CHICKEN TEMPURA

An airy but thick tempura batter for chicken. Delightfully crispy and keeps the chicken wonderfully juicy and tender inside. Great on vegetables or other meats too, and the best part is that it's not as greasy or doughy as other tempura batter recipes!

1 pound skinless, boneless chicken breasts
1 large egg, beaten
½ cup all-purpose flour
½ cup cornstarch
1 tablespoon lemon juice
½ teaspoon paprika
½ teaspoon baking soda
1 pinch salt
½ cup chilled club soda
½ cup oil for frying, or as needed

Steps:

  • Place chicken on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Pound out the butterflied chicken breasts until thin, and slice them in half lengthwise.
  • Prepare a large bowl with some ice water. Place a shallow bowl, for the batter, inside the large bowl; this is to keep the batter cold while cooking the chicken.
  • Prepare batter: place beaten egg into a large mixing bowl. Sift flour and cornstarch into beaten egg. Add lemon juice, paprika, baking soda, and salt. Add club soda and mix until ingredients are fully incorporated; a few lumps in the batter will aid in creating an airy texture, so be careful not to overmix.
  • Transfer the batter into the shallow bowl sitting on ice water.
  • Fill a pan with 1 inch of vegetable oil and heat over medium heat until glossy, or until the temperature of the oil hits 350 degrees F (175 degrees C).
  • Take the strips of chicken and fully coat them in the batter, adding them to the hot oil in sets of 2 or 3 at a time.
  • Cook chicken until golden brown and crispy and no longer pink in the centers, about 2 minutes per side, and transfer to a serving tray.

Easy Chicken and Vegetable Tempura image

You don't have to go to a Japanese restaurant for fresh, crispy tempura. Make it yourself with this delicious recipe!

1/4 cup honey
1/4 cup soy sauce
1 tablespoon chili garlic sauce
1 egg
1 cup all-purpose flour
1 cup cornstarch
1 teaspoon salt
1 1/4 cups cold water
2 cups vegetable oil
1 red bell pepper, cut in thin strips
1 bunch broccoli florets and stalks, cut into 4-inch pieces (about 3/4 lb)
3/4 lb boneless skinless chicken breast, cut into long thin strips
3 green onions, thinly sliced on the bias

Steps:

  • Heat oven to 200°F. Line large plate with several paper towels; set aside. Line rimmed baking sheet with cooking parchment or foil; set aside.
  • In small bowl, mix honey, soy sauce and chili garlic sauce; set aside.
  • In large bowl, beat egg with whisk or fork. Beat in flour, cornstarch, salt and cold water.
  • In 5-quart Dutch oven or 10-inch straight-sided skillet, heat oil over medium heat to 375°F. Dip bell pepper and broccoli into batter; let excess batter drip back into bowl. Cook in single layer in hot oil 3 to 4 minutes, turning once, until coating is crisp and golden brown. Drain on paper towel-lined plate, then transfer to pan and place in oven to keep warm. Wait for oil to reach 375°F again between batches.
  • Dip chicken pieces into batter; let excess batter drip back into bowl. Cook chicken, in batches if necessary, in hot oil 4 to 5 minutes, turning once, until coating is crisp and golden brown and chicken is no longer pink in center. Top chicken and vegetables with green onions; serve with sauce.

15 whole chicken wings (about 3 pounds)
1 cup cornstarch
3 large eggs, lightly beaten
Oil for deep-fat frying
1/2 cup sugar
1/2 cup white vinegar
1/2 cup currant jelly
1/4 cup reduced-sodium soy sauce
3 tablespoons ketchup
2 tablespoons lemon juice

Steps:

  • Cut chicken wings into 3 sections; discard wing tip section. Place cornstarch in a large bowl; add chicken wings, a few at a time, and toss to coat evenly. Place eggs in a shallow bowl; dip wings in eggs., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings until chicken is golden brown and juices run clear, about 8 minutes, turning occasionally. Drain on paper towels., In a small saucepan, combine the sugar, vinegar, jelly, soy sauce, ketchup and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Preheat oven to 350°. Place chicken wings in a greased 15x10x1-in. baking pan. Pour half of the sauce over wings. Bake, uncovered, for 15 minutes. Turn wings; top with remaining sauce. Bake until coating is set, 10-15 minutes longer.

