1/4 cup Achiote paste *
10 garlic cloves
2 teaspoons cumin seeds
1/4 teaspoon ground cinnamon
1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup red wine vinegar
1 1/2 teaspoons salt
2 teaspoons cracked black pepper
6 chicken legs with thigh, ankle joint removed, scored to the bone and skin removed
2 onions, cut into 3 slices each, plus 2 onions diced
3 Italian Roma tomatoes, cut in 4 slices
6 banana leaves (optional)
3 tablespoons unsalted butter
2 cups chicken stock

Steps:

  • In a blender combine Achiote paste, garlic, cumin, cinnamon, orange juice, lime juice, vinegar, salt and pepper. Puree until smooth. Pour into a nonreactive baking pan, add the chicken and turn to coat. Cover and marinate in the refrigerator for at least 2 hours and up to 24 hours. Preheat oven to 375 degrees. In a heated, dry, cast iron skillet char onion slices until blackened on both sides. Remove and char tomato slices until blackened on both sides. Reserve. Cut six 16 x 14-inch sheets of heavy-duty aluminum foil. Take banana leaves, and cut into 10-inch squares. Toast squares over a burner to soften, about 2 seconds on each side . Place banana leaves on top of each piece of foil. Remove chicken from marinade, reserving marinade, and place a piece on each foil piece or banana leaf. Top each with two tomato slices and one onion slice. Wrap and seal banana leaf and the foil to enclose. Place on a baking sheet and bake for 45 minutes. Meanwhile, in saucepan melt butter. Saute the diced onions until golden brown. Stir in the reserved marinade and bring to a boil. Cook, stirring frequently, for about 5 minutes. Add chicken stock and cook for 10 minutes longer. Reserve. When the chicken in ready, remove from oven and open the packets. Transfer the chicken, with the banana leaves if using, to serving plates. Pour any excess juice from the pan into the sauce. Pour sauce over chicken and serve.

1/3 cup Yucatán Red Seasoning Paste
1/4 cup Bitter Orange Juice Substitute or fresh Seville orange juice if available
4 skinless chicken breast halves, on the bone
4 skinless chicken thighs, on the bone
1/2 teaspoon salt
1 tablespoon vegetable oil
banana leaves

1 white onion, thinly sliced
1 medium tomato, sliced
2 , guëro (yellow) chile kimmy, , stemmed, seeded, veins removed, and cut into thin strips

Steps:

  • 1. Prepare paste and juice and set aside. Then, with the tip of a sharp knife, pierce the chicken pieces in 4 or 5 places. Season with salt. Put the chicken in a large bowl. In another bowl, firmly mix the seasoning paste, orange juice, and half of the oil. Pour the mixture over the chicken and turn the pieces over to coat. Cover and refrigerate about 6 hours or overnight. 2. Preheat the oven to 350°. Line a large baking pan or clay casserole dish with aluminum foil pieces that are long enough to fold back over the top of the pan. Cut the banana leaves to line the pan, on top of the foil. Put the chicken breasts in the pan on the banana leaves then add the thighs and all of the marinade, overlapping the chicken pieces, if necessary. 3. In a medium skillet, heat the remaining oil and fry the onion until it begins to brown, about 4 minutes. Put the onion, tomato and chiles on top of the chicken. Fold the banana leaves completely over the chicken and then fold the foil over all, crimping the edges to make a tight seal. Bake 1 1/2 hours. 3 tablespoons crushed achiote seeds (or substitute chili powder)
1/2 cup fresh lime juice
3 teaspoons minced garlic
1 teaspoon turmeric
1 1/2 teaspoon ground cumin divided
1 teaspoon salt
1 chicken - (abt 3 lbs) quartered
2 tablespoons vegetable oil
1 cup thinly-sliced white onions
2 bay leaves
1 tablespoon Emeril's Essence see * Note
3/4 cup chopped seeded tomatoes

Steps:

  • * Note: See the "Bayou Blast - { Creole Seasoning}" recipe which is included in this collection. In a bowl mix together the achiote seeds, lime juice, 2 teaspoons of the garlic, turmeric, 1/2 teaspoon ground cumin and 1/2 teaspoon salt to make a smooth paste. Place the chicken in a glass dish and coat with the paste. Cover tightly with plastic wrap and let marinate refrigerated for at least 4 and up to 8 hours. In a large sauté pan heat the oil over medium-high heat. Add the onions, bay leaves, Essence, 1 teaspoon cumin and remaining 1/2 teaspoon salt, and sauté until caramelized, about 10 minutes. Add the tomatoes and sauté until soft. Add the chicken pieces and any reserved marinade to the pot and brown on all sides. Remove the pan from the heat. Preheat the oven to 350 degrees. Line a baking dish with banana leaves. Place 1 banana leaf on a work surface, and place 1 chicken piece in the middle. Spoon 1/4 of the onion-tomato mixture onto the chicken and wrap the leaf around the chicken as though sealing a package. Place in the lined baking dish and repeat with the remaining chicken and sauce. Bake the chicken until cooked through and tender, about 1 hour. Remove from the oven and serve the chicken wrapped in the leaves with the accumulated pan juices. This recipe yields 4 to 6 servings.
