2 teaspoons olive oil
1 teaspoon chili powder
¾ teaspoon salt
¼ teaspoon black pepper
1 lime, zested
1 lime, juiced

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, toss the chickpeas with olive oil, chili powder, salt, pepper, lime zest, and lime juice.
  • Transfer chickpeas to a parchment paper-lined baking sheet and bake for 35 minutes, until crispy.

1 can (15 oz) Progresso™ chickpeas (garbanzo beans), drained, rinsed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
Grated peel of 1 lime

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil. Pat chickpeas dry with paper towel; place on cookie sheet. Drizzle with oil.
  • Roast 35 to 40 minutes or until crispy.
  • Pour chickpeas into medium bowl. Sprinkle with salt, chili powder, cumin and lime peel; toss to coat.

Crunchy Chickpeas With Sesame, Cumin and Lime image

It's a bit more work than just tossing chickpeas, oil and spices together onto a sheet pan, but dry-roasting the beans first, then stirring them into oil that's been infused with spices encourages the seasoning to cling to the bean. Here, nutty sesame seeds are combined with earthy cumin before being tossed with roasted chickpeas and a little lime zest for brightness. They make a nice addition to a charcuterie plate or as a topping for roasted vegetables such as carrots or baby turnips. They also make a great high-protein snack for kids of all ages.

1 (15-ounce) can chickpeas, drained and patted very dry
1 1/2 teaspoons sesame seeds
2 tablespoons olive oil
1 teaspoon cumin
2 teaspoons lime zest
Kosher salt

Steps:

  • Heat oven to 400 degrees. Spread chickpeas out evenly on a sheet pan and roast until crisp and golden in spots, shaking the pan occasionally, about 20 to 25 minutes. Turn off the oven and let the chickpeas hang out for another 10 to 15 minutes, checking in occasionally to make sure they do not burn. This will help keep them crunchy for an extended period of time.
  • While the chickpeas roast, toast the sesame seeds in a 10-inch skillet over medium heat, stirring often so they do not burn, about 2 to 3 minutes. Set aside and wipe out the skillet. Using the same pan, heat the olive oil over medium-low heat and add the cumin. Cook, stirring frequently, until fragrant, about 1 minute. Add the sesame seeds back to the skillet and stir together.
  • Add the chickpeas directly to the skillet and toss together until everything is well coated. Remove from the heat, stir in lime zest and season well with salt. Serve warm. Store any leftovers in an airtight container for up to a week.

1 tablespoon fresh cilantro, finely chopped
1 tablespoon fresh lime juice (from half a lime)
zest 1 lime
2 teaspoons extra virgin olive oil
1 teaspoon chili seasoning blend (can substitute with chili powder)
1 teaspoon coarse sea salt
½ teaspoon red pepper flakes (optional)
1 15.5 ounces can of chickpeas (rinsed, drained, and patted dry)

Steps:

  • Preheat oven too 400ºF.
  • In a medium bowl, combine chickpeas, extra virgin olive oil, salt, chili seasoning, and red pepper flakes. Stir thoroughly to evenly coat the chickpeas. Tip: I add the spices in small amounts, as I stir the chickpeas to help ensure each chickpea gets coated.
  • Pour onto a baking sheet and spread the chickpeas out so they aren't clumped together, preventing them from steaming. Sprinkle with a little more coarse sea salt, if desired.
  • Bake in the oven for 30 minutes, stirring halfway through to allow a little more even cooking. The chickpeas are done and ready to remove from the oven when they start to develop a crispy texture and areas of darker brown spots on the legumes themselves. Remove from oven.
  • In the same bowl used earlier, add lime juice, lime zest, and cilantro. Add the roasted chickpeas to the bowl and stir to combine. After ingredients are combined, pour back onto the baking sheet and allow to cool. Enjoy on their own, or in a salad or grain bowl!
