Place cubes into crock pot with the Ro*tel, chili and shredded cheese. Mix together. Turn crock pot on Low setting and cover, stirring occasionally. When all cheese is completely melted, it's time to enjoy!
