These classic chicken salad sandwiches are open for interpretation. Depending on your level of prep, you can create them using either home-cooked chicken or a rotisserie chicken from the store. From there, the creativity is all up to you. Make them yours, make them delicious, make them again!

CHICKEN SALAD & CUCUMBER SANDWICH
This is so easy, so summer and so good!! I made these the other day and everyone loved them. They have a nice crunch to them with the cucumbers and onion and go well with chips, soup or a salad. I made this with JAP's, Rose Mary Mogan's - Hidden Valley Ranch Crunchy Peas & Pepper Salad. Picture below. Pictures are mine.

Steps:
- 1. In a medium bowl, add chicken and onions. Mix to make chicken flakey. Add in mayonnaise until well blended.
- 2. Lay 4 slices of bread down. (I spread a little mayo on the slices) Top each with the chicken salad. (I add a little salt & pepper) Cover chicken salad with slices of cucumbers, about four slices, then top cucumbers with tomato slices ( I like mine without tomato )
- 3. Then add the alfalfa sprouts on top of the cucumbers. Add as much as you like. Top with remaining bread.
- 4. I like to cut my sandwiches in half and add a slice of cucumber on top with a toothpick if serving guests. Makes a pretty presentation.
- 5. I made this with Rose Mary's salad (pictured) and delish! But also goes well with chips, fruit or a light soup.

- Mix sour cream, mayonnaise, lemon juice, lemon zest, salt, and pepper together in a bowl until thoroughly combined. Add cucumber, dill, cilantro, chives, and almonds and combine. Add chicken and combine thoroughly with dressing.
- Create sandwiches with your bread; cut sandwiches into fourths.

CRAIG CLAIBORNE'S CHICKEN SALAD SANDWICH
Originally printed in 1981, here is Craig Claiborne's take on the classic chicken salad sandwich. In his version, a combination of mayonnaise (preferably homemade) and yogurt is used which yields a lighter, tangier sandwich filling. He calls for using poached chicken, but the leftover roast chicken from last night would work beautifully as well.

- Strip the cooked chicken meat from the bones and cut it into bitesize pieces. There should be about 3 1/2 cups. Put the meat into a mixing bowl. Add the celery, onion and capers.
- Blend together the yogurt, mayonnaise and vinegar and add to the chicken mixture. Add salt, pepper, parsley and scallions and toss to blend.
- Use the bread to make sandwiches, garnished, if desired, with pickle strips, radishes, cherry tomatoes or any garnish of your choice.
