This hearty, easy meatball soup combines Italian-style meatballs, chopped veggies and pasta, all simmered in a rich tomato broth. Add a side of your favorite salad, and you've got dinner!

1 ½ lb lean ground beef (or ground chicken or ground turkey)
2 to 3 garlic cloves, minced
1 raw egg, whisked
½ cup freshly grated Parmesan cheese
1/3 cup plain bread crumbs
2 tsp dry oregano
½ tsp sweet paprika
Kosher salt and black pepper to taste
½ to 1 cup fresh chopped parsley
Extra virgin olive oil (I used Private Reserve EVOO)
Extra virgin olive oil (Private Reserve EVOO)
1 small onion, chopped (about ½ cup)
2 carrots, chopped
1 small green bell pepper, cored and chopped
2 celery stalks, peeled and chopped
1 to 2 garlic cloves, minced
5 to 6 cups broth (vegetable or beef broth)
1 28-oz can peeled tomatoes with juices
1 tsp dry oregano
½ tsp paprika
Salt and pepper
¾ cup dry small pasta like ditalini or small shells
½ cup chopped fresh parsley

Steps:

  • Place the meatball ingredients in one large mixing bowl. Drizzle a little extra virgin olive oil. Mix until the meat mixture is well incorporated.
  • Form the mixture into meatballs about 1 ½ tbsp each (whatever size you choose, stick to it). Arrange the meatballs on a large, lightly oiled sheet pan and broil for 5 to 8 minutes until browned (they will cook some more in the soup).
  • In a large pot, heat about 2 tbsp extra virgin olive oil over medium-high heat. Add onions, carrots, celery, bell peppers, and garlic. Cook, stirring occasionally, for 5 minutes.
  • Add broth and tomatoes. Season with oregano, paprika, salt and pepper. Cook over mediu/medium-high heat for 10 minutes.
  • Add the meatballs and pasta. Cook for 10 minutes or until pasta is cooked.
  • Remove from heat and stir in parsley. Transfer to serving bowls, and if you like sprinkle a bit more grated Parmesan cheese. If you like heat, add some crushed pepper flakes. Enjoy!

CHICKEN MEATBALLS
1 lb ground chicken
1/2 red onion, diced
1/8 c dill
2 clove garlic, minced
1 tsp chili flakes
2 tsp salt
1 tsp pepper
1/2 c breadcrumbs
3 tsp half & half (optional)
SOUP
4 can(s) low sodium chicken broth
2 large carrots, chopped (no need to peel)
2 stalk(s) celery, chopped
1 leek, chopped
1 pkg watercress
2 Tbsp evoo

Steps:

  • 1. Mix together ground chicken, onion, and garlic. In a small bowl combine breadcrumbs, dill, chili flakes, salt, and pepper, mix to combine, add half & half to moisten breadcrumb mixture, use a fork to combine. Add breadcrumb mixture to chicken mixture, mix, then form into 1 inch balls. Put in fridge until ready to add to broth.
  • 2. Heat 2 tablespoons EVOO in soup pot. Add carrots, celery, and leek. Cook until soft, about 4 minutes. Add broth and bring to boil. Add meatballs to boiling broth, reduce to simmer, cover, and cook 15 minutes.
  • 3. Divide watercress in bowls, ladle soup over top. Serve.

½ cup grated parmesan cheese

1 cup white onion, diced
½ cup carrot, diced
½ cup celery, diced
2 cloves garlic, minced

1 bay leaf
1 cup dry orzo pasta
4 cups swiss chard, roughly chopped

Steps:

  • In a medium bowl, combine the ground chicken, bread crumbs, egg, Parmesan, garlic, parsley, salt, and pepper. Mix well, then form into 1-inch (2 cm) meatballs. You should have 16-18 total.
  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Sear the meatballs on all sides until golden brown, 4-5 minutes. Remove from the pot and set aside.
  • In the same pot, heat the remaining tablespoon of oil. Add the onion, carrot, and celery and cook, stirring occasionally until tender, 3-4 minutes. Add the garlic and cook until fragrant, 1-2 minutes.
  • Add the chicken stock and bay leaf. Cover and bring to a boil.
  • Once boiling, add the orzo and meatballs. Cover and simmer for 7-8 minutes, until the orzo is tender.
  • Add the Swiss chard, cover, and cook for 2-3 minutes until the chard has wilted.
  • Add the Parmesan cheese and season to taste with salt and pepper. Add the lemon juice.

