SPICY CHILI AIOLI

Originally inspired by a local sushi restaurant, I went through a number of different aioli recipes until I finally found a basic combination of ingredients, all of which have become the foundation for this and a couple of other recipes. We enjoy this on just about everything - crab cakes, fish tacos, sushi, vegetables, you name it... If you enjoy this, please also try my curry and saffron aioli recipes for a different twist... A couple of notes with respect to ingredients. Avoid substitutions where possible - I tried a number of different recipes before I arrived at this one, and some of them weren't so pleasant... Please consider using Hellman's original mayonnaise when making this recipe - avoid using Kraft, Miracle Whip, and sweet mayonnaises at all costs. If you use a low fat mayo, I also recommend Hellman's. Chili garlic oil can be found at just about any asian grocery - the main ingredients are garlic, chili, and oil. It is very thick in appearance and looks like the result of dried chilies, garlic, and oil being pureed in the food processor. This isn't to be confused with Sriracha or chili sauce. 1 cup mayonnaise
1 1/2 tablespoons lemon juice (fresh)
2 -3 garlic cloves, pressed
1 1/2 teaspoons chili garlic oil (not sriracha or chili sauce)
1 pinch cayenne pepper (sprinkled on top to garnish)

Steps:

  • Combine mayonnaise, and lemon juice with a wire whisk, mixing together until uniform.
  • Add pressed garlic and chili paste and continue to mix once again until uniform in texture.
  • Serve aioli in a small ramekin, bowl, or directly on top of food and garnish with a sprinkle of cayenne pepper. Serve cool to slightly below room temperature.

HELL'S KITCHEN AHI TUNA WITH GINGER RICE CAKE, ASPARAGUS AND SHIITAKE SALAD, AND SPICY CHILI AIOLI image

Rice Cake:
4 Tbs. sugar
4 Tbs. rice wine vinegar
1 cup Japanese rice
1 cup water
1 pinch salt
2 Tbs. minced ginger
Salad:
1 lb. asparagus
1/4 lb. shiitake mushrooms, stemmed
1 Tbs. butter
2 shallots, minced
1 bunch chives, diced
2 1/4 cup green onions, sliced
2 tomatoes, peeled and diced
2 limes, juiced
1/4 cup XVO oil
Chili Aioli:
1/2 onion
1/2 celery stalk
1-inch piece ginger
1/2 lime, juiced
2 Tbs. sesame oil
2 Tbs. chili sambal
1 Tbs. mirin
1/4 cup soy sauce
1/4 cup rice vinegar
1 egg
Salt
Grapeseed oil
Tuna:
2 sheets nori (dry seaweed)
2 7 oz. tuna fillets (look for yellow fin #1 quality)
Tempura Batter:
1 cup flour
8 oz. soda water
pinch of baking soda
1 Tbs. sea salt
2 Tbs. sesame seeds
2 cups canola oil
1 cup soy sauce

Steps:

  • Rice Cake: Bring sugar and vinegar to a boil in a small pan. Remove and let cool. Wash rice in running water for 5 minutes. Transfer to a pot with 1 cup water, salt, and ginger. Bring rice to a boil then turn down to the lowest flame and cover. Cook rice until tender but a slight bite is left. Transfer rice to a wooden bowl and mix with sugar/vinegar mixture. Let cool slightly and press the rice into four small cakes either with a mold or by hand. Sauté rice cakes in 1 Tbs. peanut oil over high heat until crispy. Transfer cakes to 350-degree oven to heat through. Salad: Peel and blanch asparagus in boiling salted water for 2 minutes, then quickly plunge them into ice water to stop the cooking. Quickly sauté mushrooms in hot pan with butter and set aside to cool. Trim asparagus to make all equal size and cut in half. Mix asparagus with shallots, chives, sliced green onions, and tomatoes. Season mixture with lime juice, olive oil, salt, and black pepper. Chili Aioli: Combine all ingredients in blender except oil. Blend until smooth and strain through chinois. Discard solids. Add back into blender and drizzle oil in slowly. Tuna: Cut seaweed paper to fit the exact size of tuna steak and wrap it around the fish. Tempura Batter: Whisk together flour, soda water, baking soda, sea salt, and sesame seeds. Heat oil in a small deep fryer to 350 degrees. Dip nori-wrapped tuna in soy sauce, then dredge in flour mixture. Fry for 2 minutes. Drain on paper towels and season with fine salt. To Finish: Arrange salad on side of plate. Slice tuna thinly and place next to salad. Drizzle some of the chili sauce around and serve.

