This is my mum's old recipe; It's really interesting that the same (or extremely similar) recipe was published in my local magazine! Marinating time not included in preparation time.

6 skinless chicken breasts
1 tablespoon oyster sauce
2 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons barbecue sauce
1/2 teaspoon Worcestershire sauce
1/4 cup brewed coffee
1 teaspoon brown sugar

Steps:

  • Marinate the chicken with the oyster sauce. Season with salt and pepper.
  • Heat the olive oil in a pan, and fry each side of the chicken until cooked. Set aside and keep warm.
  • In the same pan, fry the garlic until fragrant, then add the barbeque sauce, worchestershire sauce, brewed coffee and brown sugar. Allow it to simmer for 2 minutes.
  • Add in the chicken and coat evenly with the sauce. Allow it to caramalize and cover the chiken pieces.
  • Serve immediately.

GRILLED CHICKEN WITH REDEYE BBQ SAUCE

One 3-pound whole chicken, split in half
Kosher salt and freshly cracked black pepper
1 tablespoon extra-virgin olive oil
1 cup your favorite barbecue sauce
4 ounces brewed coffee or cold brew or 2 tablespoons instant espresso powder

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Sprinkle the chicken on both sides with salt and pepper and drizzle with the oil. Place the chicken skin-side up over direct heat and close the grill. Cook for 2 minutes. Flip the chicken and continue to cook with the lid down for 1 additional minute.
  • Meanwhile, whisk together the barbecue sauce and coffee in a small saucepan.
  • Flip the chicken again so it's skin-side up, move over to indirect heat and brush with some of the redeye barbecue sauce. Close the grill and cook, brushing with the redeye barbecue sauce every 10 minutes, until instant-read thermometer registers 160 degrees F, about 25 minutes. Remove the chicken from the grill and rest at least 5 minutes before serving. Bring the leftover redeye barbecue sauce to a simmer over direct heat for several minutes. Serve the chicken with the redeye barbecue sauce on the side or poured over.
  • (Alternatively, you can bake the chicken skin-side up on a wire rack-lined rimmed baking sheet in a 450 degrees F oven for 25 minutes. You do not need to flip the chicken.)Who's Dining:

Rich home-made mole sauce with tender cocoa flavor coats tender chicken in this delicious dish.

4 cups water
1/3 cup salt
1/3 cup packed dark brown sugar
1 tablespoon cumin seed
1 tablespoon chili powder
1 lime, thinly sliced
1 cup strong-brewed coffee, at room temperature
6 boneless skinless chicken breasts (about 1 3/4 lb)
2 tablespoons vegetable oil
1 medium onion, thinly sliced
2 cloves garlic, finely chopped
1 can (28 oz) crushed tomatoes, undrained
1 1/4 cups chicken broth
1 tablespoon creamy peanut butter
1 teaspoon granulated sugar
1/2 teaspoon ground cumin
Dash of ground cinnamon
1 oz unsweetened baking chocolate
2 chipotle chiles in adobo sauce (from 7-oz can), chopped
Salt and pepper, if desired

Steps:

  • In 2-quart saucepan, heat water, salt, brown sugar, cumin seed, chili powder and lime slices over medium heat, stirring occasionally, until salt and brown sugar are dissolved. Remove from heat and stir in coffee. Cool mixture to room temperature.
  • Place chicken in 1-gallon resealable plastic food-storage bag or large bowl, and pour cooled coffee mixture over chicken. Seal bag or cover bowl. Refrigerate 2 to 3 hours.
  • In 12-inch skillet, heat oil over medium heat. Remove chicken from marinade and pat dry on paper towels. Discard marinade. When oil is hot and shimmers lightly, place chicken in skillet. Cook about 3 minutes or until golden brown. Flip and cook 2 to 3 minutes longer or until golden on other side. Place chicken on plate.
  • In same skillet, cook onion over medium heat 5 minutes, stirring occasionally, until soft and lightly browned. Add garlic and cook 30 seconds or until fragrant. Add tomatoes, broth, peanut butter, granulated sugar, ground cumin, cinnamon, chocolate and chiles. Cook uncovered 3 minutes, stirring occasionally, until mixture simmers and peanut butter and chocolate are melted.
  • Reduce heat to medium-low and nestle chicken breasts in sauce. Cook uncovered 15 to 20 minutes, stirring occasionally, until sauce thickens and juice of chicken is clear when center of thickest part is cut (170°F). Taste and add salt and pepper if desired. Serve immediately.

A friend made this for us years ago. She found it in an old cookbook called make it now bake it later. She shared the recipe with me & everyone I make it for just loves it. Hope you do too,

2 pkg chicken thighs
1/2 c parmesan cheese
pinch ginger & paprika
2 can(s) mushroom soup
1 Tbsp instant coffee powder
1/2 c white wine or chicken broth

Steps:

  • 1. Wash & dry chicken, sprinkle each side with ginger & papkrika. rub it in well to coat
  • 2. fry until golden brown on both sides in 2 tablespoons of oil. Remove from pan set aside, In same pan add soup, wine,instant coffee & parmesan cheese.heat to boiling. pour over chicken thighs.
  • 3. Cover with foil bake at 350 for 1/2 hour, remove foil make sure sauce is spooned over all chicken, cover again & return to oven for 15 more minutes. ( You can use chicken breasts. serve with rice if desired.

I saw this made on Good Morning America and the hosts were drooling all over themselves. It does sound good but I haven't yet made it. This recipe is supposed to be a la the old west on the trail. You may substitute chicken breasts, legs or thighs for the cut up chicken.

3 slices bacon, diced
1 cup chopped onion
1/4 cup minced garlic
1 jalapeno pepper, finely chopped
1 teaspoon cumin
1 tablespoon chipotle chile in adobo
2 cups brewed coffee
1/4 cup packed brown sugar
3/4 cup red wine vinegar
1 cup ketchup
1 cup diced canned tomato
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 (3 lb) chicken, cut into 8 pieces

Steps:

  • In 4 qt pot, render bacon over medium heat.
  • Add onion, garlic and jalapeno, sauteing until onion is translucent.
  • Add remaining sauce ingredients, simmering slowly over low heat for 3 hours, until sauce thickens.
  • Preheat grill to medium heat.
  • Drizzle vegetable oil over chicken to coat and season with salt and pepper.
  • Place chicken, skin-side down, on grill and cook approximately 15 minutes per side.
  • Turn, as necessary, until chicken is nearly cooked through.
  • Spoon sauce over both sides of chicken and continue grilling until chicken is cooked through or juices run clear, approximately 5- 10 more minutes.