Yummy! This simple batter is sooo delicious. I upped the amounts of seasoning a bit and it turned out perfectly. Keep in mind that your chicken pieces will need to be small enough to cook properly in the oil. If the pieces are too large, the tempura batter will burn before the chicken is done.

  • 1. take a large mixing bowl add all dry ingredients, then add the water, mix until thick enough to coat mixing utensil

1 lb chicken breast, chopped very fine
1 (14 ounce) can bean sprouts, drained
1 medium zucchini, shredded
2 carrots, shredded
1/2 tablespoon ginger, chopped fine
3 garlic cloves, chopped
3 tablespoons vegetable oil
1/3 cup flour
1 cup water, very cold
1 egg, beaten
1/2 cup soy sauce
1 tablespoon sugar
1 tablespoon rice wine vinegar (or other vinegar you have on hand)

Steps:

  • Combine flour, egg, water. This should make a thin batter. Adjust ingredients as necessary.
  • In a separate bowl, combine carrots, zucchini, garlic, ginger, bean sprouts and chicken.
  • Pour batter over vegetable and chicken mixture, gently stir until the mixture is covered with batter.
  • Heat oil over medium-high heat in frying pan.
  • Pour 1/2 cup portions of mixture in frying pan. Cook for 3-4 minutes on each side, until golden brown and cooked through.
  • Combine soy sauce, vinegar and sugar. Serve on the side with pancakes as a condiment.

2 whole boneless skinless chicken breasts, cut into strips
1/2 cup cornstarch
1 large egg, beaten
1 cup very cold water (Ice cold is best)
1 cup all-purpose flour
1 tablespoon five-spice powder
peanut oil, for frying
1 cup plum preserves
4 teaspoons rice wine vinegar
1 tablespoon minced shallot
1 tablespoon light brown sugar
1 teaspoon minced garlic
1/2 teaspoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 pinch five-spice powder
1/4 cup soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
3 tablespoons vegetable oil
3 tablespoons ginger, minced
1/2 cup sliced carrot, cut on the bias 1/4
1 1/2 cups snow pea pods, stringed
1/2 cup fresh porcini mushroom (thinly sliced, stemmed)
1/2 cup fresh shiitake mushroom (thinly sliced, stemmed)
1/4 cup sliced green onion, cut on the bias 1/4-inch thick

Steps:

  • Lightly coat the chicken strips in the cornstarch, shaking to remove any excess; set aside.
  • In a large pot or wok, preheat the oil to 360 degrees F.
  • In a bowl, beat the egg with the cold water; add the flour and 5 spice powder and mix lightly and quickly just until smooth. (Do NOT overbeat).
  • Dip the chicken into the batter, shaking to remove any excess.
  • In batches add to the hot oil and fry, turning, until golden brown on all sides, 2 to 3 minutes.
  • Remove and drain on paper towels.
  • Plum Sauce:.
  • In a saucepan, combine plum preserves, vinegar, shallots, brown sugar, garlic, ginger, pepper flakes, and 5-spice powder, and stir to combine. Bring to a boil.
  • Stir, reduce the heat and simmer until thickened and the flavors are married, 4 to 5 minutes.
  • Remove the plum sauce from the heat and adjust the seasoning, to taste. Let cool to room temperature.
  • Gingered Stir-Fried Vegetables:.
  • In a bowl, combine the soy sauce, sesame oil and sugar, and set aside.
  • In a large skillet or wok, heat the vegetable oil over high heat.
  • Add the ginger and cook, stirring, until aromatic, about 30 seconds.
  • Add the carrots and stir-fry until beginning to soften, 1 to 2 minutes.
  • Add snow pea pods and mushrooms and stir-fry until beginning to soften, 1 to 1 1/2 minutes.
  • Add the green onions and soy sauce mixture and stir to coat. Cook for another 45 seconds, stirring.
  • Remove from the heat and serve with the Tempura Chicken Fingers and Plum Dipping Sauce.

1/2 boneless skinless chicken breast
3 tablespoons flour, divided
1 egg yolk
1/2 teaspoon salt
1/4 cup ice water
1 teaspoon fish sauce
1 teaspoon ketjap manis
1/2 teaspoon soy sauce
1 dried habanero chile, crushed
peanut oil, to fry in

Steps:

  • Place the chicken in a plastic bag and add the sauces and the pepper. Mix thoroughly and refrigerate over night. A vacuum sealer will cause the sauces to penetrate more deeply but is not essential.
  • Mix the egg yolk, 1 tbs flour, salt, and ice water to form a thick batter. Adjust wet or dry ingredient as necessary.
  • Cut the chicken into ¾ inch strips three inches long.
  • Dredge the chicken strips in the batter and then in the remaining flour.
  • Put about an inch of oil in a wok and bring to high heat. Gently and carefully slide the chicken in and cook, undisturbed, for two minutes. Once again, gently and carefully, turn the chicken and cook for one more minute.