CHILI AIOLI

Adapted from a recipe by Michele Humes at Serious Eats. She says, "Use your favorite chili sauce-preferably one with a thicker consistency, such as Sriracha, as a runnier sauce will thin out your aïoli. You can also use cayenne pepper, but the aïoli will be paler in color."

1 large egg yolk
1/2 teaspoon Dijon mustard
2 teaspoons fresh lemon juice
1/2 cup neutral-flavored vegetable oil, such as canola
2 garlic cloves, very finely minced
fine salt
chili sauce or cayenne pepper, to taste

Steps:

  • Whisk together mustard, lemon juice and egg yolk in a bowl.
  • Add oil to yolk mixture a few drops at a time, whisking constantly, until all oil is incorporated and mixture is emulsified.
  • Whisk in garlic and chili sauce (or cayenne pepper) to taste. Season with salt. If aïoli is too thick, whisk in 1 or 2 drops of water; it should be creamy, but much looser in consistency than store-bought mayonnaise.

Grilled Tuna and Orange Salad with Candied Lemon and Mixed Baby Greens with Chili Aioli and Herb Tuile image

2 lemons
2 cups sugar
1 cup water
4 cups mixed baby greens
3 eggs
4 egg whites
1/2 cup simple syrup (equal amounts of sugar and water, boiled and then cooled to room temperature)
1/4 cup water
5 cloves garlic, chopped
4 cups flour
1/4 cup melted butter
Salt and pepper
Chopped rosemary
4 (5-ounce) pieces fresh tuna
4 oranges, sectioned
4 cups mixed baby greens

Steps:

  • Quarter the lemons and set aside in a saucepot. Cover the lemon quarters with water, bring to a boil, and simmer for 10 minutes. Drain, repeat this process, and let stand for 1 to 2 hours.
  • In a saucepot, combine the water and sugar, bring to a boil, and add the lemon pieces and simmer for 20 minutes. Let the rinds steep overnight and cut them into julienne.
  • Preheat the oven to 400 degrees F.
  • To make the herb tuille, combine the eggs, egg whites, syrup, water, and garlic, and whisk all together. Work in the flour and then add the butter, salt, and pepper, and mix until a paste is formed. On a buttered and floured baking sheet, pipe the batter onto the pan in random forms and sprinkle with rosemary. Bake for 2 to 3 minutes until light golden brown. Quickly remove from the oven and shape over a bowl or any desired shape and set aside.
  • Grill the tuna to medium, approximately 3 minutes each side.
  • To serve, place the greens on each plate. Layer the tuna on half of the greens, garnish with orange segments, tuille, and the candied lemon zest.

POTATO CHIP FRIED CHICKEN WING WITH CHILI-LIME AIOLI

1 cup mayonnaise
2 tablespoons freshly squeezed lime juice
1 tablespoon chili powder
1 teaspoon sugar
Kosher salt and freshly ground black pepper
1 cup crumbled potato chips (see Cook's Note)
1 1/2 cups all-purpose flour
1 teaspoon chili powder
1 tablespoon dried rosemary
Kosher salt and freshly ground black pepper
12 jumbo chicken wings
3 eggs
1 1/2 cups canola oil

Steps:

