1 medium ripe avocado, peeled and cubed
3/4 cup shredded cheddar cheese
1 cup ranch salad dressing
6 flour tortillas (10 inches), warmed

Steps:

  • Preheat oven to 350°. Transfer chicken to an 8-in. square baking dish. Drizzle with lime juice. Sprinkle with garlic salt and 1/3 cup cilantro; top with onion. Bake, covered 25-30 minutes or until a thermometer reads 165°. Cool 10 minutes., Meanwhile, in a large bowl, combine tomatoes, avocado, cheese and remaining cilantro. Chop chicken; add to bowl. Boneless skinless chicken breasts, cut into bite size pieces, cooked and covered in Buffalo sauce, combined with crisp bacon, diced tomato, and ranch dressing, are wrapped in heated flour tortillas. You can increase or decrease the amount of Buffalo sauce to your taste and also add shredded Cheddar cheese to your wraps if desired.

1 pound thin-sliced bacon
2 tablespoons bacon drippings
3 pounds skinless, boneless chicken breast halves, cut into bite size pieces
¼ cup Buffalo wing sauce
2 tablespoons butter, melted
12 (10 inch) flour tortillas
1 cup diced fresh tomato
¾ cup ranch dressing, divided

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, 10 to 15 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble when cool.
  • Drain off all but 2 tablespoons of the bacon drippings, and cook and stir the chicken breast chunks until browned, about 10 minutes. Cover the skillet and allow chicken to continue cooking until no longer pink inside and the juices run clear, about 10 more minutes. Stir in the Buffalo sauce and melted butter until chicken is thoroughly coated. Stir in the crumbled bacon. Keep the mixture warm.
  • Heat the tortillas, one at a time, in a large ungreased skillet over medium heat until they begin to form air bubbles and small brown spots. Fill each each warmed tortilla with about 1/3 cup of the chicken filling and a tablespoon or so of tomatoes; sprinkle the tomatoes with 1 tablespoon of ranch dressing. Wrap the tortilla around the filling; serve warm.

¼ cup BBQ sauce
4 slices cooked bacon

6 spinach-garlic-pesto tortillas

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.

1/4 cup shredded cheese, blend (I like to combine cheddar and monterey jack with jalapenos)
1/4 tomatoes, chopped

Steps:

  • Preheat barbecue to medium heat.
  • Brush chicken with oil.
  • Grill 6-8 minutes per side or until chicken is cooked through.

2 lbs chicken breasts, grilled and chopped
1 head ice burg lettuce, shredded
2 tomatoes, chopped

  • Grill chicken and season with favorite seasonings. Shred lettuce and chop tomatoes. Cook bacon and then chop.

The combination of all the ingredients are very tasty. You could use whatever toppings you would like if your tastes differ. The prep time does not include cooking chicken - leftovers work great or I just cook up some boneless, skinless breasts right before making dinner.

1/2 cup freshly squeezed lime juice (3 limes)
1/2 cup freshly squeezed orange juice (2 oranges)

2 garlic cloves, grated
1 teaspoon fresh ground black pepper
1/4 teaspoon ground cayenne pepper
2 tablespoons salt
1 lb boneless skinless chicken breast
1 medium sweet onion, cut into strips
2 bell peppers, cut into strips
1 tablespoon olive oil
8 ounces sour cream
dry ranch dressing mix
dried chipotle powder (like Dean Jacob's Chiptole grinder mill)
lettuce
4 large flour tortillas
1 tomatoes, chopped
1 cup shredded monterey jack pepper cheese

Steps:

  • Mix together tequila, lime juice, orange juice, lime zest, orange zest, chill powered, garlic, ground black pepper, Cayenne Pepper, and ½ teaspoon of salt.
  • Butterfly chicken and place in a zip lock bag with ¾ of the marinade and the remaining salt, shake together and let marinade over night. Save remaining marinade.
  • Mix ranch dressing mix and chipotle seasoning into sour cream, to taste. Let sit 1 hr or overnight for flavors to blend.
  • Grill chicken and then cut into strips.
  • Meanwhile, sauté bell pepper and onion in oil, until tender crisp about 5 minutes. After about 2 minutes add remaining marinade and simmer until marinade is gone.
  • Serve chicken and pepper/onion mixture on warm flour tortillas with chipotle ranch sauce, lettuce, tomato and shredded cheese.

1/2 lb bacon, chopped (my local grocer carries raw "bacon pieces" that we use for this)
1 1/2-3 lb chicken breasts, cut no bigger than about 3/4-1 inch pieces
2 clove garlic, minced
1/2 dry ranch dressing mix
1/4 c onion, diced
1/4 c bell pepper, diced (optional)
1 c shredded cheese (your favorite, we choose pepper jack or sharp white cheddar)
1/2 c ranch dressing (approx)
sandwich rolls, wraps, hoagie rolls, etc. whatever you want to build this on
salt and pepper to taste
lettuce, sliced tomato, chopped scallions or onion, banana peppers, etc (all optional)

Steps:

  • 1. In a large skillet, cook the bacon until done, reserving the grease. Set aside on a paper towel to absorb excess fat.
  • 2. In the same pan, add the bacon grease, garlic, diced onion, diced pepper, chicken and the dry ranch dressing mix. Cook until the chicken is done and starting to lightly brown. Taste and add salt and pepper if necessary. Set aside to rest on a paper towel to blot off any extra grease.
  • 3. Assemble the sandwiches by scooping on some chicken, a sprinkle of cheese, drizzle some ranch dressing, a scoop of bacon pieces, a sprinkle of cheese, and if you choose, your veggies and top off with a drizzle of ranch dressing.
