1 cup water
1 cup water
3 tablespoons butter
2 skinless, boneless chicken breast halves - cubed
1 onion, diced
1/2 cup chopped celery
2 (10.75 ounce) cans condensed cream of chicken soup
2 2/3 cups milk
1 (14.5 ounce) can sliced carrots
3 tablespoons sliced almonds
5 tablespoons butter
3 tablespoons dried parsley

Steps:

  • Soak rice in 1 cup water for 6 to 8 hours. Drain. Bring 1 cup water to a boil in a small saucepan. Stir in drained rice. Boil until water level dips below rice, 10 minutes. Set aside. 2 carrots, chopped
2 celery stalks, chopped
1 small onion, chopped
Coarse salt and ground pepper
1 can (14.5 ounces) reduced-sodium chicken broth
2 boneless, skinless chicken thighs (about 8 ounces total)
1/3 cup wild-rice blend (seasoning packet discarded)

Steps:

  • In a medium saucepan, heat oil over medium-high. Add carrots, celery, and onion; season with salt and pepper. Cook, stirring occasionally, until vegetables are crisp-tender, 3 to 5 minutes.
  • Add broth, chicken, rice, and 1 1/2 cups water to pan. Bring to a boil; reduce to a simmer, and cover. Cook until chicken is opaque throughout, 6 to 8 minutes. With a slotted spoon, transfer chicken to a cutting board. When cool enough to handle, shred with two forks.
  • Meanwhile, continue to cook soup, uncovered, until rice is tender, 6 to 8 minutes. Return chicken to pan; simmer until heated through, about 1 minute. Season with salt and pepper. (To store, place in airtight containers, and refrigerate up to 2 days; reheat over medium, about 10 minutes.)

1 pound boneless, skinless chicken breast (boneless, skinless)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons olive oil
1 small onion, diced
2 carrots, peeled and diced
8 ounces baby bella mushrooms, diced
4 cloves garlic, minced
6 cups chicken broth
1 teaspoon fresh sage, minced
1 teaspoon fresh thyme, minced
1 cup wild rice (uncooked)
3/4 cup heavy cream
1/4 cup chopped parsley

Steps:

  • Gather the ingredients.
  • Coat chicken breasts in salt and pepper, then cover in flour. Reserve excess flour for later.
  • Heat olive oil in a large pot or Dutch oven that can contain entire soup (about 8 cups). Add chicken to pot and cook for 2 minutes per side or until golden brown. Chicken will not be cooked through. Remove chicken from pot, leaving oil behind.
  • Add diced onions and carrots. Sauté for 2 to 4 minutes over medium heat or until vegetables are softened.
  • Stir in mushrooms, minced garlic, and flour until combined. Cook for another 2 to 3 minutes over medium-low heat.
  • Pour in chicken broth, stirring bottom of pot as you add broth to release any small bits that have stuck. Bring liquid to a boil.
  • Add chicken, sage, thyme, and wild rice. Cover pot, reduce heat to low, and cook for 45 minutes or until rice is tender.
  • Remove lid and take out chicken breasts. Chop or shred
  • Return chicken back to pot, then stir in heavy cream. Cook for another 5 minutes over medium-low heat until soup is heated through and slightly thickened. (If you like a thicker soup you can whisk together another 1/4 cup of flour with 3 tablespoons of water, then whisk into soup until thickened.)
  • Add more salt and pepper to taste and serve topped with chopped parsley.

3 cups water
1 (6 ounce) package uncooked wild rice
1 (14.5 ounce) can vegetable broth
1 (10 ounce) package frozen mixed vegetables
1 cup milk
1 ½ cups shredded American cheese

Steps:

  • Rinse and sort lentils, discarding any debris or blemished lentils.
  • Combine lentils and water in a medium saucepan. Bring to a boil; cover, reduce heat to low and simmer for 5 minutes. Let stand for 1 hour, covered. Drain and rinse lentils.

3 tablespoons unsalted butter (divided)
1 ½ pounds boneless, skinless chicken breasts
1 teaspoon kosher salt (divided)
¼ teaspoon ground black pepper
2 carrots (chopped)
3 celery stalks (chopped)
½ onion (chopped)
¼ teaspoon dried thyme
¼ teaspoon dried sage
¼ teaspoon dried rosemary
2 cloves garlic (minced)
1 cup wild rice
¼ cup all-purpose flour
¼ cup white wine
6 cups low-sodium chicken broth
¾ cup heavy cream

Steps:

  • Heat 2 tablespoons of butter in a large pot over medium heat. Add the chicken breasts, ½ teaspoon salt, and pepper.
  • Cook the chicken on each side for 3-4 minutes until browned, but not cooked through. Remove the chicken from the pot and set aside.
  • To the same pot, add the remaining 1 tablespoon of butter. Once melted, add the carrots, celery, and onion. Sprinkle with ½ teaspoon salt and the dried herbs. Cook until the carrots are tender, about 6-7 minutes.
  • Add the garlic, wild rice, and flour and cook for another minute. Pour in the wine and cook for 1-2 more minutes.
  • Gradually stir in the chicken broth.
  • Place the chicken back into the pot. Bring the mixture to a boil. Once boiling, turn down the heat and let it simmer, covered, for about 45 minutes until the wild rice is cooked and the chicken is fork tender.
  • Remove the chicken from the pot, shred it with 2 forks, and add the shredded chicken back into the pot.
  • Pour in the heavy cream and give the soup a good stir. Season the soup to taste with salt and pepper and serve.

