1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup reduced-fat mayonnaise or vegan mayonnaise
3 tablespoons honey mustard or Dijon mustard
2 tablespoons snipped fresh dill
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
12 slices multigrain bread
Optional: Romaine leaves, tomato slices, dill pickle slices and sweet red pepper rings

Steps:

  • Place chickpeas in a large bowl; mash to desired consistency. Stir in onion, celery, mayonnaise, mustard, dill, vinegar, salt, paprika and pepper. Spread over each of 6 bread slices; layer with toppings of your choice and remaining bread.

1/4 cup finely chopped red onion (about 1/2 small red onion)
1 tablespoon plus 2 teaspoons fresh lemon juice
1 15-ounce can chickpeas, drained and rinsed
1/3 cup ranch dressing
Kosher salt and freshly ground pepper
1/2 cup finely chopped celery
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
8 slices multigrain bread, toasted
4 to 8 leaves Bibb or Boston lettuce
1 ripe avocado, thinly sliced
Ranch tortilla chips or dill pickle potato chips, for serving
Dill pickles, for serving

Steps:

  • Rinse the red onion under cold water; transfer to a small bowl. Add 1 tablespoon lemon juice and let stand 5 to 10 minutes.
  • Meanwhile, combine the chickpeas, ranch dressing, a pinch of salt and a generous grinding of pepper in a large bowl. Smash together with a potato masher or sturdy fork until the chickpeas are in small pieces. Add the red onion, celery, parsley, dill, 1 teaspoon lemon juice and salt and pepper to taste; stir to combine.
  • Lay out 4 slices of bread and top each with 1 or 2 lettuce leaves. Spread the chickpea salad (about 1/2 cup per sandwich) in an even layer on top. Season the avocado slices lightly with salt and pepper and drizzle with the remaining 1 teaspoon lemon juice. Divide the avocado among the sandwiches and top each with a second piece of bread. Serve the sandwiches with chips and pickles.

One 15-ounce can chickpeas, drained and rinsed
3 tablespoons mayonnaise or vegan mayonnaise spread
1 tablespoon fresh lemon juice
1 tablespoon roughly chopped fresh dill
2 teaspoons capers

1 cup lightly packed baby kale

Steps:

  • Mash the chickpeas, mayonnaise, lemon juice, dill, capers, mustard, turmeric, 1/2 teaspoon salt and several grinds of pepper in a large bowl with a fork or potato masher, scraping down the sides of the bowl with a rubber spatula as needed, until the chickpeas are crushed and the salad is slightly chunky.   • Spread the salad onto 2 slices of the bread, top with the pepitas and baby kale and then sandwich with the remaining 2 slices bread. Serve immediately.

½ sheet nori (dried seaweed), torn into small pieces
1 (15 ounce) can no-salt-added chickpeas, drained and rinsed
¼ cup vegan mayonnaise
⅓ cup minced or finely grated carrot
⅓ cup finely diced celery
2 tablespoons dried minced onion
2 tablespoons fresh dill
½ teaspoon salt
black pepper to taste
8 slices whole wheat bread, toasted
¼ cup vegan mayonnaise
8 lettuce leaves
8 tomato slices

Steps:

  • Pulse nori in a blender until it's a fine powder. Set aside to let dust settle.
  • Mash chickpeas with a sturdy fork or a small-holed potato masher (chickpeas slip through larger, zigzag-type mashers) in a large bowl until most are broken up. Do not overmash--they should retain some texture.
  • Stir in mayo and mash a little more. Stir in nori powder, carrot, celery, onion, dill, salt, and pepper. Cover and chill at least 15 minutes or up to 3 days.
  • For the sandwiches, slather toast with mayo (about 1 1/2 teaspoons per slice). Layer salad, lettuce, and tomato between toast slices. Cut sandwiches in half diagonally.

1 red bell peppers, minced

In an effort to substitute, I came up with this faux chicken salad-esque spread that is delicious on whole grain bread or in a pita pocket! It is an easy go-to because I usually have everything in my pantry. Substitute any ingredients that you might use in your chicken or tuna salad!

1 (15 ounce) can chickpeas, drained and slightly mashed
2 small celery ribs, with their leaves
1/4 cup chopped water chestnut
2 tablespoons finely chopped onions (or to taste)
1 tablespoon pickle relish
1 tablespoon mayonnaise (or vegannaise)
1 teaspoon dry ranch dressing mix
1 teaspoon dried parsley
salt and pepper

1/4 cup chopped sweet pickles + more pickle slices for topping
2 tablespoons finely chopped red onion
1/4 cup mayonnaise or vegan mayo (I use olive oil based mayo; a light option or even Greek yogurt also works)
2 teaspoons mustard
1/8 teaspoon celery salt (optional)
1/8 teaspoon kosher salt plus more to taste
1/8 teaspoon freshly ground black pepper
4 slices of your favorite sandwich bread
1 cup potato chips
Green leaf lettuce (optional)

Steps:

  • Add the chickpeas, 1/4 cup chopped pickles, onion, mayonnaise, mustard, celery salt if using, kosher salt, and black pepper to a small bowl. Using a fork or potato masher, smash the chickpeas while mixing and mashing the ingredients together. You're not looking for hummus-consistency; just a nice, spreadable, chunky salad will do.
  • Divide filling between two slices of bread (you may have enough to make more sandwiches, depending on your preference and the size of your bread). Spread to within about 1/2 inch of the edge of the bread. Add lettuce if using, pickle slices, and potato chips. Top with remaining bread. Smush down a bit, cut in half, and serve.

I live in a section of Canada's best grain farming lane. Lentils are also a prevalent crop. One of our friends always puts in a section of lentils. I get a fresh batch every harvest season. This is one of my favorite ways to use them. This makes a good deal of sandwich filling but will keep well in the fridge for up to a week (as long as you don't take a bite and dip the spoon back into the salad mix, lol).

1 cup(s) canned chickpeas, drained and rinsed
1 cup(s) cooked red lentils
1 - celery rib, finely chopped
1 - carrot, grated
1/4 - red or green bell pepper, finely chopped
2-3 - green onions, finely chopped
1 medium pickle, finely chopped (i prefer dills)
1/2 tablespoon(s) lemon juice
3 tablespoon(s) mayonnaise
2 tablespoon(s) nutritional yeast (optional)
1/4 teaspoon(s) salt (black is nice if you have it)
- ground black pepper, to taste
- good quality whole wheat or multi grain bread slices
- leaves lettuce (butter, romaine, spinach, or iceberg)

Steps:

  • Lightly mash chickpeas with a fork. Add the lentils, finely chopped vegetables, dill, lemon juice, mayo, nutritional yeast, salt or black salt, and pepper. Mix thoroughly with a fork.
  • Blend 1⁄3-½ of the mixture with a food processor or immersion blender, and mix back in, to even out the texture. Chill salad for 3+ hours before serving.
  • Make sandwich by scooping 1⁄3-1/2cup of salad onto one slice of bread and lay 1 or 2 leaves of lettuce on the other slice of bread. Close the sandwich, slice diagonally and enjoy!
