2 teaspoons paprika
1 teaspoon onion powder
1/2 teaspoon salt
1-1/4 pounds boneless skinless chicken breasts
1/3 cup reduced-fat mayonnaise
2 tablespoons lemon juice
2 medium tart green apples, chopped
1 cup dried cranberries
1 small onion, chopped
Lettuce leaves

Steps:

  • In a small bowl, combine the paprika, onion powder and salt; rub over chicken. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack., Grill chicken, uncovered, over medium heat or broil 4 in. from the heat for 3 to 4-1/2 minutes on each side or until a thermometer reads 170°. When cool enough to handle, cut chicken into cubes., In a large bowl, whisk mayonnaise and lemon juice until smooth. Stir in the chicken, apples, cranberries and onion. Serve on lettuce-lined plates.

This is a great sandwich filling that they make at the diner in the hospital where I work, but I fancied it up a bit with some green onions and pecans. A great way to use up leftover chicken. Delicious!

2 cooked chicken breast halves, chopped
½ cup mayonnaise, or to taste
2 green onions, chopped
½ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
¼ green apple, shredded
¼ cup chopped pecans
1 tablespoon lime juice
1 pinch salt and black pepper to taste
¼ teaspoon dried dill weed

Steps:

  • Mix together the chicken and mayonnaise in a bowl, stir to coat well, then stir in the green onions, dried cranberries, apple, pecans, lime juice, salt, pepper, and dill weed. Serve immediately, or refrigerate several hours or overnight (the flavor just gets better).

This is my favorite salad ever. The blue cheese gives just a hint of the flavor that is brought out by the balsamic dressing. This salad is almost identical to the TGI Fridays pecan crusted salad, but the chicken is not rolled and breaded in pecans and bread crumbs and fried. It's a healthier version of it.

1 (10 -15 ounce) bag romaine lettuce
1 (5 ounce) package dried cranberries
1 (11 ounce) can mandarin oranges
1/4 cup pecans
2 chicken breasts
balsamic vinaigrette (Newman's Own is great)
1 (4 ounce) package of crumbled blue cheese

Steps:

  • Grill the chicken on an outdoor grill or a Foreman grill for about 9 minutes.
  • Wash the lettuce and cut it up. Mix in the chicken, cranberries, oranges, pecans. Sprinkle blue cheese over top.
  • Drizzle the balsamic vinaigrette over the lettuce to taste.