⅔ cup uncooked wild rice
2 cups water
6 tablespoons butter
¼ cup finely chopped onion
¼ cup finely chopped celery
⅓ cup all-purpose flour
4 cups turkey broth
⅓ cup shredded carrot
2 cups chopped cooked turkey
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste
¼ cup chopped slivered almonds
½ teaspoon lemon juice
¾ cup half-and-half cream

Steps:

  • Bring the wild rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender but not mushy, 40 to 45 minutes. Drain off any excess liquid, fluff the rice with a fork, and cook uncovered 5 minutes more. Set the cooked rice aside.
  • Melt the butter in a soup pot over medium heat. Cook and stir the onion and celery until the onion is translucent, about 5 minutes. Stir in the flour, and cook until it turns a pale yellowish-brown color, 3 to 5 minutes. Gradually whisk in the turkey stock until no lumps of flour remain. Stir in the carrot. 1 ⅓ cups wild rice
1 (3 pound) whole chicken, cut into pieces
7 cups water
1 cup chopped celery
1 cup chopped onion
2 tablespoons vegetable oil
1 cup fresh mushrooms, sliced
2 tablespoons chicken bouillon granules
¾ teaspoon ground white pepper
½ teaspoon salt
½ cup margarine
¾ cup all-purpose flour
4 cups milk
¾ cup white wine

Steps:

  • Cook the wild rice according to package directions, but remove from heat about 15 minutes before it's done. Drain the excess liquid, and set aside.
  • In a stock pot over high heat, combine the chicken and the water. Bring to a boil, and then reduce heat to low. Simmer for 40 minutes, or until chicken is cooked and tender. Remove chicken from the pot, and allow it to cool. Strain the broth from the pot, and reserve for later. When chicken is cool, remove the meat from the bones, cut into bite size pieces, and reserve. Discard the fat and the bones.
  • In the same stock pot over medium heat, saute the celery and onion in the oil for 5 minutes. Add the mushrooms, and cover. Cook for 5 to 10 minutes, stirring occasionally, until everything is tender. Return the broth to the stock pot, and add the partially cooked wild rice. Stir in the bouillon, white pepper and salt; simmer, uncovered, for 15 minutes.
  • Meanwhile, melt margarine in a medium saucepan over medium heat. Stir in the flour until smooth. Whisk in the milk, and continue cooking until mixture is bubbly and thick. Add some of the broth mixture to the milk mixture, continuing to stir, then stir all of the milk mixture into the broth mixture.
  • Mix in the reserved chicken meat and the white wine. Allow this to heat through for about 15 minutes.

3 lbs broiler-fryer chickens, cut up
7 cups water
12 ounces mushrooms, Sliced
2 tablespoons cooking oil
1 cup onion, Chopped

2 tablespoons instant chicken bouillon granules
3/4 teaspoon white pepper
1/2 teaspoon salt
1/2 cup butter
3/4 cup flour
4 cups milk
3/4 cup dry white wine

Steps:

  • Cook wild rice according to pkg.
  • directions for 30 minutes; drain off liquid
  • and rinse. Set partially cooked rice aside. In a large Dutch oven or stockpot, combine the chicken and water and bring to boiling.
  • Reduce heat, cover and simmer for 35 to 40 minutes or until chicken is tender.
  • Remove chicken from broth and let stand until cool enough to handle. Skim fat from broth.
  • Strain and reserve broth.
  • Remove chicken meat from bones.
  • Cut into bite-size pieces.
  • In the same pot, cook mushrooms in hot oil for 4 to 5 minutes or until tender.
  • Add onion and celery.
  • Cover and cook for 5 to 10 minutes or until tender, stirring once (I'd probably do the onion and celery first, until translucent, and then add mushrooms and cover and cook). Remove from heat. Return broth to the stock pot. Add partially cooked wild rice to the chicken broth.
  • Stir in the granules, white pepper and salt. Bring to boiling and then reduce heat and simmer, uncovered, for 15 minutes.
  • In a large saucepan, melt the butter and stir in the flour until smooth.
  • Add milk all at once. Cook and stir until bubbly.
  • Stir into soup mixture. Stir in the chicken pieces and wine, and heat through.