1/4 cup panko bread crumbs
1/4 cup finely chopped onion
1 large egg, lightly beaten
2 serrano peppers, seeded and minced

1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained

Steps:

  • In a large bowl, combine the first 5 ingredients. Add chicken; mix lightly but thoroughly. Shape into 3/4-in. balls. In a large skillet, heat oil over medium heat. Brown meatballs in batches; drain. Transfer to a 4- or 5-qt. slow cooker., Add stock, tomatoes, onion, bok choy, carrots, red peppers, julienned serrano peppers, garlic and salt. Cook, covered, on low 6-8 hours or until meatballs are cooked through and vegetables are tender. If desired, stir in panko. Without stirring, drizzle beaten egg into slow cooker. 1 lb ground chicken
1 medium red onion, roughly chopped
2 clove garlic, roughly chopped
1/4 c fresh chopped dill
1 Tbsp olive oil, extra virgin
2 tsp salt

1/2 c breadcrumbs soaked in 1/4 cup milk
fresh ground pepper
SOUP
2 carrots , finely chopped
2 celery stocks,finely chopped
1 leek,finely chopped
8 c chicken stock, homemade or bought.....my recipe for stock below
4 c watercress
CHICKEN STOCK:
3 Tbsp olive oil
bones of 1 chicken...i used 3 chicken backs i had in freezer
2 large carrots, peeled and chopped
2 celery stalks , chopped
2 medium onions, chopped
1 leek, chopped
1 bulb of garlic....not cloves...the whole bulb, peeled & chopped
1/2 c fresh dill
1/4 c fresh parsley
3 sprigs fresh thyme
1 Tbsp peppercorns
24 c water
salt & pepper totaste

Steps:

  • 1. Chicken Meatballs: Mix together ground chicken , red onion and garlic. Add the dill, olive oil,salt chili flakes and bread crumb mixture. Season to taste with s/p. Form into small meatballs....(1 teaspoon per meatball) Cover & refrigerate until ready to use.
  • 2. Soup: In a medium stockpot, cook the vegetables in 1 tbsp oil for about 2 mins. Add the stock and chicken stock and simmer for approx 15 mins until meatballs are cooked.When ready divide watercress in bowls and ladle soup over top. Serve.
  • 3. Chicken Stock: In a large stockpot heat 2 tbsps of olive oil on med-high heat. Add chicken bones or carcass /backs etc , stir to coat and cook for 5 mins to brown. Add all the vegetables along with herbs and peppercorns, Stir and add water. Bring to a simmer and cook for about 4-6 hours. Adjust seasoning. The stock will have reduced by half. * Any leftover stock can be frozen You can alter this recipe to your own liking or as is..... I added cilantro to my soup,I left the breadcrumbs out of the meatballs...I am trying to go wheat free. I also didn't brown my chicken bones as they were backs and I threw them in the pot frozen. Next time I will be more prepared as I think browning the bones/meat will give the stock a richer flavor.I also threw in some fresh corn kernels. The watercress really is delicious with this.I don't recommend you leave it out!!

24 cups water

1/2 cup breadcrumbs
1/4 cup milk
1 pound ground chicken, or 4 chicken breasts, cut into small pieces
1 red onion, roughly chopped
2 cloves garlic, roughly chopped

Steps:

  • For the chicken stock: In a large stockpot, heat the vegetable oil over medium-high heat. Add the chicken bones, stir to coat and cook for 5 minutes to brown. Add the vegetables to the stockpot along with the herbs and peppercorns. Stir to mix, add the water and bring to a simmer. Reduce the heat to medium and let simmer for 4 to 6 hours. The stock will have reduced by half. Strain and skim the fat. Adjust the seasoning with salt and pepper. Reserve.
  • For the chicken meatballs: Soak the breadcrumbs in the milk. In a food processor, combine the ground chicken, or chicken breasts if using, the red onion and garlic. Blend for 2 minutes. Add the dill, olive oil, salt, chile flakes and breadcrumb mixture. Spinkle with freshly ground pepper.
  • Using 1 teaspoon of the ground chicken mixture, form small meatballs. Reserve on a baking sheet lined with parchment paper, cover with plastic wrap and keep in the refrigerator until ready to cook in the soup.
  • For the soup: In a medium stockpot, cook the vegetables in oil for about 2 minutes. Season with salt and pepper. Add 8 cups stock and the chicken meatballs. Let simmer until the meatballs are cooked, about 15 minutes. When ready to serve, divide the watercress in the bowls and add a ladle of chicken soup. Garnish with the blackened chicken wings and fresh dill.
  • For the blackened chicken: Combine all the spices with the garlic and oil in a bowl. Evenly rub the chicken pieces with the spice mixture. Place in a large re-sealable plastic bag or a bowl covered in plastic wrap. Keep in the refrigerator for 1 hour or up to overnight for a more intense flavor.
  • Preheat the oven to 350 degrees F.
  • In a cast-iron skillet heat over high heat, add enough vegetable oil to coat the whole bottom of the pan. The pan will be ready when it starts to gently smoke. First place the chicken drumsticks in the skillet (they take the longest to cook) and blacken all sides, about 5 minutes. Add the rest of the chicken pieces and continue in the same manner for another 5 to 7 minutes. Remove from the heat and place the skillet in the oven for 25 minutes. Remove from the oven, set aside and keep warm.
  • For the French vinaigrette: Add the tomato soup, ketchup, vinegar, honey, Worcestershire sauce, mustard seeds, shallot, garlic and lemon juice to a blender and puree all the ingredients together. Slowly add the oil until it emulsifies and becomes thick and creamy. Season with salt and pepper and blend again. (Add a little bit of water if the vinaigrette is too thick.) Store in a tightly covered container in the refrigerator. The vinaigrette can be made ahead and will be good for up to 1 week.
  • For the salad: In a bowl, mix together the romaine lettuce with the red onions, 2 tablespoons of olive oil and the red wine vinegar. Season with salt and pepper. Remove the chicken thighs from the skillet, slice lengthwise and toss into the salad. Mix well and set aside.
  • In another bowl, mix together the radishes, herbs and the remaining 1 tablespoon olive oil. Season with salt and pepper.
  • To serve: Dress the plates with the romaine and chicken thigh salad mix. Top each plate with a blackened chicken drumstick and garnish with the radish salad. Drizzle with the French vinaigrette and serve.

2 tablespoons olive oil
2 garlic cloves, sliced
1 pound veal breast
1 1/2 pounds chicken wings
1 onion stuck with 2 cloves
2 bay leaves
2 celery stalks, cut into 1-inch pieces
2 carrots, scraped and cut into 1-inch pieces
Salt to taste
10 peppercorns
1 dill sprig
Veal meatballs (see recipe)
1/4 pound fresh kosher salmon caviar
1 bunch watercress

Steps:

  • Heat the olive oil in a 10-quart soup kettle. Add the garlic and saute for a minute, then add the veal and brown on all sides. Add the chicken wings and four quarts of water. Bring to a boil, lower the heat and cook for 20 minutes, skimming the top from time to time.
  • Add the onion, bay leaves, celery, carrots, salt, peppercorns and dill. Bring to a boil, lower the heat and cook for one hour or until the veal is tender when pierced with a fork.
  • Remove the veal and save for making the meatballs. Strain the soup through a fine sieve. Cool and refrigerate until ready to use.
  • When preparing to serve, skim the fat from the surface of the soup. Bring the soup to a boil, lower the heat and gently drop in the tiny meatballs. Cook for 15 minutes.
  • To serve, pour the soup in individual bowls. Place three meatballs in each bowl, garnish each with one-half teaspoon of fresh salmon caviar and watercress leaves.