2 cups sushi rice
1/2 cup rice vinegar
1/4 cup sugar
1 teaspoon salt
1/2 pound frozen breaded chicken tenders
2/3 cup thawed orange juice concentrate
2 tablespoons reduced-sodium soy sauce
1 teaspoon minced fresh gingerroot
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon sesame oil
Bamboo sushi mat
1-1/2 cups sliced almonds, chopped and toasted
3 green onions (green portion only)
1 small sweet red pepper, julienned
1 large navel orange, peeled, sectioned and cut into thin strips

Steps:

  • In large bowl, wash rice in several changes of cold water until water is clear. Transfer to a large saucepan; add 2 cups water. Let stand for 30 minutes., Cover saucepan and bring to boil over high heat. Reduce heat to low; cook for 15-20 minutes or until water is absorbed and rice is tender. Remove from the heat. Let stand, covered, for 10 minutes., Meanwhile, in small bowl, combine the vinegar, sugar and salt, stirring until sugar is dissolved., Transfer rice to a shallow bowl; sprinkle with 1/3 cup vinegar mixture. Set aside remaining vinegar mixture for assembly. With a wooden paddle or spoon, stir rice with a slicing motion until cooled. Cover with a damp cloth to keep moist. (Rice mixture may be made up to 6 hours ahead and stored at room temperature, covered, with a damp towel. Do not refrigerate.), Bake chicken according to package directions; cool. Cut into long thin strips. In a large bowl, combine the juice concentrate, soy sauce, ginger, pepper flakes and oil; set aside 1/2 cup for serving. Add chicken to remaining orange mixture; toss to coat., Cover the sushi mat with plastic wrap. Spread 1/4 cup almonds in an even layer over plastic wrap to a 9-in. x 6-in. rectangle. Moisten hands with reserved vinegar mixture; press rice in a thin even layer over almonds., Arrange a small amount of chicken mixture, green onion, red pepper and orange strips about 1-1/2 in. from bottom edge of rectangle. Holding the bamboo mat, roll the rectangle away from you, being careful to enclose the filling with rice. Use the mat to help you squeeze the roll into a compact log. 1 onion, quartered
1 medium green bell pepper, sliced
1 red bell pepper, sliced
2 cups cauliflower florets
4 dill pickles, cut into 1 inch slices
1 (8 ounce) package tempura mix
1 quart oil for frying

Steps:

  • Thread skewer sticks with pieces of onion, red and green bell pepper, cauliflower and dill pickle, alternating with cubes of chicken.
  • Prepare tempura mix according to package directions. Transfer to a long dish for dipping skewers into. Heat 1 inch of oil in a large heavy skillet to 365 degrees F (180 degrees C).
  • Dip threaded skewers into the batter, coating all sides. Fry in hot oil for about 5 to 8 minutes on each side, or until golden.

Quick and easy sesame chicken

TEMPURA BATTER
1/2 cup(s) each cornstarch and flour
2 egg whites
1/2 cup(s) cold seltzer water
CHICKEN
1 pound(s) boneless skinless chicken thighs cut into chunks
2 teaspoon(s) sesame oil
4 clove(s) garlic minced
oil for deep frying
SAUCE
1/4 cup(s) each soy sauce and rice vinegar
3/4 cup(s) dark brown sugar
1 tablespoon(s) cornstarch
1/3 cup(s) water
1/2 tablespoon(s) black sesame seeds
rice or rice noodles for serving

Steps:

  • Mix all the ingredients for the sauce together and set aside.
  • Mix the ingredients for the tempura batter together. Add the chicken pieces and coat them with the batter. Bring oil to 350 degrees. Deep fry the chicken in batches until golden brown. Drain on paper towel
  • Add sesame oil to a skillet. Add the garlic and saute 30 seconds. Add the sauce and bring to a boil and cook until thickened. Add the chicken pieces and cook until warmed through.
  • Serve over rice or rice noodles for a complete meal.
