BAYOU STYLE CHICKEN SAUCE PIQUANTE

Cajun and Creole homes have been dining on Sauce Piquant for generations. Some like it with Alligator, some with chicken. The main ingredient can even be seafood. But the process is all the same. You must have the trinity (onion, bell pepper, and celery), and you must make a roux.

2 -3 tablespoons canola oil
2 lbs cut up chicken pieces
3 tablespoons creole seasoning
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup celery, chopped
3 1/2 cups chicken broth
1/2 cup bacon grease
1 cup flour
6 ounces tomato paste
kosher salt and black pepper, freshly ground
1/2 teaspoon red pepper
1/2 teaspoon sugar
1/2 cup green onion, sliced
1/4 cup parsley, chopped
hot cooked rice

Steps:

  • In a Lagre heavy pot heat the oil.
  • Dredge chicken pieces in Creole seasonings and 1/2 cup flour and brown in the oil, preferably in a cast iron pan.
  • Remove chicken and set aside.
  • Keep the heat going under your frying pan and add the bacon grease.
  • When grease is hot, slowly whisk in the flour.
  • Stir constantly until the roux turns the color of caramel, the darker the better. About 30 minutes.
  • Carefully add the onion, bell pepper, celery and stir, about 5 minutes until all is incorporated and vegetables are soft.
  • Reduce heat to medium.
  • Add Chicken broth, tomato paste, sugar, salt and pepper; cover and cook for 10 minutes.
  • Add the chicken and cook until the chicken is done.
  • Taste and reseason.
  • Add green onion and parsley.
  • Cover, reduce heat to simmer for 5 minutes. Serve over hot cooked rice.

A real Cajun recipe that I cook because I was married to a Cajun for many years. It's authentic and really good.

1/2 cup oil
1/2 cup flour
1 onion, yellow chopped
1 bell pepper, chopped
3/4 cup green onion, tops and bottoms chopped
1 (6 ounce) can tomato paste
4 garlic cloves, crushed
1/2 cup parsley
2 chicken, breast. cubed
salt
pepper
cayenne pepper
4 cups water

Steps:

  • Put oil in a large pot and heat to a high temperature. Turn down heat to low and add the flour. Stirring constantly, cook to make a roux a medium to dark brown color then add the tomato paste. If you cook to fast, it will burn easy. Once it is to the correct color and the tomato paste has been added, then add the yellow onions and bell pepper. Cook for about 2 minutes in the roux then add the chicken and garlic and cook another 2 minutes. Be sure to continually stir at this point. You can also add sausage now if you want, but be sure it is heavily smoked. Now is the time to add the water, salt, pepper, cayenne, green onion, and parsley. Bring to a slow boil and simmer for about 1 hour stirring occasionally. Serve over Aromatic Rice like a soup and a large scoop of rice in the middle of the bowl. ENJOY because it the real thing without going to Louisiana. You can make this Sauce Picante with Shrimp, and Turtle as the meat also. Use as much meat as you like.

For dinner this week, make Giada De Laurentiis' famous Chicken Piccata recipe, a comforting Italian classic made with lemon, butter and capers.

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  • In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  • Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

My husband used to claim this entree as his specialty until I made it and discovered how quick and easy it is. Our two sons love the juicy chicken while my husband and I enjoy the twist that brown sugar and mustard give the picante sauce.

1 tablespoon garlic powder
1 tablespoon vegetable oil

This recipe was adopted from a 1969 cookbook that belonged to my grandmother. I've adjusted the ingredients and amounts to reflect today's cooking habits. Hope you enjoy it!

6 lbs chicken
3 cups cooking oil
4 garlic cloves, finely chopped
3 (14 ounce) cans diced tomatoes
1/2 cup water
1 cup celery, finely chopped
1 cup bell pepper, finely chopped
3 lbs onions
3 tablespoons creole seasoning (Tony Chachere's)

Steps:

  • Heat 3 cups of cooking oil hot enough to cook chicken.
  • Cut chicken into 2 inch pieces, season with the creole seasoning and fry in oil until done.
  • Remove the chicken from the oil.
  • In another frying pan, saute onions,celery, bell pepper and garlic until opaque looking and slightly limp.
  • To the vegetable mixture, add your chicken which has slightly cooled.
  • Add tomatoes and water to the mixture, then lower the flame allowing mixture to simmer for for one hour, stirring about every 10 minutes.
  • Serve with rice.
  • If you like yours to be a bit thicker, use 2 cans of diced tomatoes and 1 can (8 ounce) tomato paste and 1 cup water.
