1 box (4.7 oz) Betty Crocker® scalloped potatoes
2 cups hot water
2/3 cup milk
2 tablespoons margarine or butter
2 cups sliced fully cooked reduced-fat Polska-kielbasa sausage (from 1-lb ring)
1/2 cup Old El Paso® Thick 'n Chunky salsa (any variety)
2 cups Green Giant® Select® frozen broccoli florets

Steps:

  • 1.) Stir Sauce Mix, hot water, milk, margarine and Potatoes in 12-inch skillet or 3-quart saucepan. Heat just to boiling, stirring occasionally.
  • 2.) Add sausage and salsa; stir until well mixed. Reduce heat; cover and simmer about 20 minutes, stirring frequently.
  • 3.) Stir in broccoli. Cover; cook 8 minutes longer or until potatoes and broccoli are tender (sauce will thicken as it stands).
  • * Use your favorite veggie for the broccoli.

2 Tbsp oil
2 large potatoes, sliced
3 - 4 sausage, sliced diagonally 1/2 inch thick
1 medium onion, sliced thinly
1 c chicken breast, cut into chunks
1/2 c water
1 c campbell chicken soup
1 c fresh broccoli florets
1 small red bell pepper cut into strips

Steps:

  • 1. In a skillet, fry potatoes in oil. Place in paper towel and set aside.
  • 2. In the same skillet, fry sausage. Set aside.
  • 3. Still using the same skillet, saute onion and chicken breast chunks.
  • 4. Add water and chicken sauce. Mix gently. Simmer for 15 minutes or until chicken is tender.
  • 5. Add pre-fried potatoes and sausage. Stir in broccoli. Simmer for another 3 minutes or until potatoes and broccoli florets are cooked.
  • 6. Add red bell pepper. Simmer for another minute.
  • 7. Serve hot with rice.

1 cup diced onions

4 oz (half of 8-oz package) cream cheese, cubed and softened
1/2 cup shredded Parmesan cheese

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Melt butter in skillet; add chicken, onions and seasoning. Cook 8 to 10 minutes, stirring occasionally, until chicken is no longer pink in center.
  • Add potatoes and sauce mix (from potato box), and 2 cups water; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in broccoli; cook 4 to 6 minutes or until potatoes are tender and sauce is thickened.
  • Remove from heat; stir in cream cheese, and continue stirring until cheese is melted. Top with Parmesan cheese; serve immediately.

EASY KIELBASA SKILLET DINNER



Easy Kielbasa Skillet Dinner image

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.

  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.
