This hearty pasta dish from Linda Morten of Katy, Texas offers great garlic-basil flavor in a fraction of the time. Just think of how pretty this colorful dish will look on your table tonight! Tip: If you can't find basil and garlic goat cheese, buy plain goat cheese and add 1 teaspoon dried basil leaves to chicken and toss before cooking in butter.

3 ounces uncooked fettuccine
1 boneless skinless chicken breast (6 ounces), cubed
3/4 cup fresh sugar snap peas
2 teaspoons butter
1/2 cup grape tomatoes
1/2 teaspoon all-purpose flour
1 garlic clove, minced
1/8 teaspoon salt
1/8 teaspoon pepper
1/3 cup half-and-half cream
1/4 cup basil and roasted garlic goat cheese
2 tablespoons minced fresh parsley

Steps:

  • Cook fettuccine according package directions. Meanwhile, in a large skillet, saute chicken and peas in butter until chicken is no longer pink. Add tomatoes and garlic; cook 2 minutes longer. , Combine the flour, salt, pepper and cream; stir into chicken mixture. Bring to a boil. Cook and stir for 1-2 minutes or until thickened., Stir in goat cheese and parsley; cook and stir until cheese is melted. Drain fettuccine; toss with chicken mixture.

This is a recipe from The Pampered Chef that we recently had at a party in my home. It is so easy and so tasty. We've made it several times since then.

1 cup chopped broccoli
1/2 cup chopped carrot
1/2 cup chopped onion
1/2 red bell pepper, diced
1 garlic clove, minced
14 1/2 ounces chicken broth
2 cups cooked chicken, diced
1 tablespoon fresh basil, snipped
16 ounces alfredo sauce
grated fresh parmesan cheese (optional)

Steps:

  • Place broccoli, carrots, onion, bell pepper and garlic in saucepan. Add broth; bring to a boil. Cover; reduce heat and simmer 5 minutes or until veggies are crisp-tender.
  • Add chicken and Alfredo sauce to broth; simmer 5 minutes or until heated through. Remove from heat; stir in basil.
  • Ladle into bowls and sprinkle with Parmesan cheese, if desired.

4 boneless skinless chicken breasts
1 (16 ounce) jar alfredo sauce
1 (15 1/4 ounce) can whole kernel corn, drained
1 (15 1/4 ounce) can peas, drained
1 (4 1/2 ounce) can sliced mushrooms, drained
1/2 cup chopped onion
1/2 cup water
1/2 teaspoon garlic salt
1/4 teaspoon pepper
hot cooked linguine

Steps:

  • Put chicken in crock pot.
  • In a bowl, combine the Alfredo sauce, corn, peas, mushrooms, onion, water, garlic salt and pepper.
  • Pour over chicken.
  • Cover and cook on low for 6-8 hours.
  • Serve over linguine.

1 c chopped broccoli
2 c chopped carrots
1 small onion, chopped
1 red or green bell pepper, chopped
1 garlic clove, pressed
2 c diced, cooked chicken
1 jar alfredo sauce (standard size)
14 oz can chicken broth
grated fresh parmesan cheese

Steps:

  • 1. Place all vegetables in a stock pot; add garlic and broth.
  • 2. Bring to a boil, reduce heat and simmer 5 minutes or until vegetables are cooked.
  • 3. Add chicken and Alfredo sauce and heat through.
  • 4. Finish with grated fresh Parmesan cheese and fresh ground black pepper.

PENNE CHICKEN VEGETABLE ALFREDO

I went to a buffet in Tucson AZ that had a create your own pasta bar... Well i came up with this and loved it so much I came home and made for my family.

16 ounce(s) penne pasta cooked al dente
8 ounce(s) sliced mushrooms
1 bunch(es) asparagus, fresh
1 package(s) fresh baby spinich
- alfredo sauce ( see my other recipes)
- chicken breasts, boneless and skinless (one per person)

Steps:

  • This recipe requires Alfredo sauce which I have already posted the recipe for, please make this ahead of time.
  • Pre-cook your chicken breast prior to cooking pasta when chicken breast are done you may cut into small pieces or strips
  • Wash and dry all vegetables prior to cooking.
  • Cut asparagus spears in to bite size pieces.
  • In a large deep pan boil water for pasta ( this will also be your water to cook asparagus) When water is boiling take a metal strainer (if you have one) and lower the asparagus pieces in and cook for just five minutes. Take them out and drain and set aside.
  • Using the same water cook your pasta until al dente .
  • While pasta is cooking in a large skillet saute mushrooms and wilt spinach. Drain off an liquid and set aside.
  • When pasta is done drain all excess liquids from it and return back to deep pan, combine all vegetables and chicken and sauce and mix well. (you may need to warm sauce prior to adding to the pasta.) Serve with garlic bread and a side salad for a complete meal.
