4 cups uncooked spiral pasta
1/2 pound fresh green beans, trimmed and cut into 1/4-inch pieces
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
3 teaspoons olive oil, divided
1 jar (7 ounces) roasted sweet red peppers, drained
1 garlic clove, minced
3/4 cup reduced-sodium chicken broth
3/4 cup fat-free evaporated milk, divided
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons cornstarch
5 tablespoons shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions, adding green beans during the last 2 minutes. Meanwhile, in a large nonstick skillet, saute chicken in 2 teaspoons oil until no longer pink. Remove and keep warm. In the same pan, saute red peppers and garlic in remaining oil for 1 minute. , Stir in the broth, 1/2 cup milk, basil, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes or until slightly thickened. Remove from the heat; cool slightly. Transfer to a blender; cover and process until smooth. Return to the pan., Add chicken to the pepper mixture. Combine cornstarch and remaining milk until smooth; gradually stir into the chicken mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain pasta mixture; toss with sauce. Sprinkle each serving with 1 tablespoon cheese.

This came my way via an e-mail recipe share. It was originally a dinner cooked in the oven at 350 for an hour but I made it in the crockpot with wonderful results. I tweaked the cheese to suit my tastes so you can reduce it if you're not a cheese lover.

5 boneless skinless chicken breasts
1 (16 ounce) jar alfredo sauce
1 lb frozen peas (thawed)
2 cups mozzarella cheese (shredded)
6 -8 cups cooked pasta (buttered)

Steps:

  • Cut chicken into strips and place into greased crockpot.
  • Combine alfredo sauce, peas and cheese and mix well.
  • Spoon peas mix over chicken.
  • Cover and cook on low for 5-6 hours.
  • Serve over noodles.

1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1 small onion, chopped
1 clove garlic, minced
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 cups tri-colored rotini pasta, cooked
1-1/2 cups KRAFT Shredded Low-Moisture Whole Milk Mozzarella Cheese

Steps:

  • Heat dressing in large skillet on medium heat. Add chicken; cook and stir 5 min. Stir in onions and garlic; cook 5 min. or until chicken is done and onions are crisp-tender, stirring frequently.
  • Add sauce and pasta; cook 5 min. or until heated through, stirring occasionally.
  • Stir in 1/2 cup cheese; top with remaining cheese. Cover; let stand 2 min. or until cheese is melted.

1 pound of boneless and skinless chicken breasts, cut into 1/2 inch strips
4 teaspoons of OLD BAY SEASONING
1 tablespoon of butter
1/2 pound of shrimp, peeled and deveined
1 cup of heavy cream
8 ounces of penne pasta, cooked and drained
3 sliced scallions

Steps:

  • 1) Coat the chicken with 2 tablespoons of the OLD BAY SEASONING. 2) Melt the butter in a large non-stick skillet over medium heat, Add the chicken and cook it for 3 minutes per side. 3) coat the shrimp with one tablespoon of the OLD BAY SEASONING. Push the chicken to one side of the skillet; add the shrimp. Cook and stir the shrimp for about 3-4 minutes of until the shrimp turns pink. 4) Mix the remaining tablespoon of OLD BAY SEASONING with the cream. Add the cream mixture, cooked pasta, and scallions to the skillet. Bring it to a boil, then reduce the heat and allow it to simmer for about 5 minutes or until the sauce thickens and the pasta is heated through.

What should we make for dinner? How about a quick and easy Chicken Pesto & Pasta dinner? Directions: Cook pasta until al dente, drain and set aside. Heat olive oil in a pan over medium heat. Add chicken and red pepper flakes. Cook until chicken is cooked through and toss in the halved cherry tomatoes to the chicken and cook for a minute or two more. Add Pesto olive oil blend mix to 3/4 cup olive oil and 2 Tbsp Romano/Parmesan cheese and stir well. In a large bowl combine pasta, chicken and pesto and serve immediately. Enjoy!

A recipe from The Comfort Food Diet cookbook of Taste of Home. This is so yummy. Maybe another time I'll use less pasta. I used dried basil but it would be great with fresh basil. I roasted a red bell pepper and used it in this recipe.

1 (7 ounce) jar roasted sweet red peppers, drained
1 garlic clove, minced
3/4 cup reduced-sodium chicken broth
3/4 cup fat-free evaporated milk, divided
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons cornstarch
