⅔ cup pesto sauce
8 oz chicken, cooked, shredded
½ cup shredded parmesan cheese
kosher salt, to taste
2 eggs, beaten
fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry sheets on a lightly floured surface to a 9x12-inch (23x30 cm) rectangles.
  • Spread the pesto sauce over the sheets using a spatula or spoon. Top with the shredded chicken, Parmesan, and salt.
  • Starting from a short end, carefully roll up the puff pastry to form logs.
  • Slice the logs into ½-inch (1 cm) rounds and arrange them on the prepared baking sheet, spacing 1 inch (2 cm) apart. Brush with egg wash.
  • Bake for 20-25 minutes, or until golden brown.
  • Sprinkle with chopped parsley, then serve.

1 tub (8 oz.) PHILADELPHIA 1/3 Less Fat than Cream Cheese
1 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1 cup chopped cooked chicken
1 plum tomato, seeded, finely chopped
2 green onions, finely chopped
3 Tbsp. chopped fresh cilantro
6 large whole wheat tortillas (10 inch)

Steps:

  • Mix reduced-fat cream cheese and shredded cheese in medium bowl until blended. Stir in all remaining ingredients except tortillas.
  • Spread onto tortillas; roll up. Wrap individually in plastic wrap. Refrigerate 2 hours.
  • Heat oven to 375°F. Unwrap roll-ups. Trim and discard ends. Cut each roll-up into 10 diagonal slices. Place, cut sides up, on baking sheet sprayed with cooking spray.

8 oz cream cheese, softened
3/4 c real bacon bits or crisp cooked bacon chopped
1/4 c green onion or sweet onion minced
1 c finely chopped chicken...i use rotisserie
1 c fresh shredded cheddar cheese
1 3/4 Tbsp dry ranch dressing seasoning
2 Tbsp milk
Dash accent
3-4 large tortilla shells

Steps:

  • 1. In a medium bowl, thoroughly mix all ingredients except the tortillas.
  • 2. Lay out tortilla and spread mixture to edges evenly. Begin rolling firmly, then wrap in plastic wrap and refrigerate for a couple hours.
  • 3. When ready to plate, remove from refrigerator and with a serrated knife gently slice ends off.
  • 4. Slice into desired thickness and plate. Now the yummy nuggets are ready to devour! P.S I like serving these at room temperature, but you can serve them straight from the fridge as well.

8 boneless skinless chicken breasts
6 ounces sliced ham
8 ounces smoked bacon
4 eggs beaten
3 diced pickles (dill, sweet, or sours, your preference)
1/2 cup butter
3 tablespoons flour
2 cups chicken stock
2 tablespoons chopped tarragon

Steps:

  • Place chicken in between plastic wrap and pound out until 1/4-inch thick. Place 1 slice of ham and 1 slice of bacon onto each breast of chicken. Lightly scramble the eggs and let cool. Divide eggs evenly over chicken and spread out. Top with diced pickles and roll into pinwheels. Once chicken is rolled, tie with string to secure. Heat the butter in a saute pan and brown chicken rolls. Remove chicken rolls from the pan and set aside. Add flour to the same saute pan, and cook until light brown. Add the chicken stock, making sure to stir out any lumps. Return chicken to pan and place in a preheated 350 degree oven for 1 hour. Remove from oven and sprinkle with chopped tarragon. Slice each breast into 4 pieces and serve with 2 tablespoons of sauce.

1 green pepper, thinly sliced
2 cloves garlic, minced
1 teaspoon finely chopped thyme leaves

Mango salsa, recipe follows
Asparagus, recipe follows
1 mango, diced
4 cloves garlic, minced
1 tablespoon lime juice
1 red onion, diced
1 teaspoon salt
1 teaspoon corn syrup
6 bacon strips
1 bunch asparagus spears
1 clove garlic, minced
Olive oil, for sauteing

Steps:

  • In a large pan, saute red peppers, green peppers, garlic, thyme, and rosemary until the vegetables begin to soften. Remove from the heat and allow to cool while you prepare the chicken. Pound the chicken breasts in between 2 pieces of plastic wrap until they are flattened. Place the sauteed vegetables in the center and roll the breast around them. Secure closed with a toothpick, if necessary.
  • Heat a large saute pan over medium heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the stuffed chicken and cook until all sides are browned and the chicken is cooked through.
  • Combine the mango, garlic, and the red onion and place in a medium-sized bowl. Add salt, lime juice, and corn syrup to the bowl and thoroughly combine. Serve the salsa over the sauteed chicken.
  • In a medium saute pan, cook the bacon until it is crisp. Drain and crumble the pieces into a bowl. In a separate pan, saute asparagus with garlic until the asparagus is tender. Add crumbled bacon on top of the spears.