  • For the aioli: In a medium bowl, whisk together the mayonnaise, lime juice, chili powder, sugar and 1 teaspoon each salt and pepper. Cover and refrigerate until ready to serve.
  • For the wings: Combine the potato chips, 1/2 cup of the flour, chili powder, rosemary and 1 tablespoon each salt and pepper in a 4-quart resealable plastic bag. Shake vigorously until well combined.
  • Sprinkle the chicken wings with 1 tablespoon each salt and pepper.
  • Add the remaining 1 cup flour to a bowl large enough to hold the wings. In a second bowl, whisk the eggs. Dredge the seasoned wings in the flour, turning to coat well, then toss in the egg mixture.
  • Four at a time, add the wings to the potato chip mixture, seal the bag and shake to coat.
  • Add the oil to a large, deep cast-iron skillet and bring to medium-high heat.
  • Add the wings to the skillet and fry for 8 to 10 minutes on each side, until golden brown and the internal temperature reaches 165 degrees F. Drain on a paper-towel-lined baking sheet.
  • Serve piping hot, with aioli on the side.

ANCHO CHILI BURGERS WITH LIME AIOLI

The burgers can be cooked in a cast-iron skillet instead of on the grill. The hamburger meat can be seasoned, covered and refrigerated for as much as one day in advance. 2 teaspoons dried ancho chile powder (or more to taste)
1 cup coarsely chopped onion
3 garlic cloves
1 1/2 lbs ground beef
1 1/4 lbs ground veal (may substitute ground beef or equal amounts of pork, veal and beef)
2 large eggs, lightly beaten
1 1/2 teaspoons kosher salt (to taste) or 1 1/2 teaspoons coarse sea salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)
mexican manchego cheese or monterey jack cheese slice
hamburger bun, for serving
1 cup mayonnaise
1 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
3 garlic cloves, minced
1 teaspoon kosher salt (to taste) or 1 teaspoon coarse sea salt (to taste)
1/4 teaspoon fresh ground black pepper (to taste)

Steps:

  • Prepare the grill for direct heat. If using a gas grill, preheat to medium-high (450 degrees). If using a charcoal grill, light the charcoal; when the coals are ready, distribute them evenly over the cooking area. For a medium-hot fire, you should be able to hold your hand 6 inches above the coals for 4 or 5 seconds. Use cooking oil spray to grease the grill grate and place on the grill. Have ready a spray water bottle for taming any flames.
  • Combine the ground beef and veal in a large mixing bowl. Mix in the ancho chili powder, onion, garlic, eggs, salt and pepper. Use your hands to shape the meat into 8 to 10 large patties.
  • Arrange the patties on the grill; cook uncovered for 5 minutes per side (medium-well).
  • Meanwhile, make the aioli: Whisk together the mayonnaise, lime zest, lime juice and garlic in a medium bowl. Season with salt and pepper to taste. The yield is about 1 cup. Cover and refrigerate until ready to serve.
  • Place a slice of cheese on each hamburger a few minutes before the second sides are done. Transfer to buns for serving, along with the lime aioli.

2 teaspoons toasted (dark sesame oil*)
1 pound deveined and peeled shrimp
2 Tablespoons soy sauce
2-3 cloves garlic (grated)
1 lemon wedge
1/3 cup mayonnaise
3 Tablespoons sweet chili sauce
1 Tablespoon lime juice
2 cloves garlic (grated)

Steps:

  • Review all recipe notes and instructions before beginning.
  • In a small bowl, whisk together the mayonnaise, chili sauce, lime juice, and garlic. Store in the refrigerator until ready to serve.
  • In a large skillet or on a griddle, heat the butter and sesame oil on medium high heat.
  • Add the shrimp in a single layer. Sear until the shrimp are browned and crispy. Flip.
  • Repeat until the other side is browned as well.
  • Add soy sauce, garlic, and a squeeze of lemon. Remove from heat once most of the liquid has evaporated. Serve with sauce.
