1 pound skinless, boneless chicken breast halves
½ cup pecans
⅓ cup red wine vinegar
½ cup white sugar
1 cup vegetable oil
½ onion, minced
1 teaspoon ground mustard
1 teaspoon salt
¼ teaspoon ground white pepper
2 heads Bibb lettuce - rinsed, dried and torn
1 cup sliced fresh strawberries

Steps:

  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Grill chicken 8 minutes on each side, or until juices run clear. Remove from heat, cool, and slice.
  • Meanwhile, place pecans in a dry skillet over medium-high heat. Cook pecans until fragrant, stirring frequently, about 8 minutes. Remove from heat, and set aside.
  • In a blender, combine the red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper. Process until smooth.
  • Arrange lettuce on serving plates. Top with grilled chicken slices, strawberries, and pecans. Drizzle with the dressing to serve.

Our favorite chicken salad has a few critical components: tender chicken, crunch, a little sweetness, and it needs to be easy to make. This recipe checks all the boxes. We have shared our basic recipe as well as a few suggestions for making it extra special. We highly recommend the toasted sesame oil - it adds a lovely umami flavor to the dressing. A little goes a long way, so only add a few dashes (not more than a 1/4 teaspoon). When we have the time, we poach chicken breasts for this salad. 3 cups (480 grams) chopped or shredded cooked chicken, see our recipe for perfect poached chicken
1 cup (120 grams) chopped celery
4 tablespoons chopped fresh herbs like chives, parsley, and basil
1/4 cup (40 grams) lightly toasted nuts like sliced almonds, walnuts, pecans or pine nuts
1/4 cup (40 grams) dried fruit like golden raisins, cranberries, dates, or blueberries
1/2 cup (110 grams) mayonnaise, see our homemade mayo recipe
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon fine sea salt, plus more to taste
1/4 teaspoon fresh ground black pepper
2 to 4 small dashes toasted sesame oil (scant 1/4 teaspoon), optional
1 to 2 teaspoons jam, optional

Steps:

  • Combine the chicken, celery, herbs, nuts, dried fruit, and fresh fruit (if using) in a medium mixing bowl.
  • In another small bowl, stir the mayonnaise, lemon juice, mustard, salt, and the black pepper together. Taste then add the optional ingredients. Toasted sesame oil adds umami (a little goes a long way), and the jam sweetens the dressing up a bit.
  • Toss the dressing with the salad. Taste then adjust with more salt and pepper. Store, covered tightly, in the refrigerator 3 to 4 days.

2 tablespoons extra-virgin olive oil
6 medium shallots
4 medium-large parsnips, peeled and cut into 1-inch chunks
1/3 cup apricot preserves
2 tablespoons whole-grain mustard
1 teaspoon ground ginger
1/2 teaspoon ground cumin
8 medium skin-on, bone-in chicken thighs
Kosher salt and freshly ground pepper
1/2 cup pitted prunes, roughly chopped
1/2 cup dried apricots, roughly chopped
1 tablespoon apple cider vinegar

Steps:

  • Position a rack in the center of the oven and preheat to 425. Heat the olive oil in a large ovenproof skillet over high heat. Add the shallots and parsnips and cook until golden, shaking the pan, 2 minutes.
  • Whisk the apricot preserves, mustard, ginger and cumin in a bowl. Season the chicken with salt and pepper; toss with the apricot glaze.
  • Scatter the dried fruit in the skillet. Place the chicken, skin-side up, on top. Add 1/4 cup water and bring to a boil. Cover and cook until heated through, 6 minutes. Uncover and transfer the skillet to the oven. Cook until the chicken and vegetables are tender and golden, 20 to 25 minutes.
  • Push the chicken to the side of the skillet, then stir the vinegar into the pan juices (add up to 2 tablespoons water if the sauce is too thick). Serve from the skillet.

1 pound chicken breasts or 1 pound left over cooked chicken
3 ribs of celery thinly sliced
1 cup of walnuts - pecans, and almonds also work well
1/2 cup dried cherries, or craisins
1/2 cup mayonnaise

Steps:

  • If you don't already have cooked chicken available, you can poach the poultry in water, or chicken broth. Poach chicken breasts by placing in a pot, and covering with water or broth, cook over medium heat for approximately 30 minutes, or until the chicken is fully cooked. Remove chicken from water, and when cool enough to touch shred the chicken breasts and place into a bowl. In a medium sized bowl add sliced celery, nuts, dried fruit, and mayonnaise. Stir to combine mixture well. Season to taste with salt and pepper. Store in a covered container for up to 3 days before serving. This Chicken Salad can be served on a bed of lettuce, or served in fancy rolls, or even on plain bread. I personally love to serve this chicken salad with a nice bowl of soup. I don't think you can beat that soup and sandwich combination.

Dried cranberries can be substituted for the raisins -- diced celery can be substituted for the onions!   • Mix mayonnaise and mustard in a medium bowl. Add chicken (or turkey), green onions (or celery) and toasted almonds. Mix well. Stir cooled fruit into chicken mixture. Add salt and pepper to taste. Chill if desired, or serve immediately.
  • Serve over salad greens as a main dish salad, or in pita pockets or on multi-grain bread as a sandwich filling.
  • Cook time is recommended chill time!
  • NOTE: 1 1/2 pounds chicken breasts = 2 cups cooked, cubed chicken, or a 3 pound whole chicken yields about 4 1/2 cups cooked/diced.
