PINEAPPLE CHICKEN SALAD

Fifteen-minute Pineapple Chicken Salad, served on croissants or in a lettuce wrap, is a delicious and fun twist on typical chicken salad!

2 cups prepared rotisserie chicken (chopped into small pieces)
1/2 cup crushed pineapple, (canned in juice (not syrup), thoroughly drained/dried)
1/3 cup honey-roasted almonds ((Note 1))
1/2 cup thinly sliced celery ((~2 stalks))
2 tablespoons red onion (finely diced)
1/4 cup full-fat mayonnaise
2 tablespoons sour cream ((fat-free or light is great!))
1 tablespoon honey
1 and 1/2 teaspoons Dijon mustard
1 teaspoon freshly squeezed lemon juice
Salt and pepper
Serve with Croissants or other sandwich bread/rolls ((add some lettuce for a sandwich))

Steps:

  • In a large bowl, combine the chopped rotisserie chicken, thoroughly drained crushed pineapple, honey roasted almonds, sliced celery, and red onion. Stir to combine.
  • In a small bowl, whisk together the mayo, sour cream, honey, Dijon mustard, lemon juice, and a generous (or to taste) sprinkle of salt and pepper. I add 1/4 teaspoon salt and 1/8 teaspoon pepper. Pour dressing over salad.
  • Gently stir all of the ingredients together until combined. Taste and adjust for seasonings (salt, pepper, additional lemon, etc.)
  • Layer the chicken salad on a croissant or sandwich bread and add some lettuce. Enjoy immediately.

1 teaspoon lime zest, plus 2 tablespoons juice (from 1 lime)
2 teaspoons minced shallot
1 1/2 teaspoons honey
3/4 to 1 teaspoon minced habanero or jalapeno chile, stemmed and seeded
6 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1/4 cup finely chopped pineapple
1 bunch (3/4 pound) watercress, thick ends trimmed
5 ounces baby spinach
1/3 cup toasted cashews, chopped
3/4 pound cooked chicken breast, shredded

Steps:

  • In a large bowl, whisk together lime zest and juice, shallot, honey, and chile. Add oil and whisk until combined. Season with salt and pepper and stir in pineapple. Add watercress, spinach, cashews, and chicken; toss until greens are coated with dressing.

This recipe was taught to me years ago by my employer's personal chef. This chicken salad has been served at my parties for years and I get rave reviews every time. If you're worried about the garlic taste, you can serve some mints at the table as well. : )

2 6-oz. cans pineapple juice
lemon pepper seasoning to taste
3 boneless, skinless chicken breasts, chopped in the food processor until crumbled
1 8 oz. bag almonds, chopped in small pieces
garlic powder - the more the better
mayonnaise to combine

Steps:

  • 1. Poach chicken breasts in pineapple juice with plenty of lemon pepper seasoning (to taste) until cooked through and poaching liquid thickens into a slight glaze. Discard the poaching liquid and allow the chicken to cool.
  • 2. Run the chicken through the food processor until crumbly and then transfer to a bowl. Run almonds through the food processor until coarsely chopped (or finely) chopped. Combine almonds with chicken and add garlic powder - the more the better. Start with 1 tbsp. and work your way up. The garlic powder is what makes this chicken salad so addictive.
  • 3. Add mayonnaise to desired consistency. Serve as sandwiches (I prefer mini croissants) or place in a bowl surrounded by crackers or toasted french bread. Enjoy!

1 (8 ounce) can crushed pineapple, drained
2 stalks celery, finely chopped
1 cup creamy salad dressing (such as Miracle Whip®)
½ cup sweetened dried cranberries (such as Craisins®)
½ cup mayonnaise
½ cup chopped apple
¼ cup chopped green onion
1 tablespoon finely chopped fresh rosemary
1 tablespoon chopped fresh dill
1 pinch seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

Bromelain, the group of enzymes in fresh pineapple, is excellent at breaking down the connective tissues in thick, fibrous chicken breasts. In this simple marinade, grated pineapple completely alters the texture of the breast meat, resulting in something that's akin to luscious dark meat. Briefly marinating here is important: Leave it too long and the chicken will fall apart during cooking, becoming shreddy and a little gluey. Fifteen minutes is the sweet spot. The accompanying pineapple salsa is a bright topping for the juicy morsels of aromatic chicken and rice.

3 packed tablespoons dark brown sugar
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon fish sauce
2 tablespoons olive oil, plus more for cooking
1 teaspoon kosher salt (Diamond Crystal)
1 teaspoon garlic powder
1/4 to 1/2 teaspoon ground cayenne
1/2 teaspoon black pepper
1 cup diced fresh pineapple (1/2-inch chunks)
1/4 cup finely diced red onion
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely grated fresh pineapple, including accumulated juices
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch chunks
Cooked white rice, for serving

Steps:

  • In a large bowl, stir together the brown sugar, rice vinegar, soy sauce, fish sauce, 2 tablespoons olive oil, salt, garlic powder, ground cayenne and black pepper. Transfer 1 tablespoon of this marinade mixture to a separate medium bowl and add the diced pineapple, red onion and cilantro. This is your salsa; toss until well mixed and set aside.
  • Add the grated pineapple and its juices to the marinade mixture in the large bowl, then add the chicken and toss to coat. Set aside to marinate at room temperature for 15 minutes (and no longer).
  • Once the chicken is done marinating, heat a large nonstick skillet over medium-high and add enough olive oil to lightly coat the bottom of the pan. Add the chicken pieces, leaving any marinade behind, in a single layer so that they don't touch and let cook until the bottoms are browned, 2 to 3 minutes. Continue cooking, stirring occasionally, until browned on all sides and no longer pink on the inside, 4 to 5 minutes more.
  • Serve the chicken over rice and top with the reserved pineapple salsa.
