1 tablespoon olive oil
1 cup chopped yellow onion (from 1 [10-oz.] onion)
1 tablespoon minced garlic (about 3 medium garlic cloves)
1 (28-oz.) can whole peeled plum tomatoes, tomatoes coarsely crushed by hand and juices reserved
2 (14.5-oz.) cans crushed tomatoes, undrained
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper
1 pound uncooked ziti
3 cups shredded rotisserie chicken (from 1 rotisserie chicken)
1/4 cup thinly sliced fresh basil, plus more for garnish
Cooking spray
1 1/2 ounces Parmesan cheese, finely shredded (about 2/3 cup), divided
8 ounces pre-shredded low-moisture whole-milk mozzarella cheese (about 2 cups), divided

Steps:

  • Heat oil in a large skillet over medium. Add onion; cook, stirring occasionally, until translucent, about 5 minutes. Add garlic; cook, stirring occasionally, until fragrant, about 1 minute. Add plum tomatoes, crushed tomatoes, salt, black pepper, and crushed red pepper; bring to a boil over medium. Reduce heat to medium-low; simmer, stirring occasionally, until flavors meld and sauce thickens, about 30 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add ziti, and boil until just al dente, according to package directions. Drain and return ziti to pot.
  • Preheat oven to 375°F. Add tomato mixture, shredded chicken, and basil to ziti; stir to coat thoroughly. Pour half of ziti mixture into a 13- x 9-inch baking dish coated with cooking spray. Sprinkle evenly with 1/3 cup of the Parmesan and 1 cup of the mozzarella. Top with remaining ziti mixture, and sprinkle with remaining 1/3 cup Parmesan and 1 cup mozzarella.
  • Bake in preheated oven until cheese has melted, about 15 minutes. Remove from oven, and let rest 10 minutes. Garnish with additional basil before serving.

3 pounds skinless, boneless chicken breasts, cut into bite-sized pieces

2 (24 ounce) jars pasta sauce
4 (8 ounce) packages shredded mozzarella cheese
2 cups grated Pecorino Romano cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray two 9x13-inch baking dishes with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook ziti in the boiling water, stirring occasionally, until tender yet firm to the bite, 9 to 11 minutes. Drain.
  • While pasta cooks, melt butter in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook and stir until chicken is browned and no longer pink in the center, 5 to 7 minutes.
  • Combine pasta, pasta sauce, and chicken in a large dish. Spread 1/4 of pasta mixture in each 9x13-inch dish. Top each with 2 cups (8 ounces) of mozzarella cheese and 1/2 cup Pecorino Romano cheese. Repeat with another layer of pasta and cheeses.

4 cups marinara sauce
1 box ziti
Olive oil cooking spray
2 cups cooked chicken (diced)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan
6 basil leaves (chiffonade)

Steps:

  • Preheat oven to 425 degrees.
  • Cook ziti in a large pot of salted boiling water for 10 minutes. Drain and set to the side.
  • In a large 9 x 12 baking dish, lightly coat with olive oil cooking spray. Pour 1 cup marinara sauce in the baking dish. Then pour in the drained pasta along with 2 cups of sauce, all the chicken, and 1/2 cup of the mozzarella cheese. Mix well and then top with remaining mozzarella and grated Parmesan cheese. Bake for 25 minutes.

½ cup panko bread crumbs

½ teaspoon garlic powder
2 teaspoons dried oregano

Steps:

1 (25-ounce) jar tomato-basil pasta sauce
1 1/2 cups mozzarella cheese, shredded

  • Preheat oven to 375°F. Cook the pasta al dente according to package instructions. Drain and return pasta to the stockpot, then add chicken and tomato sauce. In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is.
