GARLIC ROAST CHICKEN

1 (5 to 6-pound) roasting chicken
Kosher salt and freshly ground black pepper
2 heads garlic, cut in 1/2 crosswise
1 lemon, halved
1/2 large Spanish onion, thickly sliced
4 carrots cut diagonally into 2-inch chunks
2 large Yukon gold potatoes, cut into 6 pieces
4 tablespoons butter, melted

Steps:

  • As soon as you get the chicken home, salt it inside and out, wrap it and keep it in the refrigerator for up to 2 days.
  • When you are ready to cook the chicken, first preheat the oven to 425 degrees F.
  • Pat the outside of the chicken dry with paper towels. Liberally salt and pepper the inside of the chicken and stuff the cavity with the all the garlic and lemon. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place it in a roasting pan just large enough to hold it and the vegetables. Scatter the onion slices, carrots and potatoes around the chicken. Brush the outside of the chicken with the butter and sprinkle with salt and pepper.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken to a platter and cover with aluminum foil. Place the vegetables back in the oven and continue cooking for an additional 15 minutes.
  • When the vegetables are cooked, carve the chicken and place the slices on the platter surrounded by the vegetables. Drizzle some pan juices over the chicken and vegetables.

6 boneless skinless chicken breast halves
1/4 cup butter ((for melting in the pan))
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
2 teaspoons parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/4 cup butter ((melted))
2 cloves garlic ((minced))
2 tablespoons lemon juice
Paprika

Steps:

  • The chicken breasts we used were large (3 chicken breasts = 2 1/3 pounds). If the chicken breasts you are using are also large cut them in half to get 6 pieces.
  • Place the chicken breasts in a zippered bag. Use the side of a meat tenderizer to pound the chicken breasts to 1/2" thickness throughout so they cook evenly.
  • Preheat the oven to 350 degrees. Place 1/4 cup butter in a 9x13 pan and place it in the oven for the butter to melt while the oven heats.
  • In a bowl, mix the breadcrumbs, cheese, parsley, salt and pepper. Place milk in another shallow bowl.
  • Dip chicken in milk, then roll it in the crumb mixture.
  • Place chicken in the baking dish with the melted butter.
  • Combine the butter, garlic and lemon juice and drizzle over the chicken, then sprinkle on the paprika.
  • Cover the pan loosely with foil and bake for 20 minutes.
  • Uncover the pan, turn the chicken and bake uncovered for an additional 15 minutes. The baking time will depend on the thickness of the chicken, so be sure to check it to make sure it is thoroughly cooked. The internal temperature should be 165 degrees Fahrenheit.

7 -10 garlic cloves
3 boneless skinless chicken breasts
1/3 cup white wine
1 cup chicken stock
2 teaspoons parsley
1 tablespoon garlic powder
1/2 cup milk
4 ounces cream cheese, softened
1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Coat garlic gloves with olive oil and wrap tightly in foil, roast in a 450 degree oven for 15-20 minutes or until soft.
  • Remove from foil and mash well.
  • Brown chicken breasts in olive oil, not cooking the chicken through at this point but adding color. Remove when finished and set into a casserole dish.
  • Deglaze the sauce pan with the white wine and let boil. Add chicken stock, parsley and roasted garlic. Allow to simmer.
  • Add milk and cream cheese, stirring until it is incorporated, and then add the parmesan cheese. Whisk until smooth.
  • Add black pepper to taste and salt if needed. (the broth and cheese are salty so you probably won't need any).
  • Pour over the chicken and bake uncovered in a 350 degree oven for 25-35 minutes or until chicken is cooked through.
  • Serve sauce over mashed potatoes or pasta. If it is too thin, return to a saucepan and mix together one tablespoon water and one tablespoon of corn starch and whisk into sauce when simmering.

1 cup olive oil
1/4 cup roughly chopped garlic
1/4 cup roughly chopped fresh thyme leave
1/4 cup roughly chopped fresh tarragon

2 chickens, about 2 1/2 pounds each

1 tablespoon unsalted butter
1 tablespoon olive oil
2 shallots, roughly chopped
1 cup port wine
8 cups chicken stock
2 heads roasted garlic, cloves removed
Salt and freshly ground pepper
1 tablespoon butter
2 tablespoons white truffle oil
1 cup basil leaves, tightly packed
2 tablespoons pine nuts
2 cloves garlic
1/3 cup olive oil
2 tablespoons freshly grated Parmesan cheese

6 red potatoes, peeled, cut into chunks and cooked until soft
1/2 cup milk, scalded

Steps:

  • For the chicken: Combine the olive oil, garlic and herbs in a very large bowl. Add the chicken and coat with the marinade. Cover and refrigerate 2 hours or overnight. Preheat oven to 400 degrees. Truss the chickens and season to taste with salt and pepper. Brush with the marinade. In a hot skillet, sear the breast sides 3 to 5 minutes until golden. Place in the oven and roast for 10 minutes. Reduce the heat to 350 degrees and continue roasting, basting with the marinade and pan juices, until the chicken is cooked through and browned, about 30 minutes more. Remove from the oven and let rest.
  • For the sauce: In large saute pan, heat the butter and olive oil over high heat until almost smoking and saute the shallot until caramelized, about 3 minutes. Add the wine and reduce until almost dry. Add the stock and the roasted garlic and cook until reduced by half. Sprinkle with salt and pepper. Remove from the heat and strain into a saucepan. Whisk in the butter. Spoon over chicken and drizzle with truffle oil.
  • For the potato puree: Place basil, pine nuts and garlic and oil in a food processor and process until smooth. Add the cheese and salt and pepper to taste. Pass the warm cooked potatoes through a ricer into a large bowl. Add 1/4 cup of the herb puree, milk and butter. Mix until smooth, season with salt and pepper to taste.

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.
  • Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
  • Add milk. Add cream cheese in small blobs.
  • Bring to simmer, whisking in the cream cheese until smooth.
  • Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
  • Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.
  • Remove chicken to a serving platter. Toss sauce with noodles.
  • Serve with a green vegetable (I recommend broccoli or an Italian vegetable mix), or a salad.
  • Note: If you don't have homemade chicken stock please use a quality soup base (I like Tones), rather than bullion, which is apt to be too salty when combined with the Parmesan.
  • Note: If you want a thicker sauce reduce the chicken stock to 1/2 cup.

1-1/2 teaspoons minced fresh rosemary or .4 teaspoon dried rosemary, crushed
1-1/2 teaspoons rubbed sage
3/4 teaspoon salt
1/2 teaspoon pepper
4 boneless skinless chicken breast halves (1-1/2 pounds)
2 tablespoons olive oil, divided
20 garlic cloves, halved lengthwise
1/2 cup chopped onion
1/4 teaspoon crushed red pepper flakes
1/4 cup white wine or reduced-sodium chicken broth
1-1/4 cups reduced-sodium chicken broth
1 tablespoon butter, melted
3 tablespoons minced fresh parsley

  • In a large resealable plastic bag, combine 2 tablespoons flour, rosemary, sage, salt and pepper; add chicken. Seal bag and shake to coat.
