Chicken and Sausage Sandwiches with Sauteed Bell Peppers and German Potato Salad image

4 teaspoons olive oil
4 red bell peppers, seeded and sliced
1 large yellow onion, thinly sliced
4 reserved cooked chicken breast halves, sliced into thin strips
1 cup diced chorizo or andouille sausage
2 tablespoons balsamic vinegar
Salt and ground black pepper
4 long rolls (submarine or hoagie rolls)
6 small to medium Yukon gold potatoes, cut into 2-inch pieces
1/2 cup chopped green onions
4 slices turkey bacon, cooked until crisp
3 tablespoons apple cider vinegar
1 tablespoon olive oil

Steps:

  • For the sandwiches: Heat the olive oil in a large skillet over medium-high heat. Add bell peppers and saute 5 minutes, until tender. Remove half of the peppers from skillet and set aside.
  • Add onion and saute 3 minutes, until soft. Add sliced chicken and sausage and balsamic vinegar. Cook 2 minutes to heat through. Season, to taste, with salt and black pepper.
  • Using tongs, arrange mixture on rolls. Refrigerate remaining bell peppers for another recipe.
  • For the potato salad: To make the potato salad, place potatoes in a large saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Boil 8 minutes, until fork tender. Drain and while still warm, transfer to a large bowl and add onions, cooked bacon, vinegar, and oil. Season, to taste, with salt and black pepper.

2 tablespoons olive oil, divided
2 medium red bell peppers, seeded and sliced into thin strips
1 cup onion sliced into half-moons
Salt and freshly ground black pepper to taste
1 pound cooked shredded chicken
1 cup diced chorizo, andouille, or other cooked spicy sausage
2 tablespoons balsamic vinegar
4 long rolls (submarine or hoagie rolls)

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook, stirring, until softened, about 5 minutes. Season with salt and pepper. Remove the vegetables from the skillet and set aside.
  • Heat the remaining 1 tablespoon oil in the same skillet over medium-high heat. Add the chicken and cook until golden brown, 3 to 5 minutes. Add the sausage and vinegar and cook for 1 minute to heat through.
  • Using tongs, arrange the chicken mixture on the open rolls, top with the fried peppers and serve.

1 large Uncooked onion(s) yellow variety, thinly sliced
1 tsp Minced garlic
0.25 tsp Dried oregano
3 Tbsp Water
2 tsp Red-wine vinegar or cider vinegar
0.125 tsp Table salt or to taste
1 pinch(es) Black pepper freshly ground
12 oz Cooked chicken sausage(s) Italian-variety (4 links)
4 tsp Dijon mustard or other hot mustard, or to taste
4 item(s) Reduced calorie hot dog bun(s) grilled

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add peppers and onion; cook, stirring often, until nicely charred and tender, about 12 minutes.
  • Stir in garlic and oregano; cook 30 seconds until fragrant. Stir in water; toss to moisten mixture. Remove from heat and stir in vinegar; set aside.
  • Heat outdoor grill to medium-high (or grill pan over medium-high heat).
  • Grill sausages, turning, until nicely charred on all sides, about 10 minutes.
  • Spread 1 teaspoon mustard on each bun; add sausage and top each with about 1/3 cup pepper-onion mixture. Yields 1 sandwich per serving.

1 package (12 oz) fully cooked smoked chicken and apple sausages (4 per package)
3 tablespoons olive oil
1/2 cup refrigerated basil pesto (from 7-oz container)
2 tablespoons mayonnaise or salad dressing
8 slices (1/2 inch thick) Italian bread
4 slices (3/4 oz each) provolone cheese
1 large tomato, cut into 8 thin slices
16 fresh basil leaves

Steps:

  • Cut sausages almost in half crosswise, then in half lengthwise. In 12-inch skillet, heat 1 tablespoon oil over medium-high heat. Cook sausages in oil 5 to 7 minutes, turning occasionally, until golden brown. Remove from skillet; set aside.
  • Meanwhile, in small bowl, combine pesto and mayonnaise. Brush one side of bread slices with remaining 2 tablespoons oil. Turn 4 bread slices, oiled side down; spread each with pesto-mayonnaise.
  • For each sandwich, top pesto-mayonnaise with 1 cheese slice, 2 tomato slices, 4 basil leaves, 1 cooked sausage and 1 bread slice, oiled side up. Heat same skillet or a griddle over medium-high heat. Cook sandwiches 3 to 5 minutes, turning once, until golden brown and cheese is melted.

Bush's® chicken sausage sandwiches with beans and pickled pepper and onion relish

1 can (21.5 ounces) Bush's® Honey Chipotle Grillin' Beans®
1/4 cup water
3 tablespoons red wine vinegar
1 tablespoon plus 2 teaspoons sugar
1/4 teaspoon salt
1 large (9 oz.) red bell pepper, finely diced
3/4 cup yellow onion, finely chopped
1/8 teaspoon dried thyme
1/8 teaspoon red pepper flakes
4 (4-ounce) chicken sausages of choice
4 hot dog buns
3 tablespoons unsalted butter, melted
Dijon mustard, for serving

Steps:

  • In a medium saucepan, bring water, vinegar, sugar and salt to a boil. Add bell pepper, onion, thyme and red pepper flakes; reduce to a simmer and cook, stirring occasionally, until liquid is mostly evaporated, 10-12 minutes. Remove from the heat.
  • While relish is cooking, prepare a grill or grill pan for medium-high heat; lightly oil grate. Grill sausages, turning occasionally, until cooked through, 12-14 minutes.
  • When sausages are close to ready, brush insides of hot dog buns with butter, then grill, buttered-side down, until to lightly toasted, 2-3 minutes.
  • Place sausages in toasted buns; spread with mustard. Top with pickled pepper and onion relish and Bush's® Honey Chipotle Grillin' Beans®. Serve any remaining beans and relish on the side.
