CHEESY CHICKEN, BROCCOLI AND PESTO PASTA BAKE
A superb and easy meal, for all the family including bacon, mushrooms, chicken and broccoli in a light cheesy sauce, a perfect mid week meal.

Steps:
- Boil a large pan of water with a sprinkle of salt, when bubbling, add pasta to water and leave for 10 - 12 minutes. Add broccoli and leave for further 5 minutes, once cooked, drain out and add pasta and broccoli back to pan.
- Add a tbsp of oil to a large frying pan and add to high heat. Add chicken breast to pan and fry until begins to brown, remove from the pan. Add bacon into pan and fry for around 3 - 5 minutes, then add mushroom, garlic and spring onions and leave for another 2 - 3 minutes.
- Once bacon has cooked, add chicken back to the pan and stir together gently for another 5 minutes. Remove from heat and stir into pasta.
- In a medium sized saucepan, melt the soft cheese and butter together on a low heat, stirring together constantly. Once melted together and the sauce is visibly thinner, stir in the milk and add the pesto and stir for roughly 5 minutes. When happy with the sauce, stir into the pasta pan and mix together well so all contents are coated.
- Now, add all the pasta mix to a deep oven dish and spread out around dish, then sprinkle over Parmesan cheese and put into the oven, for about 30-35 minutes on 200c (Fan Oven) or until Cheese is brown and golden.
CHICKEN PESTO PASTA BAKE
This recipe was born out of my need to use up some things from my freezer- chopped chicken meat and homemade basil pesto. It's easy, tasty, and can be made ahead. If you want to make a one dish meal out of this, toss in a 10 ounce bag of thawed frozen vegetables. I used homemade stock as well, but canned will work fine.

- In a large pot of boiling salted water, cook the pasta to just short of al dente.
- Drain the pasta, and place in a large mixing bowl.
- Add the chopped chicken and pesto to the bowl, and stir to coat.
- If adding vegetables, add them to the bowl now.
- Preheat the oven to 350°F.
- Spray a 9x13 baking dish with cooking spray.
- In a medium saucepan, melt the butter over medium heat.
- Add the flour, and whisk to form a roux.
- Cook for 2-3 minutes.
- Slowly whisk the stock into the roux.
- Bring to a boil, and contiue to whisk until the sauce is slightly thickened.
- Crumble the boullion cube, and add to the sauce.
- Stir in the lemon juice.
- Taste the sauce for seasoning, and add salt or pepper as needed.
- Add the sauce to the chicken and pasta mixture.
- Stir to combine well, then place the mixture in the prebared baking dish.
- Top with the grated cheese.
- If making ahead, cover at this point and chill until needed.
- Bake at 350F for 20-25 minutes, or until the sauce is bubbly and the top is golden. If made ahead, the baking time may need to be increased.
PESTO PASTA CHICKEN BAKE

- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 3 1/2-quart baking dish with cooking spray.
- Drain pasta and place in a large bowl. Add cooked chicken, cream of chicken soup, artichoke hearts, 1 cup Parmesan cheese, pesto, sun-dried tomatoes, and pimento peppers; mix to combine. Spoon pasta mixture into the prepared baking dish. Sprinkle with additional Parmesan.
- Bake in the preheated oven until sauce is bubbly, 35 to 40 minutes.

- Heat oven to 350°F.
- Remove 2 Tbsp. oil from top of pesto sauce in jar; reserve for later use. Spoon pesto and remaining pesto oil into large bowl. Add pasta sauce and milk; mix well. Stir in shredded cheese.
- Cook pasta as directed on package, omitting salt.
- Meanwhile, heat 1 Tbsp. of the reserved pesto oil in large skillet on medium heat. Add chicken; cook and stir 5 min. or until no longer pink. Add peppers; cook and stir 2 min. or until peppers are crisp-tender. Add spinach; cook and stir 1 to 2 min. or just until spinach begins to wilt. Remove from heat.
- Drain pasta. Add to chicken mixture along with the pasta sauce mixture; mix lightly. Spoon into 13x9-inch pan sprayed with cooking spray.
- Combine bread crumbs, Parmesan and remaining reserved pesto oil; sprinkle over pasta mixture.
- Bake 40 min. or until heated through.
