A very good casserole that makes a lot. This dish also freezes well, so it's great to make ahead and warm up later!

3 cups water
1 cup uncooked wild rice
3 cups cooked, cubed chicken breast meat
1 (10.75 ounce) can condensed cream of celery soup
1 (4 ounce) jar diced pimento peppers, drained
1 onion, chopped
2 (14.5 ounce) cans French-style green beans, drained
1 cup mayonnaise
1 cup water chestnuts, drained and chopped
salt and pepper to taste

Steps:

  • Combine water and wild rice in a saucepan, and bring to a boil. Reduce heat, cover, and simmer for 50 minutes, or until tender.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, toss together the cooked rice, chicken, cream of celery soup, pimentos, onion, green beans, mayonnaise, water chestnuts, salt, and pepper. Transfer to a 3 quart casserole dish.
  • Bake in the preheated oven for 25 to 30 minutes, or until heated through.

1 can mushroom, sliced and drained

2 cans French style green beans, drained
1 cup mayonnaise (do not substitute)
1 cup water chestnut, sliced and drained
salt and pepper

Steps:

  • Mix all ingredients and a large bowl.
  • Pour into a 13x9 baking dish.

When I had a baby 12 years ago a lady at my church brought me this dish. It was so good I asked for the recipe. I've seen the recipe in The Cotton Country Collection and several other cookbook but have not seen it on Recipezaar. I like to cook the rice in the water saved from cooking the chicken. I think it adds to the flavor of the dish.

1 (6 ounce) package uncle ben combination wild and white rice, cooked
1 (10 ounce) can cream of celery soup

1 (8 ounce) can water chestnuts, diced
salt and pepper

Steps:

  • Mix all ingredients.

My mom first made this recipe many years ago when my daughter was about 2 or 3. She loved it and asked for it often. We still love it today! It is easy to make and can be frozen and baked later.

1 can(s) cream of celery soup

3 eggs
salt and ground black pepper to taste
1 cup French fried onions
6 skinless, boneless chicken breast halves
6 slices provolone cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Beat eggs in a bowl; season with salt and pepper. Spread the French fried onions on a plate. Dip each chicken breast into the egg, then coat one side of the chicken breast with the fried onion. Place chicken with onions on top on a 9x13 inch baking pan.
  • Bake the chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place one slice of provolone cheese on top of each chicken breast and return the pan to the oven, baking until the cheese is melted, 3 to 5 minutes.

I made sure when I left that I had the recipe and lost it several months ago! I now have it again and am posting it before I have a chance to lose it again. It's nothing too fancy, but I like it!

2 1/2 cups chicken broth
4 cups cooked chicken
2 cups green beans, drained
1 can cream of celery soup
8 oz can water chestnuts, drained and sliced
1/2 cup mayonnaise
1/2 cup sour cream
1 Tbsp chopped onion

Steps:

  • Add rice and seasoning packet to chicken broth. Cook according to directions on rice package until tender.
  • Combine rice and remaining ingredients. Place in greased 2 quart casserole.
  • Bake at 350 degrees F for 45 minutes covered and 15 minutes uncovered.

  • In a large bowl, mix together well everything but the cheese and almonds. Tip into a 13X9X2 inch pan.

1 chicken, or 4 large breasts
1 (6-ounce) package Uncle Ben's long-grain and wild rice
1 (2-ounce) package slivered almonds
1 (1-pound) can french-style green bean, drained
2 tablespoons chopped onions
1 cup water chestnut, drained and sliced
2 tablespoons chopped pimientos
1 (4-ounce) can sliced mushrooms
1 (10 3/4-ounce) can cream of celery soup
1/2 cup mayonnaise
salt and pepper to taste

Steps:

  • Stew chicken or breasts; dice. Use chicken broth to cook 1 package rice. Toast almonds in butter and salt under broiler in oven. Mix remaining ingredients along with diced chicken and rice. Place in greased 2-quart casserole dish. Top with slivered almonds. (Almonds may be mixed in with the casserole, if desired.) If dry looking before baking, pour chicken broth over it. This casserole freezes very well. If frozen, thaw, then bake uncovered for 30 minutes at 350°.