2 cups shredded Monterey Jack
1 cup chipotle salsa
2 cups chopped rotisserie chicken meat, still warm from store or warmed in microwave

  • Heat a large skillet over medium heat. Add a flour tortilla, blister it on 1 side then turn it over. Scatter cheese on top and cook 1 minute. Remove to cutting board. 8 large sun-dried tomato tortillas
16 ounces cream cheese, softened
1 (1 1/4 ounce) packet taco seasoning
2 cooked boneless skinless chicken breasts, chopped fine
15 ounces black beans, drained and rinsed
2 -3 green onions, chopped
1 large tomatoes, seeded and chopped
1 cup tex-mex cheese

Steps:

  • In a medium bowl, mix together the cream cheese and taco seasoning until well blended.
  • Spread evenly onto the tortillas.
  • Next add the black beans, chicken, onions tomatoes and cheese in a thin layer over each tortilla - don't add too much of the toppings or else they will be hard to roll up.
  • Roll tightly in cling wrap and refrigerate for 8 hrs or overnight.
  • Slice into 1 inch slices and serve.
  • Note - it is easier to slice if you place them in the freezer for 1/2 hr or so first.
  • ** I only use about 1/2 - 3/4 of the can of beans, it all depends on how much you like them **.

1 - 1 1/2 c craisins (dried cranberries) (lightly chopped)
1 3/4 c feta cheese (crumbled)
1 3/4 c baby spinach (lightly chopped)
TORTILLAS
4 large tomato tortillas
4 large whole wheat tortillas
4 large spinach tortillas
OPTIONAL:
pecans (chopped), blue cheese (crumbled), shredded lettuce
cooked crumbled bacon
shaved ham and thinly sliced swiss cheese

Steps:

  • 1. Combine the Spread ingredients together. Set aside.
  • 2. Cook the chicken, cool it, chop it up. Set it aside.
  • 3. Chop the onions, Craisins, and spinach. Set aside. Crumble the feta cheese. Set aside.
  • 4. Spread the Spread on each of the tortillas. Sprinkle some of each of the toppings on each of the tortillas.
  • 5. Very tightly (yet gently) roll up the tortillas. Snuggly wrap them with Seran Wrap. Refrigerate for 2 hours.

You can make them a day or two ahead and take them unsliced if you like, finishing them up in your host's kitchen. Or you can slice them just before you leave and arrange...

1 8 oz. pkg cream cheese, room temp.
1 12 oz. can(s) chicken, well-drained
1 4 oz. can(s) diced green chilies, well-drained
1 4 oz. can(s) black olives, well-drained, chopped
1 4 oz. jar(s) pimientos, well-drained (optional)
2 or 3 green onions, chopped, including tops (optional)
garlic salt (or regular) and pepper, to taste
5 or 6 10" flour tortillas, room temp. (thicker tortillas resist sogginess better)
1 c cheddar cheese, shredded (or whatever cheese you prefer)

Steps:

