¾ cup flour
3 eggs
2 tablespoons lemon juice
1 cup panko breadcrumbs
½ cup parmesan cheese
1 tablespoon garlic powder
½ tablespoon lemon zest
salt, to taste
pepper, to taste
1 ¼ lb chicken tenders, package
olive oil cooking spray, or another preferred oil

Steps:

  • Preheat oven to 425°F (220°C).
  • Combine the egg and the lemon juice.
  • In a separate bowl, combine the panko bread crumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
  • Coat the chicken tenders in flour and shake off any excess. Then dredge in the egg and lemon juice mixture and allow excess egg to drip off. Coat with the panko bread crumb mixture, turning until evenly coated.
  • Lay chicken tenders flat on a baking sheet lined with aluminum foil and sprayed with nonstick cooking spray. Spray additional cooking spray over the chicken tenders to help them brown.
  • Bake for 20-25 minutes (or until browned and chicken is cooked all the way through), flipping once halfway through.
  • Serve with your favorite dip and some veggies for a fun appetizer or with garlic Parmesan roasted vegetables for dinner!

1 1/4 pounds chicken tenders (boneless skinless)
1/2 cup white flour
Salt and Pepper
6 tablespoons olive oil (or melted butter)
3 teaspoons minced garlic
1 teaspoon dried basil
1/4 teaspoon paprika
1 cup Panko
2/3 cup Parmesan cheese (freshly grated)
Famous Fry Sauce

Steps:

  • Trim the fat from the tenders.
  • Preheat the oven to 400 degrees F.
  • Set out three bowls. Fill one with the white flour, about 1/4 teaspoon pepper, & about 1/2 teaspoon salt. Stir,
  • Fill the next bowl with the olive oil or butter and minced garlic. Stir.
  • Place the basil, paprika, Panko, and parmesan cheese in the last. Stir.
  • Place the tenders in the flour mixture, then the garlic oil, then the panko mixture making sure to evenly and thoroughly coat each piece.
  • Place the tenders on the sheet and then place in the oven.
  • Cook for 15 minutes and then flip the tenders and cook for another 5-8 minutes or until the internal temperature of the chicken reaches 165 degrees F.
  • Remove and enjoy immediately with the dipping sauce!

I love chicken Parmesan, and I love hot, baked dips, so it was only a matter of time before I did a hot chicken Parmesan dip. I would make this again even if it were hard to do, but luckily it's super easy. Unlike actual chicken Parmesan where that crispy breading gets soggy super fast, this goes over crunchy toast so the textural experience is probably even better. Serve hot, warm, or room temperature, with lots of crispy crostini.

1 cup whole-milk ricotta cheese
1 pound skinless, boneless chicken breast halves
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
4 tablespoons olive oil, divided
3 tablespoons cold water
8 ounces grated mozzarella cheese
8 ounces grated Monterey Jack cheese
1 ounce grated Parmigiano-Reggiano cheese
2 cups prepared marinara sauce
½ cup panko bread crumbs

Steps:

  • Drain ricotta cheese in a mesh strainer set over a bowl in the refrigerator, 8 hours to overnight.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Season chicken with salt, pepper, and cayenne.
  • Heat 2 tablespoons oil in a pan over medium-high heat. Cook chicken breasts in the hot oil until browned and just barely cooked through, about 6 minutes per side. Steps:

  • Heat oven to 400°F. Spray large cookie sheet with cooking spray.

1/3 cup parmesan cheese
1 teaspoon parsley
1/4 teaspoon garlic salt
2 egg whites
1 tablespoon water
1 lb boneless chicken breast
ranch dressing

Steps:

  • Cut the chicken breast into strips--the size is your choice.
  • Crush the seasoned croutons and place in a dish.
  • Add the Parmesan cheese, parsley, and garlic salt--mix well.
  • In a separate bowl whisk the egg whites and water together.