  • 1. Blend first four ingredients and half the pimientos together. Use a food processor to really make it easy, but don't over-process. Just pulse as you add each ingredient. Add the rest of the pimientos and the green onion and pulse a couple of times, but you want them to show-for some color-so don't overdo it. Season with garlic salt and/or salt and pepper. *The pimientos give the mixture a distinctive, slightly spicy flavor, so you might want to use less or substitute something else, like chopped tomatoes or red bell pepper, for color.
  • 2. Lay out a piece of Saran Wrap on a flat surface and put one tortilla in the middle. Put a scoop of the chicken mixture in the middle of the tortilla and spread it out pretty thinly, staying at least ½-inch away from the edge and 1-inch away from the edge farthest from you. Sprinkle lightly with shredded cheese. Roll the tortilla away from you, beginning by tucking the first edge in pretty small but then just roll firmly, not squeezing or getting it too tight. Avoid oozing. (Assume that your first tortilla will be for you and your helper to eat! ;-) By the second try, you'll have the hang of it!) Roll the tortilla into the piece of Saran Wrap and twist the ends of the wrap to keep it from drying out. When you've used all the filling, you and your helper get to lick the bowl! Then put your tortilla rolls in the refrigerator for AT LEAST two hours to get firm. (You can make these a day or two before and slice them right before the party.)
  • 3. When you're ready to serve, slice the tortilla rolls into bite-sized pinwheels, about 1" wide. Use a really sharp knife so you don't flatten the pinwheels. A serrated knife, like a bread knife, works best. The ends of the rolls will be ugly, so discard those. (Yeah, right! ;-), you know where to throw them, right?) arrange the pinwheels on a plate with a little fresh parsley or lettuce leaves before serving. Makes about 50 1" pinwheels. This recipe is really adaptable. Use ingredients you like or that you have on hand. Leave out the chicken and just use the cream cheese-really good! Or use ham instead of the chicken, or lay thin-sliced luncheon meat on top of the cream cheese. It's hard to mess them up.

1 (8 ounce) can refrigerated crescent dinner rolls
1/2 cup cooked chicken
2 -3 tablespoons jalapeno chiles
4 ounces cream cheese, softened
2 tablespoons green onions (2 medium)
1/4 cup fresh cilantro
1/8 teaspoon salt

Steps:

  • Heat oven to 375°F In a small bowl, mix all ingredients except dough until well combined; set aside.
  • Unroll dough; separate into 2 long rectangles. Place 1 rectangle on long cutting board; press perforations to seal. Spread half of cream cheese mixture on dough rectangle to within 1/2 inch of edges.
  • Starting with one long side, roll up rectangle; press seam to seal. Cut roll into 16 slices; place slices, cut side down, on ungreased cookie sheet. Repeat with remaining dough rectangle.
  • Bake at 375°F for 14 to 16 minutes (or until light golden brown). Immediately remove from cookie sheet. Serve warm.

1/2 cup chopped cooked chicken, finely chopped
3/4 teaspoon hot pepper sauce
2 ounces cream cheese, softened
1/4 cup crumbled blue cheese (1 ounce)
2 tablespoons chopped fresh chives

Steps:

  • Heat oven to 350 degrees. Spray cookie sheet with cooking spray. Unroll dough and separate into 4 rectangles; firmly press perforations to seal.
  • In small bowl, mix chicken and hot pepper sauce until well coated. Spread 1 T cream cheese over each rectangle to within 1/4 inch of edges. Sprinkle evenly with chicken, blue cheese and chives.
  • Starting with one short side, roll up each rectangle; press edges to seal. With serrated knife, cut each roll into 6 slices; place cut side down on cookie sheet.
  • Bake 13 to 17 minutes or until edges are golden brown. Serve warm.

BBQ chicken pizza reimagined!

Number Of Ingredients 8

14-16 oz refrigerated pizza dough (Pillsbury canned pizza dough will work)
1/2 cup sweet BBQ sauce, plus extra for serving
3/4 cup shredded mozzarella cheese, divided
3/4 cup shredded cheddar cheese, divided
1 cup cooked chicken, finely chopped
3 tablespoons red onion, finely chopped
3 slices bacon, cooked, drained, and finely chopped (microwavable bacon is fine)
Chopped fresh parsley leaves for garnish

Steps:

  • Preheat oven to 400°. Grease 8 or 9 inch round baking pan; set aside.
  • Lightly flour a clean work surface and roll out the room temperature pizza dough to approximately 18x10-inch rectangle.
  • Spread BBQ sauce over the surface of the dough leaving a 1/2-inch border all around the edges.
  • Sprinkle 1/2 cup of mozzarella cheese and 1/2 cup cheddar cheese over the dough, then top with chicken, onion, and bacon.
  • Starting on the long side, roll the dough away from you into a tight cylinder, tucking and pulling as you go. Pinch the seams together to seal.
  • Cut into 8 equal slices and place cut side down in the prepared pan.
  • Bake for 25 minutes. Sprinkle the remaining mozzarella and cheddar cheese on top and continue baking for another 5 minutes or until the cheese is melted.
  • Garnish with fresh parsley and serve immediately with additional BBQ sauce for dipping.
